SWEET CITRUS CHICKEN

Here's a recipe for nice, somewhat sweet tasting chicken breasts. The recipe, as given below, was found at Kraft Foods, but I usually substitute my homemade stuffing made with whole grain winter wheat bread cubes, & when making it for this recipe, I usually add to the stuffing at least a teaspoon of orange zest.

1 2/3 cups hot water
1 (6 ounce) package seasoned stuffing mix
6 boneless skinless chicken breast halves
2/3 cup orange juice
1/3 cup brown sugar, packed
3 tablespoons unsalted butter or 3 tablespoons margarine, melted

Steps:

  • Preheat oven to 400 degrees F.
  • Add hot water to stuffing mix, then stir until just moistened [or use your own prepared stuffing]. Set aside.
  • Place chicken breasts in 13"x9" [or 15"x10"] baking dish.
  • Mix juice, sugar & butter until well blended.
  • Pour over breasts, then top with prepared stuffing.
  • Bake 30 minutes or until chicken is cooked through [170 degrees F].

I watched Giada make this on a recent episode of "Everyday Italian" on the Food Network. It is SO GOOD and pretty easy to prepare. She made the Penne with Spinach Sauce to go with it.

1 (5 -6 lb) roasting chickens, neck and giblets discarded
salt & freshly ground black pepper
1 orange, quartered
1 lemon, quartered
1 head garlic, halved crosswise, plus 3 garlic cloves, chopped
2 (14 ounce) cans reduced-sodium chicken broth
1/4 cup frozen orange juice concentrate, thawed
1/4 cup fresh lemon juice
2 tablespoons olive oil
1 tablespoon chopped fresh oregano leaves
kitchen string or butcher kitchen twine

Steps:

  • Position the rack in the center of the oven and preheat to 400 degrees F.
  • Pat the chicken dry and sprinkle the cavity with salt and pepper. Stuff the cavity with the orange, lemon, and garlic halves. Tie the chicken legs together with kitchen string to help hold its shape. Sprinkle the chicken with salt and pepper.
  • Place a rack in a large roasting pan. Place the chicken, breast side up, on the rack in the pan. Roast the chicken for 1 hour, basting occasionally and adding some chicken broth to the pan, if necessary, to prevent the pan drippings from burning. Whisk the orange juice, lemon juice, oil, oregano, and chopped garlic in a medium bowl to blend. Brush some of the juice mixture over the chicken, after it has baked 1 hour. Continue roasting the chicken until an instant-read meat thermometer inserted into the innermost part of the thigh registers 170 degrees F, basting occasionally with the juice mixture and adding broth to the pan, about 45 minutes longer. Transfer the chicken to a platter. Tent with foil while making the sauce (do not clean the pan).
  • Place the same roasting pan over medium-low heat. Whisk in any remaining broth and simmer until the sauce is reduced to 1 cup, stirring often, about 3 minutes. Strain into a 2-cup glass measuring cup and discard the solids. Spoon the fat from the top of the sauce. Serve the chicken with the pan sauce.

4 medium chicken breast halves (skinless, boneless, 1 pound)
salt and pepper
1/4 cup lemon juice
2 tablespoons lime juice
2 tablespoons orange juice
1 tablespoon cooking oil
1 teaspoon sugar
1/2 teaspoon dried oregano, Crushed

Steps:

  • Rinse chicken; pat dry.
  • Sprinkle with salt and pepper.
  • Place chicken in plastic bag set in shallow dish.
  • For marinade, combine lemon, lime, and orange juices, oil, sugar and oregano in small bowl.
  • Pour over chicken; seal bag.
  • Marinate in refrigerator 4 to 24 hours, turning occasionally.
  • Drain chicken, reserving marinade.
  • Grill chicken on rack of uncovered grill directly over medium coals 12 to 15 minutes or until tender and no longer pink inside, turning once and brushing occasionally with marinade during first half of cooking.
  • Or, broil on unheated rack of broiler pan 4 to 5 inches from heat 12 to 15 minutes, turning once and brushing occasionally with marinade during first half of cooking.
  • Discard any remaining marinade.

6 limes
1/2 cup fresh lemon juice (about 4 lemons)
6 (6 ounce) boneless skinless chicken breast halves
1/3 cup all-purpose flour (about 2 1/4 ounces)
1/4 cup coconut flour (about 1 ounce) or 1/4 cup all-purpose flour (about 1 ounce)
2 teaspoons paprika
1 teaspoon salt
1 teaspoon fresh ground black pepper
1 tablespoon olive oil, divided
cooking spray
1/3 cup packed brown sugar
1/4 cup reduced-sodium fat-free chicken broth
12 thin orange slices

Steps:

  • Grate rind from limes, reserving 2 tablespoons rind; set aside. Squeeze juice from limes to equal 3/4 cup.
  • Combine lime juice, lemon juice, and chicken in a large zip-top plastic bag. Seal and marinate in refrigerator 2 hours, turning bag occasionally.
  • Preheat oven to 350°.
  • Remove chicken from bag, reserving 2 tablespoons marinade. Pat chicken dry with paper towels. Lightly spoon flours into dry measuring cups; level with a knife. Combine flours, paprika, salt, and pepper in a shallow dish. Dredge chicken in flour mixture. Heat 1 1/2 teaspoons oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add 3 chicken breast halves; cook 2 minutes on each side or until lightly browned. Place chicken in a 13 x 9-inch baking dish coated with cooking spray. Repeat procedure with remaining 1 1/2 teaspoons oil and chicken.
  • Combine lime rind and brown sugar; sprinkle over chicken. Combine reserved marinade and broth; drizzle around chicken. Top each chicken breast half with 2 orange slices. Bake at 350° for 25 minutes or until chicken is done. Place chicken on a serving platter. Strain any remaining liquid in dish through a fine mesh sieve over a bowl. Discard solids. Spoon sauce over chicken.

This is great to celebrate the coming of warm weather. This dish combines Florida citrus with Caribbean pepper. Serve on a bed of hot rice. This is a quick dish--from start to finish, it takes about 20 minutes.

4 boneless skinless chicken breast halves
2 -3 cloves thinly sliced garlic
1 tablespoon butter or 1 tablespoon margarine
1 teaspoon finely shredded lime peel
2 tablespoons lime juice
1/4 teaspoon ground ginger
1/8 teaspoon crushed red pepper flakes
1 orange
hot cooked rice
lime wedge (optional)

Steps:

  • In a large skillet cook chicken and garlic in hot butter over medium heat for 8 to 10 minutes or until chicken is no longer pink. Turn chicken once and stir garlic occasionally.
  • Meanwhile in small bowl, combine lime peel, lime juice, ginger, and crushed red pepper; set aside.
  • Peel orange reserving juice. Cut orange in half lengthwise then cut across in slices. Add any juice to the lime juice mixture. Add the mix to the skillet. Place orange slices on top of the chicken; cover and cook for 1 to 2 minutes or until heated through.
  • To serve, spoon any reserved dripping over the chicken. Serve with hot cooked rice and garnish with lime wedges.
