Crunchy watercress, cucumber & radish salad image

A superhealthy, summery salad perfect for barbeques and picnic

1 cucumber
2x bags watercress
2x bags baby radishes , halved if large
6 tbsp natural yogurt
1 tbsp white wine vinegar
1 tsp Dijon mustard
1 garlic clove , crushed
sprig dill , leaves only, chopped

Steps:

  • To make the dressing, whisk together all the ingredients, then season. (This can be stored in the fridge for up to 2 days.) Peel the cucumber into long, thin strips with a vegetable peeler, discarding the seeded section. Just before leaving, arrange the watercress, cucumber and radishes in a portable container. Drizzle with dressing just before serving.

Cool and Crunchy Melon-Cucumber Salad image

This summer, add cucumber to a melon salad to make it extra-crisp and cool. We cut watermelon and cantaloupe into cubes and balls for a beautifully geometric presentation that can be eaten with toothpicks. We also tossed them as a salad, dressed with yuzu juice (available at Asian supermarkets and specialty stores), though it's equally out-of-this-world with lime or lemon juice.

1/2 cup watermelon cubes or balls
1/2 cup cantaloupe cubes or balls
1/2 cup sliced cucumber
1/2 teaspoon extra-virgin olive oil
1/2 teaspoon yuzu juice (or 1 teaspoon lime or lemon juice)
Salt and pepper
Basil leaves

Steps:

  • To make one serving, combine watermelon and cantaloupe cubes or balls with cucumber. Drizzle with olive oil and yuzu juice (or lime or lemon juice). Season with salt and pepper; stir to combine. Garnish with basil leaves.

CRUNCHY CHINESE CUCUMBER SALAD



Crunchy Chinese Cucumber Salad image

A lovely crunchy salad which takes a bit more time than a simple cucumber salad, but it's really worth it! Goes well as a starter or a side dish with a chinese meal. Cooking time includes leaving the cucumbers in salted water for 20 minutes and standing time (to develop the flavour of the salad) of 2 hours.

1 teaspoon cooking oil
1 big mild chili pepper, deseeded, sliced into rings (or a small hot chilli finely chopped)
1 1/2 tablespoons sugar
1/2 teaspoon grated fresh ginger
1 tablespoon dark soy sauce
2 tablespoons dark rice vinegar
1 tablespoon white wine
1/2 tablespoon sesame oil
1 garlic clove, finely chopped
1/2 tablespoon toasted sesame seeds
1 cucumber (ca 350g/12ounces, unpeeled)
150 ml hot water
1/2 tablespoon salt

Steps:

  • Preparation of cucumber:.
  • Half washed but unpeeled cucumber lengthwise. Remove the seeds with a spoon and discard. Slice into ca 1/2 cm / 1/5 inch pieces. Put into a bowl.
  • Mix hot water and salt and pour it over the cucumber pieces. Leave cucumbers in water for ca 20 minutes.
  • Dressing:.
  • Heat oil in a medium skillet.
  • Add chilli and cook for 1-2 minutes.
  • Add the remaining ingredients of the dressing until the sesame oil. Cook for 2 minutes.
  • Add garlic and sesame. Cook for 1-2 minutes. Put aside.
  • Finish Salad:.
  • Drain the cucumber pieces (after the 20 minutes in the water) and squeeze them slightly. Mix with the dressing (I do this in the skillet and put salad afterwards into a bowl) and leave the salad for 2 hours to develop its flavour.
  • Serve as a starter or as a side dish to a chinese meal.

1 medium red onion, sliced thin
4 Tbsp sugar
1/2 c apple cider vinegar
1/2 tsp celery seed
3/4 tsp dried dill weed or seed
1/2 tsp salt
1/2 tsp fresh cracked pepper
2 stalk(s) celery.. strings removed and thinly sliced
3 large narrow cucumbers sliced and scored down the outer green sides wih a fork.

Steps:

  • 1. Rinse the sliced and separated onion rings under cold water for a few minutes to remove the harshness. Drain well.
  • 2. In a large bowl, whisk the vinegar, sugar, celery seed, dill, salt and pepper until the sugar is dissolved.
  • 3. Toss in the sliced and scored cucumbers, celery slices and onion rings.
  • 4. Let marinate in the refrigerator, at least 20 minutes before serving. This is even better the next day Makes 1 quart of delicious salad.. *****Note: I even used it on my fish tacos...nice and crunchy!

1 small shallot
25g enoki mushroom (available from larger supermarkets or Asian stores)
2 spring onions , thinly sliced diagonally
1 red chilli , deseeded if you like and thinly sliced
2 cucumber
25g beansprouts
2 tsp lime juice
2 tsp white wine vinegar
2 tsp vegetable oil
1 tbsp fish sauce
1 tbsp caster sugar
1 tbsp sesame seeds

Steps:

  • Thinly slice the shallot and place half in a bowl. The remainder can be fried and used as a garnish, if you like (see below). Add the mushrooms, spring onions and chilli to the bowl, then cover and leave in the fridge until ready to serve.
  • Just before serving, slice the cucumber into long, thin strips (try using a vegetable peeler to get really thin slices). Toss together with the remaining salad ingredients. Mix together all the dressing ingredients, leave to one side for 5 mins to let the sugar dissolve, then toss half the dressing through the salad. Place in a serving dish and top with the remaining dressing and fried shallots, if you like.

2 large cucumbers
Salt
2 ripe avocados
1/2 cup chopped mint
Juice and zest of 1/2 lime
4 ounces feta cheese, diced
2 tablespoons olive oil
2 tablespoons lime juice
Pepper to taste (or lemon pepper)

Steps:

  • Peel the cucumbers, cut them in half lengthwise and scrape out the seeds with a teaspoon. Cut cucumbers into 1/2-inch pieces and put in a colander. Generously sprinkle with salt and let sit in the sink for 30 minutes to drain. This will prevent your salad from getting watery. Quickly rinse and blot dry with paper towel. While cucumbers are draining, dice the avocados into 1/2-inch pieces and put into a salad bowl. Drizzle with lime juice and toss gently. Wash and coarsely chop the mint. Chop the lime zest. In a bowl, whisk together 2 tablespoons olive oil, 2 tablespoons lime juice and lime zest to make dressing. Add drained cucumbers, mint, feta cheese and dressing to the avocados and gently combine. Add pepper (or lemon pepper) to taste. Cover and let stand in refrigerator for about 30 minutes to allow the flavors to blend.

1 Tbsp salt
3 c ice water (ice cubes in water)
4 scallions, thinly sliced
1/2 small red bell pepper, chopped
1/4 c sour cream
2 Tbsp white vinegar
2 Tbsp sugar
1/4 tsp black pepper

Steps:

  • 1. In a large bowl combine the sliced cucumbers, salt and ice water. Cover and chill for 1 hour. This is what keeps your cucumbers crisp! After an hour of chilling, drain and return cucumbers to the bowl and add the remaining ingredients.
  • 2. Mix well, cover again and let chill for at least 2 hours. Enjoy!
