MAKE-AHEAD GREEN BEAN CASSEROLE



Make-Ahead Green Bean Casserole image

Dedicate just a little bit of your freezer space to this crowd-pleasing casserole and save yourself some time at your next holiday meal. Make the green bean-and-mushroom favorite (no canned soup required), then freeze and forget it. To serve, just reheat (from frozen) and top with crunchy fried onions.

Kosher salt
1 1/2 pounds green beans, trimmed and halved crosswise
2 tablespoons unsalted butter
1 medium onion, diced
1/2 pound button mushrooms, sliced
2 tablespoons all-purpose flour
2 cups low-sodium chicken broth
1/2 cup half-and-half
Freshly ground black pepper
1 1/2 cups prepared fried onions

Steps:

  • Bring a large pot of salted water to a boil. Add the green beans, and cook until bright green and crisp-tender, about 10 minutes. Drain and shake off any excess moisture; set aside.
  • Melt the butter in a medium pot over medium heat. Add the onions, and cook, stirring, until soft, about 8 minutes. Add the mushrooms and a pinch of salt, and continue to cook, stirring, until they are soft and most of their liquid has evaporated, about 10 minutes. Sprinkle the flour over the vegetables, and stir until all the flour has been absorbed, about 1 minute. Add the chicken broth, half-and-half, 3/4 teaspoon salt and several grinds of pepper. Bring to a boil, then reduce to a simmer and cook, stirring, until the sauce thickens and coats the back of a spoon, about 5 minutes. Remove the pot from the heat, add the green beans and stir to coat in the sauce. Transfer the mixture to a 3-quart baking dish.
  • Let the casserole cool to room temperature. Wrap well with plastic wrap and foil, label and date, then freeze for up to 2 weeks.
  • To serve, preheat the oven to 350 degrees F. Discard the plastic wrap and foil from the frozen casserole. Cover with new foil, and bake until warmed through, about 45 minutes. Uncover, and top with the fried onions. Continue to bake until the casserole is hot and bubbly and the onions have crisped slightly, about 20 minutes more.

Green Bean Casserole is my favorite side dish! I worked on perfecting this recipe for a long time and now I am able to say- this is it! You will not be able to stop going for second helpings and it is a sure winner with everyone!This recipe feeds a small crowd!

1 can(s) cream of mushroop soup,low sodium
1 cup(s) rich sour cream
1/3 cup(s) bacon bits/ use ,,kirkland,, brand from cosco/
4-5 can(s) french style green beans,well drained/or regular
4 ounce(s) velveeta cheese,cut up in to small cubes
1 teaspoon(s) dried onion flakes
1 teaspoon(s) no-salt all purpose seasoning/i use ,,21 salute,, seasoning from trader joes/.
1/2 teaspoon(s) freshly fround black pepper
2 1/2 cup(s) cornflakes,plain
1 stick(s) sweet butter,melted and cooled
1 can(s) french fried onions/as another option for the topping/.

Steps:

  • Preheat the oven to 375'.Butter well the 13*9 Pyrex pan.
  • In a large bowl mix the sauce ingridients:soup,sour cream,bacon bits,onion flakes,all-purpose seasoning,ground pepper.
  • Fold in the well-drained beans.Pour the mixture in to the pan. Sprinkle the Velveeta cubes over the top.
  • In another bowl combine the corn flakes and the melted butter.Sprinkle this topping over the cassrole.Flakes should be coated well. Or as another faster option use the fried canned onions.
  • Bake for 40 minutes,making sure the topping does not obverbrown.Bake at 375'. Let the casserole rest for 5 min. on the countertop before serving. Serves 10.
  • p.s I use Kirkland brand for bacon bits/from Cosco/ and 21 Salute seasoning from Trader Joes. All NOTE:All-Purpose seasoning you will be using should have no salt. Be creative with spices!
