CROCKPOT BEEF SHORT RIBS WITH RICH GRAVY

Crockpot Beef Short Ribs With Rich Gravy image

Found this on line submitted by kitchen sanctuary. com and when we made it had to agree with what she said: Fall-apart beef served with a rich and meaty red wine gravy. I used boneless beef ribs as that's what was available. We usually stay away from beef ribs as they can be tough, but these were fall apart tender.

Provided by Bonnie G 2

Categories     Meat

Time 8h20m

Yield 4 Beef Ribs, 4 serving(s)

Number Of Ingredients 15

1 tablespoon oil
4 meaty beef short ribs
1 onion, peeled and chopped
3 garlic cloves, peeled and minced
1 cup red wine
2 3/4 cups beef stock
1 teaspoon dried thyme
1 tablespoon tomato puree
1 teaspoon sugar
2 bay leaves
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon Worcestershire sauce
2 tablespoons cornstarch or 2 tablespoons cornflour
5 tablespoons cold water

Steps:

  • For Beef:.
  • Heat the oil on high in a large frying pan Place the short ribs in the pan and brown on all sides. This should take about 10 minutes. Add in the onion and cook for a further 2 minutes, whilst stirring.
  • Add in the garlic and heat through for a minute, then add in the red wine. Bring to a bubble and allow to simmer for 3 or 4 minutes, then add in the rest of the short rib ingredients. Bring to the boil, then transfer to the crockpot. Place the lid on and cook on low for 6-8 hours.
  • For Gravy:.
  • To make the gravy, ladle most of the cooking liquid out of the slow cooker and into a saucepan. Heat on a high heat. Mix the cornstarch and water, then slowly pour the mixture into the cooking liquid whilst whisking - until the gravy thickens. You may not need all of the cornstarch. You're looking for a nice gravy of a medium-thick consistency.

PEACH BOURBON CROCKPOT COUNTRY STYLE RIBS

Peach Bourbon Crockpot Country Style Ribs image

This recipe is a modification of a BHG recipe for Apple Bourbon Ribs.I'm not a big apple person and the peaches are in season, big and fresh. I also wanted to try out a fellow foodies (Gary Langer) Peach Zesty BBQ sauce and Pepper Jelly. It turned out wonderfully, even better a couple days later. The peaches taste like peach...

Provided by Vicki Johnson

Categories     Ribs

Time 6h10m

Number Of Ingredients 8

4 1/2-5 lb bone in country style ribs (at least that's what i used)
1 c uncle gary's pepper jelly (www.unclegaryspeppers.com)
3/4 c bourbon
1/2 c packed brown sugar
1/2 c uncle gary's zesty peach bbq sauce (www.unclegaryspeppers.com)
1/2 c italian white wine vinegar
1/2 tsp dried thyme
3 medium peaches (firm, peeled & quartered)

Steps:

  • 1. Season ribs with salt & pepper. Place ribs in slow cooker/crock pot.
  • 2. In a bowl, combine all other ingredients except peaches. Pour this mixture over ribs in the crock.
  • 3. Cover and cook on low for 3 hours. While these are cooking, peel, core and quarter your peaches.
  • 4. After 3 hours, turn over your meat. Then add your peaches to the crock. Cover and cook an additional 3 hours or until meat is tender.
  • 5. To serve, transfer ribs to a serving platter. Strain cooking liquid and serve with ribs. I put my liquid into a small pot, removing a cup of fluid and mixed it with a tbsp of flour and added it back to the pot to thicken it. But you don't have to.

CROCKPOT BABY BACK RIBS WITH POTATOES AND VEGGIES

Crockpot Baby Back Ribs With Potatoes and Veggies image

This is a really easy, delicious recipe for when it's to cold to do ribs on the grill and only uses your crockpot so you aren't dirtying a bunch of pots and pans! Another great thing is that this isn't a "set in stone" recipe. If you like red potatoes instead of yellow? Use them! You prefer a different bbq sauce or spice rub? Use it! NOTE: All seasonings are to taste. This site just makes me use measurements so I guessed there. I used McCormick Grill Mates Cowboy Rub for my "dry rub seasonings" it just wouldn't recognize it as a food.

2 tablespoons olive oil
5 lbs beef short ribs
1 teaspoon kosher salt (to taste)
1/2 teaspoon pepper (to taste)
2 cups apple cider
1 sweet onion, thinly sliced
1 tablespoon brown sugar
4 garlic cloves, minced (or grated)
8 ounces cremini mushrooms, halved
1 tablespoon fresh thyme, chopped
2 honeycrisp apples, chopped
2 tablespoons olive oil
4 large idaho potatoes, peeled and quartered (I used Idaho, but you may sub Russet)

3/4 cup heavy cream
1 cup sharp cheddar cheese, shredded
1/2 cup butter, browned
6 leaves sage, chopped

  • Heat a large heavy bottom skillet over medium high-heat. Add the ribs to the skillet and sprinkle with salt + pepper. Sear the ribs on all sides for about 1 minute per side. Remove the ribs from the skillet.
  • Arrange the onions on the bottom of your crock-pot and sprinkle the brown sugar over them. Add the seared short ribs, garlic, mushrooms, apple cider and thyme.
  • Cover the crock-pot and cook on low for 7-8 hours or on high for 5-6 hours. During the last 1-2 hours of cooking, add the apple slices, tossing to combine.
  • Once the short ribs are done cooking and easily fall apart, skim off any fat from the top of the crock-pot. Lightly shred the ribs and remove and discard the bones. Keep the rib meat in the sauce, covered on low heat until ready to eat.
  • About 40 minutes before you're ready to eat, make the potatoes. In a large pot of cold water, bring the potatoes and garlic to a boil. Salt the water and cook until the potatoes are tender, about 20 to 30 minutes.
  • Drain the potatoes, return the potatoes to the pot and mash over low heat, or mash in the bowl of stand mixer fitted with the paddle attachment, adding the cream, cheddar cheese, and 2 teaspoons salt.
  • In a skillet or small sauce pot, melt the butter over medium heat until just browned. The butter will melt, foam and froth, then begin to brown along the bottom. Whisk browned bits off of the bottom of the pan. Stir in the sage and let cook 30 seconds. Pour the browned butter into the warm mashed potatoes. Taste and season with salt and pepper if desired.
  • Divide the mashed potatoes between plates and top with the rib meat. Enjoy!

2 Tbsp vegetable oil
1 large yellow onion (peeled and sliced)
1 bag(s) baby carrots (small bag)
3 stalks of celery (sliced)
3 clove garlic (minced)
3 sprig(s) thyme
1 sprig(s) rosemary
1/3 c flour
8 beef short ribs (about 2 lbs)
2 c red wine

1 Tbsp packed brown sugar
2 Tbsp dijon mustard
2 Tbsp worcestershire sauce
3 bay leaves

Steps:

  • 1. Heat 1 tablespoon of oil in a large saucepan over medium-high heat. Cook the onion, carrots, and celery for 8 to 10 minutes, until just beginning to color. Add the garlic, thyme, and rosemary, and cook for a further couple of minutes. Remove from the pan and place in the bottom of a slow cooker.
  • 2. Season the flour generously with salt and pepper. Coat the short ribs well in the flour. Heat the remaining oil in the pan and brown the short ribs in 2 batches until golden, adding any remaining flour with the second batch of ribs. Remove the ribs from the pan and place on top of the vegetables in the slow cooker.
