1 pound bulk pork sausage
1 package (6 ounces) onion and garlic croutons
2 cups cubed mild cheddar cheese
2 cups cubed Monterey Jack cheese
12 large eggs, beaten
1/2 cup whole milk
1/2 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a skillet, cook sausage over medium heat until no longer pink; drain. In a greased 13-in. x 9-in. baking dish, layer the croutons, sausage and cheese. Combine eggs and milk; mix well. Pour over cheese; sprinkle with basil, salt and pepper. , Bake, uncovered, at 350° for 40-45 minutes or until the top is lightly browned and a knife inserted in the center comes out clean. Serve immediately.

1 pound sausage meat
1 medium onion (- diced)
1 medium green pepper (- diced)
8 large eggs
2 cups milk
1/2 teaspoon sea salt salt
1/2 teaspoon ground black pepper
2 cups big croutons
1 1/2 cups shredded cheddar cheese

Steps:

  • Sautee the onions and green peppers in a large skillet on medium-high heat for about 3 minutes, until they start to soften. Add in the sausage and cook until the sausage meat is cooked through, breaking the sausage into about blueberry-sized pieces.
  • Whisk the eggs, milk, salt and ground black pepper together in a large bowl. Set aside.
  • Lightly oil a 9x13 baking dish. Layer the croutons evenly on the bottom. Layer the sausage mix on top of the croutons. Evenly layer the grated cheese on top of the sausage mix. Gently pour the egg mixture on top. Cover and let it sit in the refrigerator overnight, at least 8 hours.
  • In the morning, preheat the oven to 325°/160°C. Remove the cover and place the casserole in the middle of the oven. Bake for 30 minutes. Turn the heat up to 350°C/176°C. Bake for an additional 20-30 minutes, until the egg is set. To check, insert a knife in the middle of the casserole and it should come out clean. If the casserole is browning too quickly, cover with a foil for the last bit of baking time.
  • Let the casserole sit for 10 minutes before cutting and serving.

1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 package (26 ounces) frozen shredded hash brown potatoes, thawed
1/2 teaspoon paprika
1/4 teaspoon pepper

Steps:

  • Place croutons in a greased 3-qt. baking dish. Sprinkle with cheese and ham. In a large bowl, whisk the eggs, 2-1/4 cups milk and mustard; pour over ham and cheese. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Combine soup and remaining milk until blended; spread over casserole. 1 1/2 lbs bulk pork sausage or 1 1/2 lbs Italian sausage
2 1/2 cups seasoned croutons
2 cups cheddar cheese, 8 ounces shredded
2 1/2 cups milk
4 eggs
1/4 teaspoon dry mustard
1 (10 3/4 ounce) can cream of mushroom soup
1/2 cup milk

Steps:

  • In a large skillet cook sausage until brown, drain.
  • Lightly grease a 3 quart rectangular baking dish and spread croutons evenly in bottom.
  • Sprinkle 1 cup of shredded cheese over croutons and top with sausage.
  • In a large bowl add 2 1/2 cups milk, eggs, and dry mustard. Whisk together well and carefully pour over layers in baking dish.
  • In a small bowl combine cream of mushroom soup and 1/2 cup milk, whisk well and spoon evenly over mixture in baking dish.
  • Cover with plastic wrap and chill for 2 hours or overnight.
  • Bake in a 325 degree oven, uncovered for 45 minutes.
  • Sprinkle with remaining cheese and bake for approximately 5 to 10 minutes longer or until a knife inserted in the middle comes out clean.
  • Let stand for 10 minutes before serving.

¼ cup butter, melted
3 cups croutons
2 cups grated Cheddar cheese
6 eggs
1 ¾ cups milk
1 bell pepper (any color), diced
1 tablespoon prepared mustard
salt and pepper to taste

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Melt butter in the microwave, or in a small pan on the stove over low heat. Spray a 9x12 inch baking dish with vegetable spray. Place croutons in the bottom of the dish, and drizzle with melted butter. Sprinkle with grated Cheddar cheese.
  • Crack the eggs into a bowl, whisking to break up the yolks. Add milk, peppers, mustard, salt, and pepper, and beat until well-combined. Pour over the croutons and cheese, and sprinkle with crumbled bacon.

I got this from a coworker about 8 or 9 years ago, and my family will not let me make anything else now! We all love it. It makes a huge amount - I freeze part of it so we can enjoy it a couple weeks later.

Number Of Ingredients 11

1 1/4 lbs challah or 1 1/4 lbs other egg bread, crusts trimmed & cut into 1/2 " cubes
1 lb sweet Italian sausage link, casings removed
1 medium onion, chopped
4 stalks celery, chopped
1/2 cup water chestnut, drained and quartered
1/2 cup pecans, toasted and chopped
2 tablespoons parsley, chopped
4 teaspoons sage, chopped
1/4 cup chicken stock
2 tablespoons butter, melted
salt and pepper

Steps:

  • Preheat the oven to 300 degrees.
  • Spread the bread cubes in a single layer on 2 large cookie sheets.
  • Bake until lightly browned and crisp, about 20 minutes.
  • Transfer to a large bowl to cool.
  • Crumble the sausage meat into a large skillet and brown over medium heat until cooked through.
  • Add to the bread cubes using a slotted spoon.
  • In the same skillet, cook the onion and celery until transparent.
  • Add to the bread cubes, again with a slotted spoon.
  • Mix in the water chestnuts, pecans, parsley and sage.
  • Add the stock and the butter and toss until fully mixed.
  • The mixture will look kind of dry.
  • Season with salt and pepper to taste.
  • You could stuff a bird with this, but I just put it into a big pan and bake after the turkey is done for about 45 minutes at 350 degrees.

1 (4.5 ounce) can mushrooms, drained and chopped
1 cup shredded sharp Cheddar cheese

2 sprigs fresh parsley, for garnish

Steps:

  • Spread croutons on bottom of greased 9x13 inch baking dish. Crumble sausage into medium skillet. Cook over medium heat until browned, stirring occasionally. Drain off any drippings. Spread sausage over croutons.
  • In a large bowl, whisk together eggs and milk until well blended. Stir in soup, spinach, mushrooms, cheeses and mustard. Pour egg mixture over sausage and croutons. Refrigerate overnight.
  • The next morning, preheat oven to 325 degrees F (165 degrees C).
