Slow-Cooker Turkey Thighs with Herb Gravy image

Those who love tender, moist dark meat will love these slow-cooker turkey thighs. If turkey thighs aren't available, ask your butcher to cut up a whole turkey and give you the bone-in thighs. Feel free to substitute an equal weight of chicken thighs for the turkey thighs, if desired. This pairs well with a simple side of steamed green beans.

1 tablespoon olive oil
4 bone-in, skinless turkey thighs (about 3 pounds)
¾ teaspoon coarsely ground black pepper
1 teaspoon kosher salt
¼ cup finely chopped shallots (from 1 large shallot)
2 tablespoons sliced garlic (from 6 cloves)
2 tablespoons chopped fresh thyme
1 ½ cups unsalted chicken stock
2 tablespoons all-purpose flour
1 tablespoon unsalted butter, softened
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Heat the oil in a large nonstick skillet over medium-high. Sprinkle the turkey with the pepper and 3/4 teaspoon of the salt. Cook the turkey in the skillet in batches, turning once, until well browned, about 4 minutes per side. Transfer the turkey to a 5- to 6-quart slow cooker. (Do not wipe the skillet clean.)
  • Add the shallots, garlic, and 1 tablespoon of the thyme to the skillet; cook over medium-high, stirring constantly, 30 seconds. Add the stock to the skillet; bring to a boil, stirring and scraping to loosen the browned bits from the bottom of the skillet. Transfer the stock mixture to the slow cooker. Cover and cook on LOW until the turkey is very tender and falling off the bones, about 4 hours and 30 minutes. Transfer the turkey from the slow cooker to a cutting board, and remove the meat from the bones, discarding the bones. Place the turkey on a serving platter, and cover with aluminum foil to keep warm.
  • Pour the cooking liquid from the slow cooker through a wire-mesh strainer into a 2-quart saucepan, discarding the solids. Stir together the flour and butter in a small bowl to form a smooth paste; gradually whisk the flour mixture into the cooking liquid in the saucepan. Bring to a boil over medium-high, whisking constantly; boil, whisking occasionally, until thickened, 3 to 4 minutes. Remove from the heat, and whisk in the parsley and remaining 1 tablespoon thyme and 1/4 teaspoon salt. Serve the turkey with the gravy.

This healthy Turkey Meatball Stroganoff is a dish the whole family will love, which can be made in the Instant Pot, Slow Cooker or on the stove!

1 teaspoon olive oil (divided)
1/2 cup chopped onion
1 pound 93% ground turkey
1/3 cup whole wheat seasoned breadcrumbs
1 large egg (beaten)
1/4 cup chopped parsley (divided)
3 tbsp fat free milk
3/4 tsp kosher salt
black pepper (to taste)
3/4 cups water
1/2 cup light sour cream
2 tbsp all purpose flour
2 teaspoons tomato paste
2 teaspoons beef Bouillon (I like Better Than Bouillon)
1/2 teaspoon Worcestershire sauce
1/2 teaspoon paprika
8 ounces sliced Cremini mushrooms
1 sprig fresh thyme

Steps:

  • Heat a large nonstick skillet or set the Instant Pot to saute and spray with oil; saute the onions over medium heat until golden, stirring 2 to 3 minutes. Remove and divide in two.
  • In a large bowl, combine half of the sautéed onions with the ground turkey, bread crumbs, egg, 2 tbsp of the parsley, milk, 3/4 tsp salt and black pepper. Gently shape into 20 meatballs.
  • In a blender combine the water, sour cream, flour, tomato paste, boullion, Worcestershire sauce and paprika, blend until smooth.
  • Heat the skillet or Instant Pot back on saute, add the oil and brown half of the meatballs without disturbing (in two batches) about 2 minutes until no longer sticks, turn and brown an additional 2 minutes, set aside on a dish and repeat with remaining meatballs.
  • Place all the meatballs and remaining onion into the Instant pot, Slow Cooker or a large saucepan and pour the sauce over the meatballs along with the thyme and mushrooms.
  • For the Instant Pot:Cook on high pressure 10 minutes. Let the pressure release on it's own. When done, discard thyme, add the chopped parsley and serve over your favorite noodles. *see note above about avoiding burn notice.
  • For the stove top:Add 2 tbsp water, bring to a boil then cook covered on low 20 to 25 minutes. When done, discard thyme, add the chopped parsley and serve over your favorite noodles.
  • For slow cooker:Cook on low 6 to 8 hours. When done, discard thyme, add the chopped parsley and serve over your favorite noodles.

4 turkey thighs (about 4 pounds)
1 large onion, halved and thinly sliced
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1/3 cup water
3 garlic cloves, minced
2 teaspoons dried tarragon

1/2 teaspoon pepper
1/2 cup sour cream
Hot cooked egg noodles

Steps:
