1 bag (30-ounces) of frozen diced hash browns I used Ore Ida
1 box of chicken broth (32-ounces)
1 can of cream of chicken soup (10-ounces)
1 package cream cheese (8-ounces, not fat-free)
3 ounces of bacon bits
1 cup shredded cheddar cheese
salt and pepper to taste

Steps:

  • Put the Ore Ida hash brown potatoes in the crockpot. Add in the chicken broth, cream of chicken soup and half of the bacon bits. Add a pinch of salt and pepper. Cook on low for 8 hours or until hash browns potatoes are tender. An hour before serving, cut the cream cheese into small cubes. Place the cubes in the crock pot. Mix a few times throughout the hour before serving. Once the cream cheese is completely mixed in, it's ready to serve. Top with cheddar cheese and some additional bacon bits.

2 lbs frozen hash brown potatoes
1 1/2 teaspoons salt
3/4 teaspoon pepper
3 cups milk
3 cups shredded cheddar cheese (Monterey Jack tastes great too)

Steps:

  • Put chicken broth, potatoes, salt and pepper in crock pot.
  • Cook on high for 4 hours or until potatoes are soft.
  • Mash the potatoes to desired consistency.
  • Add milk and cheese and blend.
  • Cook on high until cheese melts.

I threw this soup together one evening after work. I wanted something I could take to work for my lunch without a lot of fuss. It turned out wonderful. Everyone at work was asking why I didn't bring in the whole pot. LOL! Enjoy!

2 1/2 lb potatoes, peeled and cubed . 1/2 inch
2 carrots. sliced thin - i use my mandolin
2 medium onion, diced
2 celery stalks, sliced thin
1 1/2 tsp basil
1 1/4 tsp salt
1/2 tsp pepper
30 oz chicken broth
1/3 c flour
1 1/2 c half n half
3/4 package real bacon bits or crumbled crisp bacon - could also add cubed, cooked ham

Steps:

  • 1. Combine the first 8 ingredients in a 4 - 5 quart crock pot. Stir and cook on high for 3 - 3 1/2 hours or until vegetables are tender.
  • 2. In a container with a lid, shake together the half and half and flour. Stir this mixture and bacon into the soup and cook another 30 - 45 minutes. Taste and adjust seasonings according to taste.
  • 3. Serve with favorite condiments, such as sliced green onions and sour cream.

My husband and I absolutely LOVE Chili's baked potato soup! I was searching online for their recipe and found it but of course it wasn't the same. This recipe surfaced on FB and I tried it. I have to tell you this recipe is EASY and is BETTER than Chili's! No Joke! Absolutely scrumptious!

1 30 oz. bag of frozen pepper & onion hash browns
1 32 oz. box of chicken broth
1 can cream of chicken soup (10 oz)
1 pkg. cream cheese (8 oz. not fat free)
1/2 package of bacon
1 1/2 cup kraft sharp shredded cheddar cheese
salt and pepper to taste
4 chopped green onions for topping

Steps:

  • 1. Cook bacon till crisp.
  • 2. Put the potatoes in the crockpot. Add chicken broth, cream of chicken soup, 1 cup sharp cheddar cheese and half of the bacon. Add some salt & pepper.
  • 3. Cook on low for 8 hrs. or until potatoes are tender.
  • 4. An hour before serving, cut cream cheese into cubes and put in crock pot. Mix a few times within that hour.
  • 5. Once the cream cheese is completely mixed it, its ready to serve. Top with cheddar cheese, chopped green onions, crumpled crisp bacon.

Well, this is a no brainer! I am probably the only one that had never seen this recipe until recently. Saw on FB and knew I had to adjust to our tastes and try it. It is a definite keeper! Added ham and cheddar cheese to increase protein and make it a meal. Used O'Brien instead of regular hash browns to add the onion and peppers. Used lower sodium products to cut back on sodium content. I doubled the recipe for leftovers. A creamy, cheesy potato soup that uses your slow cooker to do all the work. Delicious and satisfying. A definite comfort soup for a cold winter evening.

48 ounce(s) (6 cups) low sodium chicken broth
2 can(s) 10 ounce cans of lower sodium cream of chicken soup
1 cup(s) diced, cooked ham (optional)
1 package(s) 8 ounce regular cream cheese, softened to room temperature *do not use fat free- will not melt well
1-2 pinch(es) black pepper
3 ounce(s) real bacon bits or cooked, chopped bacon
3 cup(s) cheddar cheese, shredded

Steps:

  • Line crock pot or slow cooker with disposable liner for easy clean up later. Put frozen potatoes in crock pot or slow cooker.
  • Add chicken broth, cream of chicken soup, and ham (if using ham).
  • Add a pinch of pepper. Salt to taste only if you like a lot of salt.
  • Cook on low 4-6 hours or until potatoes are tender. Add cream cheese after cutting cream cheese into very small cubes.
  • Cook 30 minutes, stirring frequently, until cream cheese is melted and completely incorporated. AGAIN: DO NOT USE FAT FREE. WILL NOT MELT!
  • Stir in 2 cups of the shredded cheddar cheese. Stir until melted. Soup is now ready to serve.
  • Top with bacon bits and additional cheddar cheese if desired. ENJOY that creamy, cheesy potato goodness!

1 pkg 1 30 oz bag of frozen o'brien cut potatoes (or can use frozen shredded hash browns)
3 can(s) 14 oz cans chicken broth
1 can(s) cream of chicken soup
1/2 c chopped onion
1/4 tsp ground pepper seasoning
1 pkg cream cheese (do not use fat free - it won't melt!!)

Steps:

  • 1. Combine all the ingredients in the crock pot EXCEPT the cream cheese. Cook 6-8 hours on low heat.
  • 2. About 1 hour before serving, add the cream cheese and keep heated until thoroughly melted.
  • 3. Serve with cheddar cheese, bacon bits, sour cream dollops, whatever sounds good on top!!
