2 tablespoons butter
1/2 teaspoon salt
1 1/2 tablespoons sugar
3 cups bread flour
1 1/2 teaspoons fast rising yeast or 1 1/2 teaspoons quick-rising yeast
2 tablespoons sesame seeds

Steps:

  • Add ingredients to bread machine in order directed by manufacturer.
  • Add sesame seeds at the beep or appropriate time for your machine.
  • Cycle: Light, white, no timer.

This recipe is a combination of different bread recipes I have been working on for my Bread machine.I used to make a bread that had a Biga(Italian starter).I found PanNan's recipe, worked on it and came up with this great Rustic Bread.

1 cup warm water
1 teaspoon bread machine yeast
1/2 cup unbleached flour
1/2 cup whole wheat flour
1 1/4 cups warm water
1 tablespoon honey
1 tablespoon barley malt
2 tablespoons butter
1 tablespoon vegetable oil
1 1/2 cups unbleached bread flour
2 cups whole wheat bread flour
2 teaspoons sugar
1 tablespoon salt
2 tablespoons vital gluten
2 teaspoons bread machine yeast

Steps:

  • Biga:.
  • In a glass or plastic bowl,stir flour, yeast and water together with a wooden spoon until smooth.Cover with a cloth and let stand overnight.It will be kind of bubbly.
  • Bread:.
  • Stir together flours,sugar,salt,.
  • and Vital Gluten; set aside.
  • Pour starter in bread machine.
  • Add water, honey, Barley Malt,butter and oil.
  • Add the flour mixture.
  • Make a groove in flour and add yeast.
  • Set Bread machine to Dough cycle.
  • Keep an eye on the machine as dough may reach the top before the end of the cycle;if this happens push it back down.
  • At the end of this cycle, remove dough from machine and split it in 2.
  • Shape your breads in free form or in bread pans.
  • Preheat oven 400*.
  • Cover breads and let them rise for 45 minutes.
  • Score the loaves.
  • Place in hot oven for 10 minutes.
  • Reduce heat to 350* and bake another 30 minutes.
  • Remove bread from pans and tap the bottom to make sure it is baked(hollow sound).If not, return bread in the oven (without the pan)for another 5 minutes.
  • Tip:.
  • If you do not have Barley Malt double the amount of honey.
  • While the oven is preheating,I set a large pan on top of the stove and sit my breads on a cookie on this pan for the rising stage.It works all the time.

CRUSTY FRENCH BREAD FOR BREAD MACHINE

A really good, crusty French bread, with a soft inside. My family begs me to make it several times a week. And using the bread machine makes it very easy.

1 1/2 c warm water
2 Tbsp honey
3 1/2-4 c flour
2 tsp salt
2 pkg active dry yeast
cornmeal for dusting
3-4 ice cubes

Steps:

  • 1. Put ingredients in bread machine,wet ingredients first, set on dough setting
  • 2. Punch down the dough and divide it in half. Shape into 2 baguettes by making a flat rectangle out of your dough, then folding the top and bottom towards the middle, like an envelope, and sealing the seam with your fingers. Keep repeating the folding and sealing, stretching the rectangle lengthwise as you go, until it's about 12 to 14 inches long and 2 inches wide. Fold and seal either end to round. Flip seam-side down and place on a sheet pan or baguette pan that has been dusted with cornmeal. Score the tops of the loaves, making deep diagonal slits 1/2-inch deep, cover with a dishcloth and let rise in a warm environment until they have doubled in size, 25 minutes.
  • 3. Preheat the oven to 450 degrees F and position your oven racks with one on the bottom and the other in the middle. Place an oven-safe (non-glass) bowl or pan on the bottom rack. Baste top of loaves with a beaten egg white mixed with 1 tablespoon cold water.
  • 4. When your bread has doubled for the second time, remove the towel and quickly and simultaneously, slide the sheet tray with the baguettes onto the middle rack while carefully throwing the ice cubes into the bowl on the bottom rack. The ice will create a burst of steam that will give you a nice crispy crust. Quickly shut the oven door so no steam escapes. Bake the baguettes until golden brown, 15 minutes.

1/2 teaspoon granulated sugar
1 cup warm water
2 teaspoons active dry yeast
2 tablespoons liquid honey
2 tablespoons butter, melted
1 egg, beaten
2 1/2 cups all-purpose flour (approx)
3/4 cup whole wheat flour
1/4 cup quick-cooking rolled oats
1/4 cup cornmeal
1/4 cup natural bran
1/4 cup millet or 1/4 cup sesame seeds
1 teaspoon salt

Steps:

  • In large bowl, dissolve sugar in warm water. Sprinkle in yeast; let stand for 10 minutes or until frothy. Whisk in honey, butter and egg. With wooden spoon, stir in 2 cups (500 mL) of the all-purpose flour, whole wheat flour, oats, cornmeal, bran, millet and salt until smooth. Gradually stir in enough of the remaining flour to form slightly sticky dough.
  • Turn out onto floured surface; knead for 8 to 10 minutes or until smooth and elastic, dusting with as much of the remaining flour as necessary to prevent sticking. Place in greased bowl, turning to grease all over. Cover with plastic wrap; let rise in warm draft-free place until doubled in bulk, 1-1/2 hours.
  • Punch down dough; turn out onto lightly floured surface. Knead into round loaf, stretching dough down all around and pinching underneath to shape. Dust top with flour; place on greased baking sheet. Cover with clean towel; let rise until doubled in bulk, 45 to 60 minutes.
  • Using serrated knife, slash shallow grid pattern on top of loaf. Bake in centre of 375°F (190°C) oven for 45 minutes or until golden brown and loaf sounds hollow when tapped on bottom. Remove from pan; let cool on rack.

  • Bread Machine Crunchy Farmhouse Bread: Choose whole grain setting; let baked loaf cool on rack.

  • The order of ingredients going into the bread machine differs from the handmade method. Generally, the machine should be filled as follows, unless, of course, the manufacturer's instructions say otherwise.
  • Into pan of 2-lb (1 kg) bread machine, add (in order) wet ingredients such as water, milk, buttermilk, oil, butter, egg, yogurt, honey and syrup. Then add any sugar and salt. Next add dry ingredients such as flour, bran, oats, seeds, cornmeal and millet. Sprinkle yeast over top, without letting yeast touch liquid. Choose appropriate setting.

2 (1/4 ounce) packets yeast
1 cup warm water
2 tablespoons salt
1/4 cup sugar
6 tablespoons shortening
3 1/3 cups warm water
10 -12 cups flour

Steps:

  • Dissolve yeast and 1 cup warm water in a large mixing bowl. Let rest 10-15 minutes.
  • Add salt, sugar, shortening and 3 1/3 cups warm water.
  • Gradually mix in 10 cups of flour. Add up to 2 more cups until dough is no longer sticky.
  • Knead for 10 minutes. Cover the bowl and let rise for 1 hour until dough doubles in size.
  • Punch down dough, form into 4 loaves, place into loaf pans and let rise again until double in size(about an hour).
  • Place in preheated oven at 375 degrees and bake until golden brown (about 35 Minutes).
  • This recipe also works well halfed.
  • For whole wheat bread, substitute 4 cups of whole wheat flour mixed with 6 to 8 cups of white flour.
  • I cool slice and freeze the extra laoves for later.

1-1/2 teaspoons active dry yeast
1-3/4 cups warm water (110° to 115°)
3-1/2 cups plus 1 tablespoon all-purpose flour, divided
2 teaspoons salt
1 tablespoon cornmeal or additional flour

Steps:

  • In a large bowl, dissolve yeast in warm water. Using a rubber spatula, stir in 3-1/2 cups flour and salt to form a soft, sticky dough. Do not knead. Cover and let rise at room temperature 1 hour., Stir down dough (dough will be sticky). Turn onto a floured surface; with floured hands pat into a 9-in. square. Fold square into thirds, forming a 9x3-in. rectangle. Fold rectangle into thirds, forming a 3-in. square. Place in a large greased bowl, turning once to grease the top. Cover and let rise at room temperature until almost doubled, about 1 hour., Punch down dough and repeat folding process. 1 c milk (2/3c ----- 1-1/4 c)
1 egg (1/2 ------ 1)
2 Tbsp butter (1 tbs --------2 tbs)
1/2 tsp salt (1/3 tsp -------2/3 tsp)
1 1/2 Tbsp sugar (1 tbs ------ 2 tbs)
3 c bread flour*** (2 c ------ 3-1/2 c)
1 1/2 tsp yeast (1 tsp ------ 2 tsp)
AT THE BEEP, ADD
2 Tbsp sesame seeds (1-1/2 tbs ------ 2-1/2 tbs)

Steps:

  • 1. Add ingredients in the correct order for your bread machine, except for the sesame seeds. *** Remember that you can substitute wheat(or some other) flour for part of the bread flour. Add an appropriate amount of gluten if you use wheat flour.
  • 2. Set your machine for the correct sized loaf, and desired loaf color.
  • 3. Add sesame seeds when the machine beeps for add-ins.
  • 4. The next time your machine beeps, you will have a delicious loaf of bread.
  • 5. Note: I sometimes use the bread machine to make dough only, then place in a bread pan, sprinkle with more sesame seeds, let rise and bake in the oven at 350 for 20-30 min. until golden brown. (I keep my eye on it for color, sometimes I forget to check the actual time.)
