HALLOUMI CHEESE FINGERS
Fry or grill this Cypriot-style cheese and serve with a Greek salad and crusty bread for a complete meal.

Steps:
- Heat the olive oil in a skillet over medium heat. Add the halloumi sticks, and cook until the cheese turns light, golden-brown, 1 to 2 minutes. Sprinkle with lemon juice, oregano, and pepper to serve.

Steps:
- Place bread on 2 baking sheets. Broil 3-4 inches from heat about 1 1/2 minutes, until bread begins to brown. Remove bread and reduce temperature to 375°. Place cheese in a 8-cup glass measure. Microwave on HIGH about 1 minute (or more) to soften. Remove and vigorously stir in egg yolks and beer until mixture is fairly smooth. Spread a layer on each slice of bread, covering bread completely. Bake 8 minutes, or until cheese topping begins to puff. If desired, run under broiler 1 minute to brown top. Cut each slice into 3 fingers. Serve immediately.
