CROCK POT ROTISSERIE STYLE CHICKEN
This is adapted from "Make it Fast, Cook it Slow" by Stephanie O'Dea. There are similar recipes here but not one quite like this that I've found. While not a TRUE rotisserie chicken, it is much cheaper, and much more accessible since the closest grocery rotisserie chicken I can get is an hour away. You can put this on a "rack" of foil balls in your crock if you'd like to keep the chicken up out of the grease. Also, I save the drippings, bones, and skin, then toss them back in the crock with a couple of cut up carrots, some celery, onion, and garlic and cover with water, cook for a few more hours on low, strain, chill, skim fat, and freeze for homemade rotisserie chicken stock - yum!

Steps:
- Spray the inside of a 5 quart or larger crockpot with nonstick spray.
- Combine all dry ingredients. The cayenne and black pepper are optional, I leave them out because I have small toddlers who don't care for "hot" food.
- Rub the dry ingredients all over the chicken, inside and out, and place in crockpot, breast side down.
- If desired, place onion and garlic inside chicken cavity (I don't use these).
- DO NOT ADD ANY WATER.
- Cook 4-5 hours on high, or 8 hours on low.
- The chicken should be so tender it will fall off the bone. If appearance matters to you, just shove the pieces back together on your platter.

EASY CROCK POT ROTISSERIE CHICKEN
Borrowed from "susan". The prep time and such are estimates. You can cook it longer than the directions specify, but it will likely fall apart as you're trying to take it out of the crock pot.

Steps:
- Crumple up 4-5 foil pieces into balls, or wrap potatoes in foil and place at bottom of crock pot. This will keep the chicken from sitting in it's juices and will make it roast not boil. Plus, if you do it w/ potatoes, you just have to throw together a salad and you're done.
- Rinse chicken and pat dry w/ paper towels. Sprinkle all over generously w/ seasoned salt.
- Place on top of foil balls in crock pot or on the foil covered potatoes.
- Cover and cook on HIGH (very important), for 6 hours or until chicken is done.
CROCK POT ROTISSERIE CHICKEN
The taste of roasted or rotisserie chicken, but so easy in the crock pot! My mother in law made this for a family gathering once. I didn't know you could do it like this! UPDATED description: I made this again tonight, and forgot how moist it is! Because there's nowhere for the juices to go, it does wind up being a little "soupy" - it's not a crispy rotisserie chicken in that regard. The chicken just falls off the bones and has such great flavor! (in fact, in the photo I posted, I had to push all the chicken pieces back together to make it look like a whole chicken!)

Steps:
- Wash and pat dry whole chicken (best if you don't remove the skin).
- Rub with olive oil, garlic and seasonings (measurements are approximate, season to taste!). Try to put seasonings under the skin where possible too.
- Spray the inside of the crock pot with vegetable spray (Do not add ANY water or liquid).
- Place whole chicken, breast side up in crock pot.
- Cover and let cook on high for 3-5 hours, or until legs fall off easily.

ROTISSERIE STYLE CHICKEN IN THE CROCK POT
Tender, moist and easily cut off the bone chicken. My family loved this chicken. The spices are very flavorful. When I made this I cut my onion into 4 quarters. I recommend wearing gloves when rubbing the chicken and when putting the chicken in the crockpot as your hand do get messy. I also cooked my chicken for 4 hours and high and it was perfect. - In a small bowl, combine all ingredients except chicken and onion.
- Rub herb mixture inside and outside of chicken.
- Place in food storage bag; seal bag.
- Refrigerate overnight.
- Remove chicken from bag; stuff with onion.
