This quick and easy taco bake will satisfy even the most picky eaters. You can modify it to add things you love. It's yummy and so easy to make! Top with tomatoes, lettuce, salsa or whatever you like on your Mexican food.

1 ½ pounds ground beef
1 cup chopped onion
½ cup water
1 (1 ounce) package taco seasoning mix
1 (10 ounce) can refried beans
½ cup salsa
1 (6 ounce) can sliced black olives
1 (4 ounce) can diced green chiles
15 taco shells, broken up, or more to taste
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking pan with cooking spray.
  • Cook ground beef and onions in a skillet over medium heat until beef is browned, 7 to 10 minutes; drain grease. Stir in water and taco seasoning; cook, stirring often, until thickened, about 2 minutes. Add refried beans, salsa, olives, and green chiles. Cook and stir over low heat until ingredients are warmed through, 3 to 4 minutes.
  • Place half of the taco shells in the bottom of the baking dish. Pour in half of the ground beef mixture; sprinkle with half of the Cheddar cheese. Repeat with remaining taco shells, ground beef mixture, and Cheddar cheese.
  • Bake in the preheated oven until cheese is melted and bubbly, 20 to 25 minutes.

1 pound ground beef
1 cup salsa
½ cup chopped onion
½ cup mayonnaise
2 tablespoons chili powder
1 teaspoon ground cumin
2 cups crushed tortilla chips, divided
4 ounces shredded Cheddar cheese, divided
4 ounces shredded Monterey Jack cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook and stir ground beef in a large skillet over medium-high heat until crumbly, evenly browned, and no longer pink, 5 to 7 minutes. Drain and discard any excess grease. Stir salsa, onion, mayonnaise, chili powder, and cumin into the beef. Remove from heat.
  • Spread about half the ground beef mixture into the bottom of a 2-quart casserole dish. Spread about half the tortilla chips in a layer atop the beef mixture. Layer about half of each of the Cheddar and Monterey Jack cheeses over the tortilla chip layer. Repeat layers with remaining ingredients, ending with Monterey Jack cheese. Cover dish with aluminum foil.
  • Bake in preheated oven until the cheese is melted in the middle, about 30 minutes.

1 lb lean ground beef
1 Tbsp chili powder
1 Tbsp garlic powder
1/2 tsp sal
1 can(s) rotel, undrained
1 can(s) healthy request cream of mushroom soup
3/4 c reduced fat shredded cheddar cheese
3 c corn or tortilla chips
tomatoes, olives, lettuce (for toppings)
1/2 tsp cumin

Steps:

  • 1. Pre-Heat oven to 375. While oven is pre-heating brown ground beef. Drain and add in chili powder, cumin, garlic powder, salt, soup, rotel, and 1/4 cup cheese. Stir and let simmer for 10 minutes. To assemble, layer meat mixture and tortilla chips. Top with cheese. Bake, uncovered for about 15 minutes or until casserole is heated through and cheese is melted. Enjoy!

1 tablespoon olive oil
1 large white onion, diced
1 red bell pepper, diced
1 jalapeño, seeded, diced
1 lb ground beef
1 packet taco seasoning
1 lime, juice
10 flour tortillas
nonstick cooking oil spray
1 ½ cups shredded cheddar cheese
2 cups tortilla chips, crushed
1 ½ cups shredded monterey jack cheese
salsa, for serving

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • In a large skillet over medium heat, heat the olive oil. Add the onion and cook, stirring occasionally until caramelized, about 10 minutes. Add the red bell pepper and jalapeño. Cook until softened, about 3 minutes.
  • Add the ground beef, breaking apart with your spoon, and mix into the other ingredients. Add the taco seasoning and the lime juice. Mix thoroughly, cover, and refrigerate until ready to use.
  • On a cutting board, place the stack of tortillas. Cut off two round sides of the tortillas, leaving a 4-inch (10-cm) wide middle section. Cut the middle section in half vertically.
  • Generously spray a bundt pan with nonstick spray.
  • Place the middle strips of tortilla in the bundt pan in a fanning pattern. Each tortillas strip should slightly overlap the previous strip. Sprinkle half of the cheddar cheese on top of the tortillas.
  • Spread half of the ground beef mixture on top of the cheese.
  • Place a third of the round strips of tortilla on top of the ground beef mixture in a fanning pattern. Sprinkle half of the Monterey Jack on top of the tortillas. Sprinkle the tortilla chips on top of the cheese.
  • Place another third of the round strips of tortilla on top of the chips in a fanning pattern. Sprinkle the rest of the cheddar cheese on top of the tortillas. Spread the rest of the ground beef mixture on top of the cheese. Sprinkle the rest of the Monterey Jack on top of the ground beef mixture. Place the rest of the tortillas on top of the cheese in a fanning pattern.
  • Bake for 45 minutes until crispy and browned.
  • Let cool for 20 minutes.
  • Place a plate on top of the bundt pan, and invert the ring onto the plate.
  • Slice and serve with salsa.

2 lb ground beef
1/2 large onion, chopped
2 pkg taco seasoning (we use the lower sodium)
1 bag(s) nacho cheese Doritos, 9.75 oz
16 oz shredded cheddar cheese
2 can(s) tomato soup, undiluted, 10.5 oz each
1 can(s) cream of mushroom soup, undiluted, 10.5 oz.
1 small can Rotel

Steps:

  • 1. Preheat oven to 350 degrees and grease a 9 x 12 casserole dish.
  • 2. Crunch up bag of Doritos and pour into the bottom of the greased pan.
  • 3. Cook hamburger and onion; drain.
  • 4. Add taco seasoning and water. Cook according to package directions.
  • 5. Pour hamburger over chips.
  • 6. Sprinkle with cheddar cheese.
  • 7. In a large saucepan, combine tomato soup, cream of mushroom soup, and Rotel. Cook until boiling.
  • 8. Pour soup mixture over cheese.
  • 9. Bake 20-30 minutes until the soup bubbles.
  • 10. Let stand for 5-10 minutes before serving.
