ROASTED POTATO HASH image

Number Of Ingredients 10

4-5 Good-sized Russet potatoes, diced into half-inch cubes
1 Large Yellow or white onion, diced.
4-5 Carrots, diced into half-inch pieces
2-4 Cloves of pressed Garlic, to taste.
½ Teaspoon Rosemary
½ Teaspoon Thyme
¼ Teaspoon Nutmeg
5 Tablespoons of Olive Oil
Salt and Pepper to taste
(Optional spice/heat: hot pepper flakes, a favorite hot sauce, diced jalapeños or chipotles, to taste.)

Steps:

  • Preheat oven to 450º. Grind together dry spices in food processor or in a mortar & pestle, and place in large mixing bowl, add other ingredients and stir until fully coated. Place in large glass baking dish and bake for at least one hour, stirring the pan every 20 minutes or so. Veggies are done when they look nice and brown and caramelized.
