Herb Roasted Chicken With Vegetables and Wine (Crock Pot) image

Here's one of our favorite chicken dishes in the crockpot (with optional gravy). The chicken turns out so juicy and tender, not dried out at all. Very good over mashed potatoes, noodles or dumplings and you can add a side of stuffing as well (see my stuffing recipe #117776). I hope you enjoy!

3 -4 lbs organic whole roasting chickens or 3 -4 lbs hen
2 teaspoons salt
1/2 teaspoon coarse black pepper
1/2 cup fresh snipped parsley
1 teaspoon thyme or 1 teaspoon herbes de provence, crushed
5 -6 carrots, thinly sliced
1 medium onion, thinly sliced
3 celery ribs, with leaves sliced
1/2 cup dry white wine (or chicken stock or water)
4 tablespoons butter

Steps:

  • Put carrots, onions, and celery in bottom of crock pot.
  • Thoroughly wash chicken and pat dry. Sprinkle cavity with salt, pepper and parsley. Place in crock pot, dot chicken breast with butter.
  • Sprinkle with parsley and tarragon or thyme, add wine.
  • Cover and cook on Low 8 to 10 hours (High: 3 1/2 to 5 hours).
  • With a slotted spoon, remove chicken and vegetables to a platter, keep warm.
  • To make gravy (optional): To remaining pan juices stir in a tablespoon of cornstarch -OR- 3 tablespoons of flour. Heat through on HIGH in crock pot, -or- on medium heat in a separate sauce pan, stirring until gravy is smooth and thickened, about 5-10 minutes. Stir in a tablespoon or two of milk or cream, if desired.

1 (4 lb) roasting chickens
8 sprigs fresh rosemary
4 -6 garlic cloves, halved

Steps:

  • Clean and dry the chicken.
  • Starting at the neck cavity, carefully loosen skin from the breast with you fingers.
  • Insert 2-3 garlic pieces and 2 springs of rosemary under the breast skin at the edge of the wings.
  • Continue pulling skin and insert 2 rosemary sprigs and 2 garlic pieces under drumstick skin.
  • Make a small slit in skin on each wing.
  • Insert a garlic piece and a rosemary sprig into each.
  • Insert 2 garlic pieces and 2 rosemary sprigs in body cavity, then tie the legs together Place the chicken, breast down in a large slow cooker.
  • Cover and cook on low 6-7 hours or until juices are clear when thick part of chicken is pierced with a knife. Remove chicken from slow cooker and discard garlic and rosemary.
  • Cut chicken and serve.

5 lb whole chicken
salt and pepper
5 clove garlic ; mashed smooth
paprika
1/4 lb butter
1/2 c canned chicken broth

Steps:

  • 1. Wash the chicken with cold water.
  • 2. Pat dry with a paper towel.
  • 3. Cut off any of the excess fat on the chicken and discard.
  • 4. Peel and Chop the garlic up.
  • 5. You can use a garlic press if you have one , if not just chop up fine.
  • 6. Using a knife press the garlic into a paste , adding a little salt to the garlic helps it turn into a paste quicker.
  • 7. Spread half the garlic in side the cavity and rub the other half all over the out side of the chicken.
  • 8. Sprinkle the chicken inside and out with paprika , salt & pepper.
  • 9. Place the chicken in the crock pot and place a few pats of the butter on the breasts of the chicken ; Pour the broth around the chicken and add the remaining butter around in the broth.
  • 10. Cover and Cook on LOW setting for 6-8 hours ; depending on the hotness of your crockpot. ( DO NOT RAISE LID DURING COOKING TIME.)
  • 11. Serve the HOT garlic butter sauce over the chicken.

1 - 4 lb chicken
1 tsp paprika
1/2 tsp dried thyme leaves
1/2 tsp dried basil
1/2 tsp beau monde seasoning
1/2 tsp season salt
1/2 tsp garlic powder
1/2 tsp freshly ground pepper
1 Tbsp olive oil

Steps:

  • 1. Remove the giblets from the chicken. Remove as much skin as possible. Rinse and drain the chicken; pat dry inside and out with paper towels. Mix all the seasonings with the olive oil to make a paste. Spread a little of the seasoning paste inside the cavity. Place the chicken, breast side up, in the crock pot. Spread the remaining seasoning over the top of the chicken.
  • 2. Cover and cook on the high heat setting 3 to 3 1/2 hours (6 1/2 to 7 1/2 on low), or until the chicken is cooked through and the juices run clear.
  • 3. Cut into pieces and serve immediately. Or cool slightly, remove from bones, and use in casseroles, soups, salads. Reserve the juices in the bottom of the pot, then use in making soups or sauces.

4 cups potatoes (bite size) (optional)
2 minced garlic cloves

1/2 teaspoon poultry seasoning
1 bay leaf
3 (12 ounce) cans reduced-sodium chicken broth
4 cups shredded chicken (or more , I use up my leftovers from a roaster)
2 cups uncooked yolk-free wide egg noodles
1 cup fat-free evaporated milk

Steps:

  • I roast a chicken in a cup of white wine and use the leftover chicken for my soup.
  • See my Chicken in a Pot Recipe for the Crock pot.
  • The wine gives the broth a nice kick.
  • Pour broth and leftover chicken into a bowl and refrigerate.
  • Skim off the fat.
  • Place chicken cut up chicken and broth in crock pot.
  • Pour in three cans of chicken broth and break up gelled chicken and broth.
  • Add all ingredients to slow cooker except noodles and evaporated milk.
  • Cook on High for 4 hours or Low for 6 to 8 hours.
  • Cook noodles on top of stove according to package directions.
  • While noodles are cooking, pour in evaporated milk and blend into soup.
  • Turn crock pot to High to heat milk.
  • Stir in noodles to soup before serving.
  • Enjoy!

1 packet Zesty Italian dressing seasoning mix
1 jar of quartered artichoke hearts in water (drained)
1 jar of roasted red peppers and garlic (or add 4 fresh garlic cloves separate from the peppers, drained)
1/2 cup white wine such as Pinot Grigio
1 tablespoon of capers

Steps:

3 large boneless, skinless chicken breasts
1/2 stick butter
salt to taste
paul prudhomme's poultry magic to taste

Steps:

  • 1. Wash chicken breasts and place into a crock pot. Sprinkle with salt and Paul Prudhomme's Poultry Magic. Put a large pat of butter on each breast.
  • 2. Cook on high for about one hour. Reduce heat to low and cook for 3 to 4 hours or until chicken is tender and tests done. Lower heat to warm setting until ready to make gravy and serve.
  • 3. Remove chicken from crock pot and place on a serving platter. Pour broth into a saucepan and thicken to make gravy and serve over rice or mashed potatoes.
  • 4. Gravy (how I make mine): I pour my broth through a strainer into a medium saucepan. Add about 1/2 cup of milk to the broth. Mix about two to three tablespoons of flour with enough water to make a pourable paste, set aside. Bring broth/milk to a boil and pour in flour and water mixture, stirring constantly until thickened.

2 parsnips, chopped roughly
3 tablespoons herbes de provence

6 lb whole baking chicken
2 clove whole garlic, peeled
1 small onions, quartered
2 Tbsp butter, melted
1/4 tsp rosemary, dried or fresh sprigs
1 tsp oregano, dried or fresh chopped
1 tsp basil, fresh chopped or dried
2 tsp parsley, italian
1/2 tsp thyme, dried
2 bay leaves, dried
1 tsp kosher salt
fresh ground pepper to taste
1-12 oz bottle of blue moon beer (or your favorife beer) we prefer blue moon, the tangy taste mixes well with the flavor of the chicken
1 small onion, sliced

Steps:

  • 1. Set 5 quart crock pot to Low temp. Remove neck, & innards from inside chicken. Rinse chicken well with cold water. Place quartered onion, 2 whole garlic cloves, & bay leaves inside chicken & set inside crock pot, timer up. This allows the garlic, onion and bay leaves to infuse from the inside & throughout the meat.
  • 2. Melt butter. Drizzle over chicken & rub into skin with fingers. I call it massaging the meat (a lil kitchen humor). In a small bowl, add rosemary, parsley, oregano, basil, thyme, salt, & pepper. Mix together. I use fresh when available, but dried is just as good! You can adjust seasonings to your taste. Sprinkle mixed seasonings over chicken. Chicken will be covered well.
  • 3. Pour beer around chicken, not over. Place sliced onion on top of and around chicken.
  • 4. Cook on low heat for 6-8 hours, or until timer indicates chicken is done. Cook times will vary depending on weight of chicken. Side note: I periodically "baste" the chicken if I'm home to do so.
  • 5. When chicken is done, it will be very tender, and fall apart when removing from crock pot, I use 2 large slotted spoons, one at each end of the chicken to gently remove from crock pot to keep chicken together. Don't fret if it falls apart..... allow to stand for 10 minutes to allow juices to soak in, cut & serve. Strain juices in crock pot and use to prepare gravy or your favorite home made chicken soup!

  • Stuffing: Melt butter or margarine in frying pan.
  • Add onion and celery.
  • Saute until soft.
  • Remove from heat.
  • Mix in salt, pepper, parsley, and poultry seasoning.
  • Add bread cubes.
  • Toss well.
  • Wrap mixture in foil, leaving an opening at the top.
  • Chicken: Brush chicken with gravy browner, this is a must.
  • Place in 5-quart slow cooker.
  • Place foil pouch over chicken legs.
  • Cover slow cooker.
  • Cook on LOW for 8-9 hours or on HIGH for 4-4 1/2 hours.
  • Make gravy with juice from chicken if desired.
  • Stir stuffing before serving.
