Garlic Crostini with Fresh Mozzarella image

Organic tomatoes, fresh mozarella and basil top baguette slices for a delicious appetizer you can serve in less than 30 minutes.

24 slices (1/2 inch thick) baguette (about 8 oz)
1 to 2 tablespoons olive oil
2 large cloves garlic
1 can (14.5 oz) Muir Glen™ organic diced tomatoes, drained
3/4 cup diced fresh mozzarella cheese
2 tablespoons chopped fresh basil leaves
1/4 teaspoon coarse (kosher or sea) salt
1/4 teaspoon pepper

Steps:

  • Heat oven to 425°F. On ungreased cookie sheet, place bread slices. Brush oil on slices of bread. Bake 4 to 5 minutes or until very light golden brown. Cool 5 minutes.
  • Meanwhile, stir together all remaining ingredients except garlic.
  • Cut garlic cloves in half. Rub cut sides of garlic over toasted bread slices. Spoon mixture onto bread slices. Serve immediately.

2 tablespoons butter
2 anchovy fillets, drained and chopped
1 tablespoon milk
1 baguette or 1 other crusty bread, cut into 1/2 inch slices
2 tablespoons olive oil
1/2 lb fresh buffalo mozzarella cheese, thinly sliced and patted dry

Steps:

  • Preheat broiler.
  • Combine butter, anchvies and milk in a small saucepan over low heat and cook, stirring for often for about 3 minutes or until anchovies dissolve, mashing with the back of a spoon. DO NOT BOIL.
  • Place bread slices on a cookie sheet.
  • Brush bread slices with oil and top with mozzarella slices.
  • Broil until cheese melts and bread is crisp (3 minutes). BE CAREFUL IT COOKS FAST.
  • Transfer to a platter and drizzle sauce over crostini.

1 baguette, sliced into thin rounds
2 tablespoons olive oil, plus more for the bread
1 1/2 cups mixed pitted olives
1/4 cup fresh basil leaves
1/4 cup fresh flat-leaf parsley leaves
1 tablespoon lemon juice
3 flat anchovy fillets
1 clove garlic, chopped
1 roasted red bell pepper

Steps:

  • Preheat the oven to 375 degrees F. Brush the bread lightly with oil on one side and arrange on a baking sheet. Bake until lightly dried out, about 10 minutes.
  • Meanwhile, combine the olives, basil, parsley, oil, lemon juice, anchovy fillets, garlic and bell pepper in a food processor and pulse until very finely chopped.
  • Transfer to a small serving bowl and serve with the crostini.

Steps:

  • Preheat broiler. Combine butter, anchovies, and milk in small saucepan over low heat. Cook until anchovies dissolve, mashing with back of spoon and stirring often, about 3 minutes (do not boil).
  • Place bread slices on rimmed baking sheet. Brush with oil; top with mozzarella slices. Broil until cheese melts and bread crisps, watching closely to prevent burning, about 3 minutes. Transfer crostini to platter.
  • Drizzle sauce over crostini; serve.

4 anchovy fillets, drained, chopped
1 to 2 tablespoons chopped fresh Italian parsley
1 teaspoon chopped fresh thyme leaves
1 teaspoon minced garlic
1/2 teaspoon minced lemon zest
1/4 teaspoon dried crushed red pepper flakes
12 (2 by 1/3-inch thick) slices rustic crusty white bread
1 cup grated Provolone

Steps:

  • Preheat oven to 425 degrees F.
  • Melt the butter in a heavy small skillet over medium heat. Add the anchovies and stir until they dissolve, about 3 minutes. Stir in the herbs, garlic, lemon zest, and crushed red pepper.
  • Arrange the bread slices on a large baking sheet. Brush with the anchovy mixture. Sprinkle with the cheese. Bake until the cheese melts and the bread is golden, about 10 minutes. Cut the bread slices in halves and serve.

1 French baguette, cut into diagonal 1/2 inch slices
3 tablespoons extra virgin olive oil
4 cloves garlic, halved
6 plum tomatoes, seeded and chopped
1 bunch fresh basil, julienned
1 pound fresh mozzarella cheese, sliced

Steps:

  • Preheat the oven's broiler. Brush the slices of bread lightly with olive oil, and place on a baking sheet. Toast under the broiler for about 3 minutes. Watch carefully. Rub each crostini with a garlic clove for flavor.
  • Place the tomatoes into a medium bowl, and drizzle with olive oil. Season with salt and pepper.
  • Place the crostini on a serving tray. Top each one with a slice of mozzarella cheese, cover with a spoonful of tomatoes, and garnish with fresh basil.

For anchovy sauce:
1 stick unsalted butter, cut into pieces
4 flat anchovy fillets, finely chopped
2 tablespoons drained capers, coarsely chopped
2 teaspoons fresh lemon juice
2 tablespoons finely chopped flat-leaf parsley
For mozzarella in carozza:
1 (1-pound) Italian loaf such as pane di casa (5 inches wide)
1 (1-pound) ball salted fresh mozzarella, cut into 6 (1/4-inch-thick) slices
1 cup plus 3 tablespoon whole milk, divided
1 cup fine dry bread crumbs
4 large eggs
About 3 cups olive or vegetable oil

Steps:

  • Make anchovy sauce:
  • Melt butter in a small heavy saucepan over low heat. Discard any foam from top, then remove from heat. Stir in anchovies, capers, and lemon juice. Keep warm, covered. Stir in parsley just before serving.
  • Make mozzarella in carrozza:
  • Cut bread from middle of loaf into 12 (1/4-inch-thick) slices. Sandwich each slice of mozzarella between 2 slices bread, then cut off crusts, forming 4-inch squares (mozzarella slices should be smaller than bread slices).
  • Put 1 cup milk in a shallow dish and spread bread crumbs on a plate. Dip both sides of each sandwich in milk, pressing edges lightly to seal sandwich. Coat with bread crumbs, making sure edges are coated well. Place on a parchment-lined baking sheet and chill 2 hours.
  • Whisk eggs in a large shallow bowl, then whisk in 3/4 teaspoon salt and remaining 3 tablespoons milk.
  • Heat 1/2 inch oil in a 12-inch skillet over medium heat until it shimmers. Dip sandwiches, 1 at a time, in egg mixture, letting excess drip off, and fry, 3 at a time, turning once with a slotted spatula, until golden, about 6 minutes per batch. Drain on paper towels.
  • Halve diagonally and serve hot with anchovy sauce.
