Southern Smothered Oxtails image

These oxtails are slow-cooked until they are fall-off-the-bone tender, then smothered in a homemade onion and garlic gravy. You can't beat this flavor!

Number Of Ingredients 10

2 1/2 pounds beef oxtails
1 1/4 cups all purpose flour
2 tbsp worcestershire sauce
2 tsp kosher salt
1 tsp freshly cracked or ground black pepper
3/4 cup vegetable oil
3 cups beef broth OR water
1 large yellow onion (sliced)
3 cloves of fresh garlic (minced)
* more salt & pepper for taste

Steps:

  • Season the oxtails with 2 tsp kosher salt, and 1 tsp black pepper.
  • Drizzle the worcestershire sauce all over the oxtails, then toss the oxtails to make sure that they are coated.
  • Next, sprinkle 1/4 cup of flour all over the oxtails, and make sure that the oxtails are coated with the flour.
  • Next pour the vegetable oil into a large pan, and place the pan over medium heat.
  • Once the oil is nice and hot, add the oxtails in, and brown them.
  • Once the oxtails are nice and brown remove them from the pan, and put them in the slow cooker.
  • Return back to the pan with the hot oil.
  • If they are burnt pieces in the pan, pour out the oil, strain, clean the pan, then pour the strained oil back into the pan.
  • Start adding the remaining flour into the pan, but only a little bit at a time.
  • Whisk continuously.
  • Once the flour is brown, and resembles " chunky peanut butter", slowly pour in the beef broth or water.
  • Whisk while you pour!
  • Make sure everything is lump free, then turn the heat from medium to high.
  • Once the gravy reaches a full boil, reduce the heat to medium, and add in the sliced onions, and garlic.
  • Stir the gravy, and do a taste test.
  • Add as much salt & pepper that you think you may need.
  • Turn the heat off, and pour the gravy into the slow cooker covering the oxtails.
  • Make sure that the oxtails are nicely covered with gravy, then set the slow cooker on high.
  • Let cook for 8 hours.
  • Once done serve with mashed potatoes, rice, or whatever you'd like.
  • Enjoy!

1 tablespoon vegetable oil
3 pounds beef oxtail, cut into pieces
1 ½ pounds russet potatoes, peeled and cut into chunks
4 carrots, peeled and cut into large chunks
3 stalks celery, cut into large chunks
1 onion, chopped
1 (15 ounce) can tomato sauce
1 cup beef broth
½ cup dry red wine
2 tablespoons chopped fresh parsley
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
½ teaspoon smoked paprika
1 (8 ounce) package sliced mushrooms
1 cup frozen peas
1 pinch salt and freshly ground black pepper to taste

Steps:

  • Heat oil in a large skillet over medium-high heat. Cook oxtail for 4 minutes. Flip and continue cooking until browned on all sides, about 4 minutes. Transfer oxtail to a slow cooker.
  • Add potatoes, carrots, celery, onion, tomato sauce, beef broth, red wine, parsley, Worcestershire sauce, thyme, and paprika.
  • Cook on Low for 7 hours. Add mushrooms and peas. Cook for 1 additional hour.
  • Ladle into bowls and season with salt and pepper.

SLOW BRAISED OXTAIL



Slow Braised Oxtail image

3 whole oxtail
1/2 pound caul fat (optional)
1/2 pound mirepoix (carrots, onions, celery, leeks) small dice
1 cup red wine
6 cups oxtail stock or veal stock
Salt
Black peppercorns

Steps:

  • Remove all excess fat from the oxtail then debone leaving all the meat intact (bones can be used for stock.) Roll the oxtail back up with caul fat (optional) and tie with butchers twine about 1 inch apart. In a very hot roasting pan sear off the oxtail on all sides then remove. In the same pan roast off the mirepoix then add the red wine, reduce, and add the stock, bring to a simmer. Add the oxtail back in and cover with foil and place into a preheated 325-degree oven and braise for approximately 2 hours. When oxtail is tender remove pan from the oven and remove the oxtail and cool. Strain the braising liquid and reduce to a sauce consistency, check seasoning. Slice the oxtail into 2-inch logs, reheat in the sauce. Remove the butcher's twine, slice and serve.

CROCKPOT BRAISED OXTAILS

1/4 cup olive oil
5 lbs oxtails
6 large carrots, thinly sliced
4 medium onions, chopped
4 teaspoons sweet paprika
1 1/2 teaspoons salt
1 teaspoon saffron, crumbled
1/4 teaspoon black pepper
1/4 cup water

Steps:

  • Heat oil in a large skillet. Brown oxtails on all sides. Remove oxtails to a plate and add carrots and onions to the skillet; cook 10 minutes until soft. Add paprika, salt, saffron and pepper; stir well.
  • Place 1/4 of vegetables in a 4-quart crockpot. Add oxtails in a single layer. Repeat layers and continue until vegetables and oxtails are all used up. Add any juices left in the plate plus the 1/4 cup water.
  • Cover and cook on LO heat for 8-9 hours.
