1 cup granulated sugar
1 cup packed brown sugar
1 cup butter or margarine, softened
2/3 cup vegetable oil
1 teaspoon vanilla
3 eggs
3 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1/4 teaspoon salt
2 2/3 cups small pretzel twists, coarsely crushed
1 cup old-fashioned or quick-cooking oats
1 cup Wheaties™ cereal or Country® Corn Flakes cereal, slightly crushed
1 cup miniature semisweet chocolate chips
1 cup butterscotch-flavored chips

Steps:

  • Heat oven to 350°F. In large bowl, beat sugars, butter, oil, vanilla and eggs with electric mixer on medium speed until light and fluffy, or mix with spoon. Stir in flour, baking soda, cream of tartar and salt. Stir in remaining ingredients.
  • On ungreased cookie sheet, drop dough by heaping teaspoonfuls about 2 inches apart.
  • Bake 9 to 11 minutes or until light brown. Cool 1 minute; remove from cookie sheet to wire rack.

  • Beat 2 sticks butter, 3/4 cup dark brown sugar and 3/4 cup granulated sugar until fluffy; beat in 1 teaspoon vanilla and 2 eggs. Whisk 2 1/2 cups flour, 3/4 teaspoon baking soda and 1 teaspoon salt, then stir into the butter mixture. Add 1 cup chocolate-covered peanuts, 1/2 cup chocolate-covered raisins and 1/2 cup M&M's. Press scoops of dough into standard-size muffin cups. Bake 20 to 25 minutes at 350 degrees.

This is a traditional Finnish cookie recipe that originated somewhere in the countryside of Western Finland. The cookies are sweet but very dry, so be sure to have a supply of milk at hand! The recipe works well with low lactose or lactose-free butter.

200 g butter
200 ml sugar
2 tablespoons sugar syrup or 2 tablespoons maple syrup
500 ml wheat flour
1 teaspoon baking soda
3 teaspoons vanilla sugar

Steps:

  • Mix the flour, soda and vanilla sugar.
  • Foam the butter, sugar and syrup by hand in a separate container.
  • Add the flour mixture to the foam and mix into a dough.
  • Separate the dough into flat bars.
  • Oven cook for 10 minutes at 200°C (400°F).
  • Cut the cooked dough to pieces. The dough should still be soft at this stage.
  • Leave the cookies to cool and harden in room temperature. To achieve maximum crunchiness, allow them to harden overnight.

This is NOT my kinda cookie. I like a doughy, chewy, soft BIG cookie, BUT everyone in my family adores these little hard crunchy cookies and I have to admit, I love them too! Even when my Grandmother was older and had a hard time getting around, she'd make these from scratch and mix them together by hand (for the last part). To make life easier, she would make the dough the first day, chill it overnight and bake the next. They are ONLY great straight out of the freezer. With a cup of tea? Wonderful and just how GG (Gran) used to enjoy them. A Christmas or birthday didn't go by without receiving a bag of these straight from the freezer and I plan to continue that legacy.

1 cup brown sugar
1/2 cup granulated sugar
1 egg
1/4 cup water (makes them crunchy)
1 teaspoon vanilla
1 cup sifted flour
1 teaspoon salt
1/2 teaspoon baking soda
3 cups Quaker Oats, uncooked
1/2 cup chopped walnuts
1/2 cup chocolate chips

Steps:

  • Beat butter, sugar, egg, water and vanilla together til creamy.
  • Sift together flour, salt and soda.
  • Add to creamed mixture and blend well.
  • Stir in oats, walnuts and chocolate chips.
  • Put in fridge and chill overnight.
  • preheat oven to 350 degrees.
  • Drop by teaspoonfuls on greased cookie sheet (don't use a silpat, just a greased sheet -- they didn't have silpats way back when!).
  • Bake for 10-12 minutes.
  • Cool and store in plastic bag in freezer.
  • Eat straight from freezer-delish.

2 cups sugar
4 large eggs
1/2 cup baking cocoa
1-1/2 cups all-purpose flour
2 teaspoons vanilla extract

1 jar (7 ounces) marshmallow creme
1 cup creamy peanut butter
2 cups (12 ounces) semisweet chocolate chips
3 cups crisp rice cereal

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, cocoa and salt; gradually add to creamed mixture until blended., Spread into a greased 13-in. x 9-in. baking pan. Bake at 350° for 24-28 minutes or until a toothpick inserted in the center comes out clean (do not overbake). Cool in pan on a wire rack.
