This is another one of those recipes that gets started on Facebook and becomes a family favorite. Feel free to experiment with types or amounts of cheese and other goodies like adding black olives, etc. :)

1/4 lb bacon, cooked but tender and then diced
2 medium onions, thinly sliced
4 medium potatoes, sliced medium
1 bag(s) shredded cheddar cheese
1 stalk(s) green onion, sliced in rounds
butter, to dot
1/4 tsp garlic powder
1/4 tsp onion powder
salt and pepper

Steps:

  • 1. Line crockpot with foil, then layer half each of the bacon, onions and potatoes in the crockpot.
  • 2. Season potato mixture with 1/2 of garlic and onion powders, then season to taste with salt and pepper and dot with 1/2 the butter.
  • 3. Repeat vegetable layer and seasonings - then dot with remaining butter.
  • 4. Cover with foil and cook on low for 4 1/2 hrs.
  • 5. Top with cheese, re-cover with foil and cook for an additional 20 mins .

1/4 pound bacon, cooked, diced
2 medium onions, thinly sliced
4 medium potatoes, thinly sliced (Cut in half if using New or Yukon Gold Potatoes)
1/2 pound cheddar cheese, thinly sliced or shredded
Salt and pepper
Butter

Steps:

  • Line crockpot with foil, leaving enough to cover the potatoes when finished. This will prevent sticking and help steam the potatoes. slo Layer half each of the bacon, onions and potatoes in the crockpot. Season to taste with salt and pepper and dot with butter. Repeat layers of bacon, onions, potatoes. Dot with butter. Cover with remaining foil. Cover and cook on Low for up to 6 hours. Check at 4 hours; crockpots vary. Add cheese for the last 20 to 30 minutes and enjoy!
