I love this dish! It reminds me of potlucks and summertime. It's full of every texture--warm, cool, crisp, soft, crunchy. It has a touch of sweetness and tanginess from the dressing, and the lovely nacho cheese flavor from the chips, with the taco-seasoned meat. It all works together deliciously and is a quick and easy meal that's ready to go anytime.

1 pound lean ground beef
1 medium onion, finely diced
salt and ground black pepper to taste
¼ cup water
1 ½ tablespoons taco seasoning mix
1 (15 ounce) can dark red kidney beans, drained
½ (12 ounce) bag nacho cheese-flavored corn chips (such as Doritos®), crushed
1 large head romaine lettuce, chopped
1 ½ medium tomatoes, diced
½ cup shredded Cheddar cheese, or more to taste
½ cup Catalina salad dressing, or to taste

Steps:

  • Heat a large nonstick skillet over medium to medium-high heat and saute ground beef, diced onion, salt, and pepper together until ground beef is browned and no longer pink and onions are tender, about 10 minutes. Add 1/4 cup water and taco seasoning to the meat. Stir to coat and allow to simmer for 1 minute to thicken. Set aside to cool while you prep the salad.
  • Add kidney beans, crushed chips, lettuce, tomatoes, Cheddar cheese, and dressing to a large bowl. Top with meat mixture and toss gently to evenly combine. Serve immediately.

1 lb ground beef
1 packet taco seasoning
1/3 cup water
4 cups chopped Romaine lettuce
1 15 oz. can black beans (rinsed and drained)
1 cup chopped tomatoes
1/4 cup chopped red onion
1 cup shredded cheddar cheese
2 cups broken up Dorito chips
1/2 cup sour cream
1/4 c favorite salsa
1/4 teaspoon ground cumin

Steps:

  • In a large skillet, cook meat, breaking it up with a spatula. Cook until no longer pink. Add seasoning, stir and cook for 1 minute. Add water, stir and simmer for 2 minutes. Remove from heat and cool for 5 minutes.
  • In a large salad bowl, combine chopped lettuce, tomatoes, onion, cheese, black beans and seasoned beef. Add Doritos.
  • In a small mixing bowl, whisk together sour cream, salsa and cumin. Add to salad and toss gently.
  • Serve immediately.

lettuce
1 (15 1/2 ounce) can kidney beans, drained (optional)
grated cheddar cheese (as much as you want)
1 lb ground beef
1 (1 1/4 ounce) package taco seasoning
1 (13 ounce) bag plain Doritos (smashed up)
1 (16 ounce) bottle Italian dressing
diced fresh tomato

Steps:

  • Cook ground beef, add taco seasoning while cooking without any water and cool.
  • Wash and break up lettuce into large bowl.
  • Add all the ingredients that are listed.
  • Only mix salad last minute to avoid soggy lettuce.
  • Serve.

Another recipe my mom used to make. Its different, but SO good! Definitely not like a traditional taco salad. Its a nice alternative though!

1 lb ground beef
1 cup chopped lettuce (more or less to your liking, I love lettuce and always add more)
1 cup chopped tomato (more or less to your liking, I love tomatoes and always add more)
1 cup cheddar cheese (more or less to your liking, I love cheese and always add more)
1 finely chopped red onion
1 (1 1/4 ounce) package taco seasoning (I use El Paso, but any will do)
1 (15 ounce) can ranch style beans (you cant get these everywhere, so you can also use any brand of chilli beans)
1 (16 ounce) bottle Catalina dressing
1 (12 1/2 ounce) bag Doritos

Steps:

  • Fry ground beef and add taco seasoning.
  • Mix ground beef and ALL ingredients, except Doritos (unless you don't mind soggy), in a large bowl.
  • Refrigerate.
  • Mix in Doritos and enjoy!
  • Note: I enjoy this nice and cold from the fridge, but you may prefer it warm or room temperature.

This is one of my favorite things to eat, so much flavor with not a lot of effort. My family loves to build their own, and this is the perfect recipe to do that. Enjoy!

3 pound(s) hamburger
3 package(s) taco seasoning mix, of choice
1 bag(s) or so of shredded lettuce
1 pint(s) cherry tomatoes, halved or quartered
2 can(s) pitted black olives (lg), sliced
1 cup(s) red onion, chopped
1 bunch(es) chives/green onions, chopped
1 bag(s) mexican or taco shredded cheese (16 oz)
16 ounce(s) sour cream
2 can(s) refried beans
2 bag(s) nacho and ranch doritos, family size
1 bottle(s) taco sauce
1 jar(s) salsa

Steps:

  • Brown meat, drain fat. Add 3 seasoning packs with amount of water indicated, stir well and let simmer.
  • Heat up refried beans in a medium sized sauce pan, add 1/2 to full cup of meat mixture and stir well.
  • Set toppings out, and build your own.
  • We served homemade guacamole with ours. Guac: 3 avocados, peeled/chopped 3 medium sized limes, halved and juiced 1 small red onion, finely chopped Cilantro, chopped Salt/pepper to taste Mash lime juice and avocado together, leaving some pieces chunky for texture. Stir in cilantro, red onion, salt and pepper.
