this is a high fiber, whole grain bread with a heavy crunchy texture, that I developed for myself. I use my bread machine to make it easy.

Number Of Ingredients 13

1 3/4 cups very warm water
2 tablespoons honey
1 teaspoon salt
1/2 cup oatmeal (not instant)
1/3 cup oat bran
1/4 cup barley
2 tablespoons ground flax seeds
2 tablespoons cracked wheat
1 tablespoon wheat germ
3 1/2 cups whole wheat flour
4 teaspoons wheat gluten
1 1/2 teaspoons active dry yeast
1/4 cup unsalted sunflower seeds

Steps:

  • add all ingredients in order, except sunflower seeds, to bread machine pan.
  • after 1st. knead, turn machine off, then restart, or use your 2nd knead option if you have one.
  • add sunflower seeds at beep.
  • I use a normal cycle, with a medium color, but a dark color would do well also.
  • if dough seems too stiff during kneading process, add water, a tablespoon at a time, until consistancy is right.
  • I cut laf in half lengthwise first before slicing. This bread is very heavy and filling.

Our family goes through a loaf of this every day. Slightly sweet, and light. Great with dinner, and a favorite for sandwiches.

1 cup water
1 tablespoon vegetable oil
¼ cup honey
1 teaspoon salt
½ cup rolled oats
2 ⅓ cups bread flour
1 teaspoon active dry yeast

Steps:

  • Place ingredients in bread machine pan in the order suggested by the manufacturer.
  • Select Light Crust or Basic setting, and press Start.

My grandmother made this bread for special occasions, and it's remained a family favorite. The aroma of it always brings hungry appetites to the table. -Marcia Hostetter, Canton, New York

Yield 2 loaves (8 slices each).

Number Of Ingredients 10

1-1/2 cups boiling water
1 tablespoon butter
2 teaspoons salt
1/2 cup sugar
1 cup old-fashioned oats
2 packages (1/4 ounce each) active dry yeast
3/4 cup warm water (110° to 115°)
1/4 cup molasses
1/4 cup packed brown sugar
6 to 6-1/2 cups all-purpose flour, divided

Steps:

  • In a small bowl, combine the boiling water, butter, salt and sugar. Stir in oats; cool to lukewarm. In a large bowl, dissolve yeast in warm water. Stir in the molasses, brown sugar and 1 cup flour. Beat until smooth. Stir in oat mixture and enough remaining flour to make a stiff dough. , Turn out onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape each portion into a ball. Cover and let rest for 10 minutes; Shape into loaves. Place in 2 greased 9x5-in. loaf pans. Cover and let rise until nearly doubled, about 1 hour. , Bake at 375° for 30-35 minutes (cover loosely with foil if top browns too quickly). Remove from pans to wire racks to cool.
