BIG SUR COOLER

- Fill a highball glass with ice cubes. Pour amaretto and blue Curacao over ice cubes. Top with chilled white cranberry juice and stir. Serve garnished with mint.

Steps:
- To make simple syrup, bring the sugar and 1/2 cup water to a simmer in a saucepan on medium heat, then turn off the heat and let cool to room temperature.
- In a tall thermos, add the cucumbers, mint and simple syrup. Stir with the handle of a wooden spoon. Add the lime juice and vodka, then cover and shake vigorously for about 30 seconds. Chill until ready to serve.
- Pour over ice in glasses, then top off with the club soda. Serve immediately.
DESERT COOLER

- Combine juices and apple cider in a pitcher. Pour into glasses filled with ice and garnish with pineapple spears and fresh mint sprigs.

- In a small saucepan, bring sliced ginger and water to a boil. Remove from heat and steep for 20 minutes. Strain and reserve liquid.
- In a large pitcher, stir to combine the lemonade concentrate, ginger water, ginger ale, and vodka. Serve over ice with a slice of lemon.
