This is a chowder that uses ingredients that I almost always have on hand, so it is quick and easy to throw together before work, and come home to on a nice fall evening. Relatively easy to double as well for extra large families or get togethers.

1 (16 ounce) bag frozen hash brown potatoes, thawed
1 (15 1/4 ounce) can whole kernel corn, undrained
1 (14 3/4 ounce) can cream-style corn
1 (12 ounce) can evaporated milk
1 medium onion, chopped
8 slices bacon, cooked and crumbled
1/2 teaspoon salt
1/2 teaspoon Worcestershire sauce
1/4 teaspoon pepper

Steps:

  • Mix all ingredients together in crock pot and cook for 6-8 hours on low.
  • Serving Suggestion: Top bowls of chowder with a little extra crumbled bacon and a little shredded cheese. Yum!

1 skinless chicken breast, chopped
1 (10 1/2 ounce) can cream of chicken soup or 1 (10 1/2 ounce) can cream chicken and corn soup
400 ml 1% low-fat milk (1 soup can full)
1 -2 teaspoon garlic powder
2 potatoes, peeled and diced

Steps:

  • Pour the soup mix, milk and garlic powder into the crock pot and whisk together.
  • Add the chopped chicken breast and diced potatoes and stir to mix.
  • Cook for 8 hours on low setting of crock pot or 4 hours on high.
  • Serve with bread.
  • As a variation you can stir in a can of creamed corn towards the end of cooking time.

8 cups diced potatoes
1/3 cup onion, chopped
3 (14 1/2 ounce) cans chicken broth
1 (10 3/4 ounce) can condensed cream of chicken soup
1 (8 ounce) package cream cheese, cubed, softened
1/2 lb bacon, cooked and crumbled
chives

Steps:

  • Combine potatoes, onion, broth, and cream of chicken soup in crock pot.
  • Cover and cook on low 8-10 hours or until potatoes are tender.
  • Add cream cheese and blend.
  • Top with bacon and chives before serving.

I don't remember where I got this recipe, but it is on of my favorites. As a working mom, I love to come home to a meal ready in the crock pot. Add a salad or some sandwiches on sourdough bread, and you've got a wonderful winter meal. Don't forget to take some to work for lunch tomorrow!

5 potatoes, peeled and cubed
2 onions, chopped
2 cups ham, diced
3 stalks celery, chopped
1 (15 1/4 ounce) can whole kernel corn, undrained
2 tablespoons butter (or margarine)
1/2 teaspoon salt (adjust to taste)
1/8 teaspoon pepper (adjust to taste)
2 chicken bouillon cubes
2 cups approx water (enough to cover, see step 1 below)
1 (12 ounce) can evaporated milk

Steps:

  • In slow cooker place the potatoes, onions, ham, celery, corn, butter or margarine and salt and pepper. Add water to cover and add two bouillon cubes.
  • Cook on low setting for 8 - 9 hours. Stir in the evaporated milk, and continue to cook for 30 more minutes.

4 chicken breasts, frozen
1 (15 ounce) can corn
1 (7 ounce) can creamed corn
1 (15 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
4 potatoes, quartered
2 cups milk
2 tablespoons chicken bouillon concentrate
1 tablespoon butter
1 tablespoon garlic powder
1 teaspoon black pepper

Steps:

  • Lay chicken breasts on bottom of crock pot.
  • Pour everything else over the top and stir (without moving the chicken).
  • Cook on low 8-10 hours or high 4-6 hours (I actually cooked it on medium for about 5 hours).
  • If you're home, stir once in a while, as the chicken and potatoes soften, to break them up a bit, though it will probably also work to do that when it's all done.

6 cups fresh corn (about 12 ears)
1 cup onion, chopped
10 ounces potatoes, diced
1/2 cup red bell pepper, chopped
1 cup fresh green beans, cut into 1 inch pieces
1 cup carrot, sliced
1 cup celery, chopped
1 chili pepper, chopped
1 (14 1/2 ounce) can vegetable broth
2 cups water
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1/2 teaspoon fresh ground black pepper
1 teaspoon dried basil
cayenne pepper, to taste

Steps:

  • Place everything in a 6 quart crock pot and mix together.
  • Cover and cook on low for 8-10 hours (you can't really cook this too long!).

rye bread, cut into pieces

Steps:

  • In a 3-4 qt crock pot, combine potatoes, onion, celery, carrot, garlic and pepper; stir gently to mix. Pour broth and beer over vegetable.
  • Cover and cook on low for 6-8 hours.
  • About 10 minutes before serving coarsely mash vegetables with potato masker or fork. Add cheese and whipping cream; stir until cheese is melted. Cover; cook an additional 5 minutes or until thoroughly heated. Top with croutons.
  • Rye Croutons:.
  • arrange a single layer of cubed rye bread on a cookie sheet. Toast them in a 350 oven for 15-20 minutes until the croutons are golden and dry.
