This is great last minute dessert as it is so quick. I made this with frozen berries I had picked a week ago and had put in to the freezer. So yummy! I like my fruit on the tart side, so you can add more sugar if desired.

FRUIT
5 c blueberries, fresh or frozen (unthawed)
4 Tbsp sugar (or more to taste)
3 Tbsp flour
TOPPING
1/2 c rolled oats
1/2 c packed brown sugar
1/4 c all purpose flour
1/4 tsp cinnamon
1/4 c butter
1/4 c coconut

Steps:

  • 1. Combine flour and sugar in a large bowl. Add berries and mix. Pour into 8 - 9 inch glass cake dish or deep dish pie plate. Let sit while preparing topping.
  • 2. Combine oats, brown sugar, flour and cinnamon in a bowl.
  • 3. Add cold butter to topping mixture. Using a pastry cutter cut butter into flour mixture until it mixture resembles coarse crumbs. Stir coconut into topping mixture.
  • 4. Sprinkle topping mixture over berries in pie plate. Bake in a 375 degrees oven for 30 - 35 minutes. This can be served with ice cream or whipping cream is desired.

2 large bartlett pears, peeled, cored, and cut into 1/4-inch slices
1 cup(s) fresh blueberries
1/4 cup(s) unsalted butter, melted and cooled
1/3 cup(s) sugar
1 1/2 teaspoon(s) freshly grated ginger
3 - eggs
1 teaspoon(s) vanilla extract
1/8 teaspoon(s) salt
3/4 cup(s) milk
1/3 cup(s) all-purpose flour

Steps:

  • Preheat oven to 400 degrees. Lightly grease a 9-inch pie plate. Fan the pears slices out inside of the pie plate. Top with blueberries.
  • In a large bowl, whisk together melted butter, sugar, eggs, ginger, vanilla, salt and milk. Sift in the flour and whisk until batter is well combined and very smooth, with no lumps of flour. Pour batter over the top of the pears and blueberries.
  • Bake for 10 minutes, then turn the oven temperature down to 350 degrees. Bake for 40-45 minutes, or until custard is set and the top is a light golden brown. Allow to cool for at least 20 minutes before serving.

Ingredients
2 pkg. black raspberry Jell-O
1 large can crushed pineapple
1 can blueberry pie filling
2 C. boiling water
8 oz. cream cheese
8 oz. sour cream
1/2 C. sugar
1 Tbs. vanilla extract

Steps:

  • Directions Use a 13x9 glass dish. Blend Jell-O thoroughly into boiling water, mix in blueberries and pineapple and refrigerate until solid. To make topping, blend all ingredients until smooth and top over blueberry mixture. Refrigerate 20-30 minutes. Serve in bowls. Top with toated nuts if desired.
