1 pound large or jumbo sized shrimp, peeled and deveined
1/4 cup all purpose flour
1/8 teaspoon kosher salt
1/8 teaspoon black pepper
2 egg whites
1/4 cup cornmeal, medium to finely ground
1/8 teaspoon kosher salt
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1/8 teaspoon paprika
Pinch of cayenne pepper
1/4 cup plain non-fat Greek yogurt
2 tablespoon light mayonnaise
1 tablespoon milk, add an extra tablespoon if it's too thick
1 1/2 teaspoon dijon mustard
1/2 teaspoon lemon zest
1 tablespoon lemon juice
1/8 teaspoon garlic powder
Kosher salt and black pepper to taste

Steps:

  • Preheat oven to 475 degrees.
  • Line a baking sheet with parchment paper or foil and spray with cooking spray.
  • Get out 3 shallow dishes, I like to use pie plates.
  • In the first dish combine the flour salt and pepper.
  • In the second dish whisk the two egg whites together with a teaspoon or two of water.
  • In the third dish combine the cornmeal, salt, garlic and onion powder, paprika and cayenne.
  • Working in batches dredge the shrimp in the flour mixture.
  • Shake off any excess flour, then dip them into the egg whites and then coat them in the cornmeal mixture.
  • Shake off any excess cornmeal before placing them on the prepared baking sheet.
  • Spray the tops lightly with cooking spray or drizzle with a little olive oil.
  • Place the shrimp on the middle rack of the oven and bake for 10-12 minutes or until crisp and golden.
  • Remove from the oven and sprinkle with salt and pepper.
  • In a small bowl whisk together all of the ingredients until smooth.
  • Cover and refrigerate until ready to serve.

2 pounds white fish fillets, such as cod or haddock
3 large eggs, beaten
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1 cup crushed potato chips
3/4 cup breadcrumbs
3/4 cup mayonnaise
1 tablespoon lemon juice
2 cloves garlic, minced
1/4 teaspoon black pepper

Steps:

  • Gather the ingredients.
  • Preheat oven to 450 F. Pat fish fillets dry with a paper towel.
  • In a small bowl, combine mayonnaise, lemon juice, garlic, and black pepper thoroughly. Refrigerate for 30 minutes while preparing and baking fish.
  • Combine garlic powder, paprika, crushed potato chips, and breadcrumbs in a shallow bowl. Put beaten egg in a separate shallow bowl.
  • Dip a fish fillet into beaten egg on both sides, and shake off excess. Dip it in potato chip mixture on both sides and again shake off extra. Place fillet on a prepared baking sheet. Repeat with remaining fillets.
  • Bake for 10 to 15 minutes, or until fish flakes easily when tested with a fork. Serve immediately with lemon-garlic aioli on side.

175g cooking chorizo , skin removed, cut into chunks
50g slightly stale breadcrumb
25g blanched almond , toasted and roughly chopped
zest ½ lemon
1 ½ tbsp olive oil , plus extra for greasing
6 boneless, skinless sustainable cod fillets (about 175g each)
6 tbsp good-quality mayonnaise
½ garlic clove , crushed
2 tsp lemon juice

Steps:

  • Tip the chorizo into a frying pan and cook over a medium heat until it releases its oil and becomes crisp in places. Meanwhile, make the aïoli: stir together the ingredients with some seasoning, then chill.
  • Put the chorizo and its oil in a food processor and pulse until broken into small chunks. Add the breadcrumbs, almonds, lemon zest, seasoning and half the olive oil, then blitz to a crumb.
  • Heat oven to 200C/180C fan/gas 6. Put the cod fillets on a lightly greased baking tray, then brush with the remaining oil. Heap the crumbs onto the fish and pat down so that the fillets are well covered. Let them firm up in the fridge for at least 20 mins.
  • When you're ready to cook, pop the fish in the oven for 10-15 mins, depending on the thickness of your fillets, until the flesh has turned opaque and the chorizo crumb is golden.

16 saltine crackers, finely crushed

1/4 cup mayonnaise
2 tablespoons plain Greek yogurt
1 tablespoon chopped fresh chives
2 teaspoons chopped fresh dill weed
1 teaspoon grated lemon peel
2 teaspoons fresh lemon juice
1 clove garlic, finely chopped
1/2 cup Gold Medal™ all-purpose flour
Salt and pepper
Paprika
1 egg
1/4 cup milk
Several dashes hot sauce
1 1/2 cups Progresso™ panko crispy bread crumbs
1 lb cod fillets, cut into sticks
Canola oil for frying

Steps:

  • In small bowl, stir together Lemon-Herb Aioli ingredients. Cover with plastic wrap; refrigerate until ready to serve.
  • Gather 3 wide, shallow dishes. In first dish, stir together flour, dash salt, dash pepper and dash paprika. In second dish, beat egg, milk and hot sauce with whisk. In last dish, stir together bread crumbs, dash salt, dash pepper and dash paprika.
  • Coat fish sticks with seasoned flour, dip into egg mixture to coat, and then bread crumb mixture, pressing bread crumbs into fish if needed. Place on plate; repeat with remaining fish until all are coated.
  • Heat 10-inch cast-iron or nonstick skillet over medium-high heat. Fill skillet with 1/4 to 1/2 inch of oil (enough to reach halfway up sides of fish pieces). Once oil is hot, fry fish sticks in batches, a few minutes on each side, until golden brown, crisp and fish feels firm. Drain on paper towel-lined plate. Repeat with remaining fish. Serve with aioli and if desired, lemon wedges.

salt and ground black pepper to taste
½ cup mayonnaise
1 teaspoon minced garlic
1 teaspoon chopped fresh dill
½ medium lemon, juiced
½ cup pecans

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Cut salmon into smaller, equal-sized portions if needed. Pat dry. Season with salt and pepper.
  • Mix mayonnaise, garlic, dill, and lemon juice together in a bowl. Season with salt.
  • Place the pecans in a food processor. Pulse for 1 second and check the size of the pieces. You want it to be not quite powdery, but still with some larger chunks. Continue to pulse in 1-second bursts until desired consistency is achieved.
  • Place the salmon on a baking sheet. Layer the top of the salmon with aioli, then with pecans, until completely covered.

3 tablespoons mayonnaise (fat-free if desired)
1 serrano chili, seeded and minced
1 garlic clove, minced
1 cup milk
1 large egg white, lightly beaten
2 cups corn flakes, crushed

1/2 teaspoon salt
1/4 teaspoon black pepper
