CROSBY ELEMENTARY SCHOOL SLOPPY JOES--ADAPTED
Crosby Elementary School via the Food Network. These remind me of those I loved as a child--except I do not remember any crunch to those. Thus, I have adapted this recipe to saute the vegetables briefly with the beef. WARNING: These are VERY sweet, so adjust the amount of ketchup and/or brown sugar to moderate that, if desired. If you wish to increase the amount of vegetables, without anyone noticing :-) you can, as I did, add a few tablespoons of finely diced eggplant to the vegetables when sauteing them.

Steps:
- Brown the beef in a large pot and drain well.
- Return it to the pot with all the vegetables and saute until the celery is just tender.
- Add the remaining ingredients (except the buns) and cook, stirring, until hot.
- Divide the beef mixture among the buns and serve immediately.
- The beef mixture freezes well!

CAFETERIA SLOPPY JOES
Steps:
- Brown 1 pound ground beef in a large skillet with olive oil. Add 1 chopped onion, 3 chopped garlic cloves, 2 teaspoons each ground cumin and smoked paprika and 1/4 teaspoon cayenne pepper; cook 1 minute. Stir in 1 cup ketchup, 2 tablespoons apple cider vinegar, 1 tablespoon brown sugar and 1/2 cup water and simmer until thick, about 15 minutes. Serve on slider rolls with potato chips.
SLOPPY JOES
This simple version of sloppy Joes, the classic sandwich served in school cafeterias and at kitchen counters across the country, comes together in about 20 minutes and can be made with ground beef, chicken or turkey. As the name suggests, they are messy, so serve with a fork and plenty of napkins.

- In a saucepan over low heat combine the sauce ingredients. Season to taste with salt and pepper. Mix well, and simmer while preparing the meat.
- Heat a heavy nonstick or cast-iron skillet, at least 10 inches in diameter, over medium-high heat. Add the ground sirloin, and saute, stirring occasionally, for 4 to 5 minutes, or until the meat is no longer pink. Turn the meat into a strainer or colander lined with paper towels, allowing the fat to drain off.
- Add the onion to the pan, and sauté, stirring frequently, for about 5 minutes, or until the onion is translucent. Return the meat to the pan, and add the sauce. Heat for 3 minutes, stirring occasionally. Taste and season with salt, pepper or more hot sauce, if desired. Spoon 1/2 cup of the mixture over each bun. Serve immediately.

Steps:
- In a skillet, over medium heat, sautee onion until slightly translucent. Use cooking spray if desired.
- Add ground beef or turkey, add salt and pepper.
- Cook until no longer pink.
- In the mean time: In your 2 cup measuring vessel, combine ketchup, vinegar, mustard, brown sugar. Stir into meat once it is fully cooked.
- Simmer 15-20 minutes. Serve hot on soft rolls or buns.
- Note: you may use 3/4 cup ketchup and 1/4 cup of your favorite BBQ sauce for added zing.
KID-PLEASING SLOPPY JOES
This is one of my kids' favorite recipes! I could make this five times in a row and they'd never get tired of it. It's easy to make and a real quick, hot meal for those busy nights. I will add cheese on top of the sandwiches or warm the rolls in the oven. I occasionally add mild banana peppers on top for my husband since he is a fan of spicy things.

THE BEST SLOPPY JOES
This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

- Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
