1 tablespoon butter
1 tablespoon plain flour
1/2 cup milk
1/2 teaspoon paprika
4 pieces fish, cut in halfs
1 egg
1 cup stale breadcrumbs

Steps:

  • SAUCE--------------.
  • Place the butter in a preheated suacepan and melt the butter down (on low heat).
  • Once the butter is melted down add the plain flour.
  • Stir well and cook the mixture of butter and plain flour which should go a bit lumpy and dry at this stage.
  • Very important that you cook this well (2-4 minutes).
  • Remove from heat and slowly, very slowly add the milk and stir in.
  • The sauce should now be getting smooth.
  • If it is lumpy you have been adding the milk to fast.
  • Keep adding the milk until the desired thickness is achieved.
  • Add the paprika for a bit of extra kick.
  • Any other herbs or things like lemons can be added for a bit of extra taste.
  • This sauce is used in my fish and white sauce and my tuna mornay recipes as well so look for them.
  • CRUMBED FISH---------------.
  • Beat the egg until the white and yolk are combined.
  • Dip the fish piece by piece in the egg.
  • Cover with a generous coating of breadcrumbs.
  • Place in a frying pan with oil and cook on medium heat until the fish is cooked through.
  • When serving place 2 pieces on each persons plate and pour the white sauce over the fish and be sure to garnish with some parsley.
  • Enjoy.

I love fish, and the family says I make the best fish in the house. I wonder if they just want me to cook sometimes? Maybe not, because this recipe really is yummy -- and easy.

800 -900 g fish, most firm white fish works well (when it's on sale, I use tail-end pieces of Atlantic salmon)
1/2 cup flour (or more)
2 eggs, lightly beaten
1 cup breadcrumbs (I usually make these out of some interesting leftover bread)
2 tablespoons parmesan cheese
1 tablespoon finely chopped herbs (such as dill or parsley)
salt and pepper, to taste, I use very little salt
1/4-1/2 cup oil (for cooking, adjust to suit your pan)

Steps:

  • Rinse fish and pat dry with paper towels.
  • Season breadcrumbs with parmesan, herbs, salt and pepper.
  • Start to heat oil in frying pan. I use a ridged pan.
  • While oil is heating, dip each piece of fish in flour, then in beaten egg, then in seasoned breadcrumbs.
  • Cook fish in hot oil until done, and nicely browned.
  • Drain on paper towels.
  • Serve with my Recipe #210251. Everyone says this sauce makes this recipe, so it is worth the effort.

1 lb white fish fillets
1 1/4 c milk
salt and freshly ground black pepper to taste
1 Tbsp sunflower oil
1/2 c butter
1 medium onion, peeled and finely chopped
2 leeks, sliced
1 medium carrot, peeled and small diced
2 medium potatoes, peeled and cut into small pieces
6 Tbsp all-purpose flour
1 1/2 c fish or vegetable stock
2 Tbsp whipping cream
1 tsp freshly chopped dill
1/2 c butter
1/2 c all-purpose flour
3/4 c grated parmesan cheese
3/4 tsp cayenne pepper

Steps:

  • 1. Preheat oven to 400°F. Spray with non-stick spray a 8x8" baking dish. Place the fish in a saucepan with the milk, salt, and pepper.
  • 2. Bring to a boil, cover and simmer for 8-10 minutes until the fish is cooked. Remove with a slotted spoon, reserving cooking liquids. Flake the fish into the 8x8" baking dish.
  • 3. Heat the oil and 1-tbsp of butter in a small skillet and gently fry the onions, leeks, carrots, and potatoes for 1-2 minutes.
  • 4. Cover tightly and cook on low until softened, about 10 minutes. Spoon the vegetables over fish.
  • 5. Melt the remaining butter in a saucepan and add the flour and cook for 1 minute, stirring. Whisk in the reserved cooking liquid and the stock.
  • 6. Cook until thickened, and then stir in cream. Remove from heat and then stir in dill. Pour over fish. -
  • 7. rumble : Mix the butter with the flour until the mixture resembles breadcrumbs. Stir in cheese and cayenne pepper.
  • 8. Sprinkle over the dish and bake in 400°F oven for 20 minutes.
