GREEN CHILE BURGER WITH CRUNCHY AVOCADO SALAD



Green Chile Burger with Crunchy Avocado Salad image

3 poblano chiles
Canola oil
Salt and freshly ground black pepper
24 ounces ground chuck, 80/20
8 thin slices aged provolone cheese
4 sesame seed buns, sliced in 1/2

Steps:

  • Heat the grill to high.
  • Brush the chiles with oil and season with salt and pepper. Grill until blistered on all sides and soft, about 12 minutes. Remove the chiles from the grill, place in a bowl, cover with plastic wrap and let sit 15 minutes. Peel, stem and seed the chiles. Slice the chiles and set aside.
  • Make 4 loosely-packed burger patties by tossing some of the meat from hand to hand. press your thumb into the center of each patty to make a little well. (At this point, you can chill or even freeze the burgers briefly so that they hold their shapes better when cooked.) Brush with oil and season with salt and pepper. Grill until slightly charred on both sides and cooked to medium doneness, about 8 minutes. Top each burger with 2 slices of cheese, close the cover of the grill and continue cooking for about 30 seconds or until the cheese just melts. Put the buns on the grill, cut side down and grill until slightly charred, about 15 seconds. Place the burgers on the bottom half, put a few slices of the poblano on top of the cheese and cover with the burger tops.

Number Of Ingredients 20

1 pound (about 12) red-skinned boiling potatoes
3 cups (about 1 pound) diced slab bacon
2 tablespoons minced garlic
1/2 cup chopped shallots
6 tablespoons packed light brown sugar
6 tablespoons balsamic vinegar
1/2 cup extra virgin olive oil
6 tablespoons freshly squeezed orange juice
1/2 head frisee (curly endive), well washed and torn into pieces
4 cups mixed salad greens (mesclun), or a mixture of at least 3 lettuces such as red leaf, Romaine, endive, radicchio, arugula, frisee, watercress or Boston
4 teaspoons chopped chives
2 plum tomatoes, seeded and diced
1/2 English cucumber, peeled, halved lengthwise, sliced into half-moons
2 celery ribs, sliced 1/4 inch thick
6 ounces fresh, mild goat cheese, crumbled
Croutons, recipe follows
16 to 20 baguette slices, 1/4 inch thick
3 tablespoons garlic oil, or olive oil mixed with 1 minced garlic clove
1/4 cup freshly grated Parmesan
Freshly ground black pepper

Steps:

  • Put potatoes in a saucepan and cover with cold water. Cover the pan and bring to a boil over high heat. Uncover and boil until the potatoes are tender, between 12 to 15 minutes.
  • While the potatoes are cooking, make the dressing. In a skillet, saute the bacon over a medium-high heat until most of the fat has been rendered and the bacon is golden and beginning to crisp, about 5 minutes. Turn off the heat and pour off the fat into a glass-measuring cup. Remove the bacon from the pan and let drain on paper towels. In the skillet, with its thin coat of bacon fat, add the garlic and shallots and cook over medium heat, stirring, until softened, about 5 minutes. Add the brown sugar and cook, stirring, until dissolved. Scrape the mixture into a blender or food processor and add the balsamic vinegar, extra-virgin olive oil, and orange juice. Add 1/4 cup of the bacon fat and process, pulsing, until, just until smooth. Season to taste with salt and pepper. Slice the warm potatoes 1/4 inch thick and combine with half of the warm vinaigrette (reheat the vinaigrette in the microwave if necessary) and half of the bacon pieces. Divide in roomy serving bowls. In a large bowl, combine the lettuces, chives, tomato, cucumbers, and celery. Toss with the remaining vinaigrette and divide on top of the potatoes in the serving bowls. Sprinkle the crumbled goat cheese and reserve bacon pieces over the salads, place 3 or 4 croutons on each, and serve.
  • For the croutons, preheat to 350 degrees. Arrange the bread slices on a baking sheet and brush the tops with garlic oil. Bake 10 to 12 minutes, until golden. Remove from the oven and immediately sprinkle with cheese (if using) and pepper. Cover with foil to keep warm.

12 ounces green beans, sliced into 1-inch bite-size pieces and blanched until bright green
1 cup cherry tomatoes, halved
1/2 cup crumbled feta cheese
1/2 cup olives, pitted and chopped
4 radishes, sliced paper-thin on a mandoline
1 English cucumber, diced
1 shallot, sliced paper-thin on a mandoline
One 4-ounce jar hearts of palm, drained and chopped
Extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Add the green beans, cherry tomatoes, feta cheese, olives, radishes, cucumber, shallots and hearts of palm to a large bowl. Drizzle with extra-virgin olive oil. Season with salt and pepper and serve immediately.

1/2 cup honey
Pinch of cayenne pepper
1 1/2 cups pecans
3 tablespoons sherry vinegar
2 teaspoons Dijon mustard
3/4 teaspoon coarse salt
1/2 cup walnut oil
2 pounds string beans, trimmed
3/4 cup dried cranberries
2 heads Belgian endive, trimmed and sliced lengthwise
Freshly ground black pepper

Steps:

  • Heat oven to 350 degrees. Place honey and cayenne in a small saucepan; heat until warm. Stir in nuts. Line a baking pan with a Silpat (a French nonstick baking mat). Pour mixture onto Silpat. Bake until dark-golden brown, about 25 minutes. Set aside to cool.
  • In a small bowl, whisk together vinegar, mustard, and salt. Slowly drizzle in walnut oil, whisking constantly, until mixture is emulsified. Set aside.
  • Fill a large bowl with ice water; set aside. Bring a medium stockpot of water to a boil. Add string beans; cook just until tender, about 2 minutes. Drain immediately; immerse in ice water. Remove,pat dry; place in a large bowl. Toss with reserved dressing. Add reserved nuts, dried cranberries, and sliced endive. Add pepper to taste; toss gently. Serve immediately.

My family flipped over this light and airy salad we had for Easter. DH loves salads, but not asparagus & broccoli, so I created this to get DH to eat more green vegetables. He went back for SECONDS! Although most ingredients can be added to or omitted, it's important to have a base salad of romaine and cabbage to give it that extra crunch. I like the light Sweet/Sour dressing best, but it's also delicious with Caesar dressing, so try other dressings if you like. (For dieters, omit the bacon pieces, almonds, and olive oil; the salad will still be delicious)

2 cups shredded green cabbage (or purple or napa cabbage)
2 cups shredded romaine lettuce
1/2-3/4 cup fresh asparagus spear (cut into 1-inch pieces)
1/2-3/4 cup sugar snap pea (not snow peas)
1/2-3/4 cup broccoli floret (coarsely chopped)
2 -4 spring onions, thinly sliced
12 whole grape tomatoes (cut in half)
1/4 cup toasted sliced almonds
2 tablespoons hormel real bacon bits (I use Oscar Mayer or Hormel)
3/4 cup apple cider vinegar
1/4 cup water
1 teaspoon low-sodium instant chicken bouillon granules or 1 chicken bouillon cube
1 tablespoon sugar or 1 tablespoon Splenda granular
1 teaspoon Dijon mustard (I use Grey Poupon)
2 tablespoons extra virgin olive oil or 2 tablespoons canola oil

Steps:

  • SWEET/SOUR DRESSING: Mix all ingredients together and shake well to mix.
  • SALAD: Cut romaine lettuce across the head into 1/2 inch strips. Then cut strips in thirds.With knife, slice very thin slices from head of cabbage, forming long strings; cut cabbage strings into thirds.(Do NOT use food processor or grater for this process, as they won't toss as well with the romaine.).
  • *** Note: The lettuce and cabbage should toss together so well that (after adding all the ingredients) some people may not realize that the salad has cabbage in it.
  • After snapping off tough end, cut asparagus into 1-inch pieces. Microwave on High for 30 seconds. Rinse in cold water and drain.Add to bowl.
  • Remove stings, if any, from sugar snap peas. Microwaveon High for 1 minute. Rinse in cold water and drain well. Add to bowl.
  • Cut florets from top of broccoli. Chop into small pieces. Add to bowl.
  • Add all other ingredients, except tomatoes. Refrigerate.
  • Just before serving, add the tomatoes and most (if not all) of the Sweet/Sour dressing; toss to mix well. Serve within 30 minutes after dressing has been added.
  • ALTERNATE INGREDIENT ADDITIONS: Red bell pepper strips, thawed green peas, cauliflower pieces, radish slices, julienned yellow squash, or thinly sliced and quartered cucumbers. Just keep ingredients light, airy, colorful, and similar in size so that no one ingredient is visually dominant.(Sugar snap peas should be the largest ingredient, and you may cut these in half if you wish.).

4 ounces broccoli, washed and divided into smallish florets
4 ounces courgettes, washed dried and sliced thinly
1 small green pepper, deseeded and sliced thinly
1 stalk celery, washed and sliced fine
1/4 pint plain yogurt
1 tablespoon white wine vinegar
salt and black pepper
2 tablespoons crumbled blue cheese

  • After preparing all vegetables, place in large bowl.
  • Dressing- Blend the yoghurt, vinegar and salt and pepper in blender.
  • Stir in cheese.

I made this as a spur-of-the-moment side dish for one of our holiday dinners. Surprisingly, everyone loved the flavor and the crispness of the green beans.

1 lb fresh green beans, ends cut and beans sliced in half
1/2 pt cherry tomatoes, halved
1/2 c freshly sliced baby portobello mushrooms
1/4 c balsamic vinaigrette
2 Tbsp parmesan cheese, freshly grated
2 Tbsp extra-virgin olive oil
1/4 tsp garlic salt

Steps:

  • 1. In a medium-sized skillet, heat 2 tablespoons of extra-virgin olive oil. Add beans and stir for about 5 minutes. Add tomatoes and mushrooms. Season lightly with garlic salt. Once beans are cooked, but still crisp, stir in the vinaigrette to coat the vegetables. Remove from skillet and place in serving dish. Garnish with Parmesan cheese.
