SLOW COOKER/CROCK POT CRANBERRY PORK LOIN ROAST

If you like lots of gravy then double the whole cranberry sauce and French dressing, for a a larger roast adjust cooing time --- this also may be made successfully cooked in the oven at low temperature.

1 (3 -3 1/2 lb) pork loin roast
5 tablespoons oil, divided (or use as much as needed)
0.5 (1 ounce) package dry onion soup mix
fresh ground black pepper
1 1/2 teaspoons garlic powder
8 garlic cloves (optional or use as many as desired, I use lots!)
1/3 cup French dressing
1 tablespoon cornstarch
1 (16 ounce) can whole berry cranberry sauce

Steps:

  • Using a strainer separate the dried onions from the dry powder; place the dry onions in a small bowl.
  • Heat about 3 tablespoons oil in a skillet over medium heat.
  • Rub the roast all over with 2 tablespoons oil, then season the pork loin with the onion soup powder, black pepper and garlic powder.
  • Brown the roast on all sides in hot oil then allow to cool slightly or enough for easy handling if stuffing with the garlic cloves (if your cloves are very large I suggest to slice in half).
  • Make small slits all over in the roast, then stuff with garlic cloves (this is only optional).
  • Place the roast in the slow cooker.
  • In a bowl whisk the French dressing with the cornstarch until smooth then add in the cranberry sauce and dried onions; mix until combined.
  • Pour the mixture over and around the pork.
  • Cover and cook on HIGH heat for 4 hours or on LOW for about 7-8 hours or until the pork reaches internal temperature of 160 degrees F.

6 large boneless top loin chops , thick cut
2 can(s) cream of mushroom soup
1 pkg dry onion soup mix
1 tsp garlic powder : optional

Steps:

  • 1. This is so good and you only need 2 main ingredients other than your pork chops.
  • 2. Place the chops in a hot skillet , season your chops with garlic powder if desired , I love the flavor of garlic.
  • 3. Brown both sides of chops just until nicely browned.
  • 4. Place your chops evenly in your crockpot.
  • 5. Mix up the soup mix with the cans of soup until all combined together.
  • 6. Pour creamed mixture over top of the chops.
  • 7. Make sure all the chops are covered evenly with the mixture , I even place some in between the chops if they are resting on each other.
  • 8. Cover and cook on low heat setting for 7 hrs. You could cook it up to 8 hrs if need be.
  • 9. Serve with mashed potatoes and use the mushroom sauce as the gravy for the potatoes.

1 large yellow onion (sliced into 3 very thick slices)
1 (14 ounce) can sauerkraut
1/2 cup chicken broth
2/3 cup Saucy Susan peach apricot sauce
3 tablespoons olive oil
salt & pepper
3 -4 garlic cloves

Steps:

  • Coat bottom of crock pot with olive oil then add the 3 thick slices of onion.
  • Place roast on top of the onion slices (onion makes a little shelf for roast so it does not stick to bottom of crock). Season pork as desired, insert garlic cloves randomly into meat then coat entire roast with "Saucy Susan" (if you absolutely cannot find "Saucy Susan", substitute with equal parts peach & apricot jelly).
  • Add the can of sauerkraut (undrained) and the broth to crock trying not to wash seasonings & sauce off of roast while adding.

Steps:

  • - For this recipe I used a 6-qt crock pot that comes equipped with a meat thermometer that plugs into the unit and provides continuous monitoring of the meat temperature. (See "BACKGROUND" below for further explanation.) I also used a metal oval cooking rack that fits perfectly into the crock pot which raises the roast up and keeps it from sitting in the liquid at the bottom of the pot. To simplify cleaning I also used a disposable slow cooker liner.
  • - BACKGROUND: We have been using crock pots to cook beef and pork roasts for more than 40 years. We would always follow the recommended cooking times of 8 to 12 hours on LOW heat. (I believe the instructions for today's newer crock pots have lowered the recommended cooking time down to about 6 to 10 hours.) But the roast always turned out tough and dried out regardless of how much spice, sauces, and liquids were added or not added to the meat. We now know this long duration cooking just removed all the meat's nutrients and natural flavors. This is why they all came out tasting about the same with that proverbial "crock pot flavor/aftertaste". So we invested in a crock pot that has an attached meat thermometer which continuously monitors the meat temperature then shuts the cooker off when the correct temperature is reached. This way you are not always removing the lid to use a hand-held meat thermometer which also adds to the cooking time due to the loss of heat, or so says the owner's manual. Now back to the cooking instructions.
  • - Place the roast on the cooking rack and pour the 13 ounces (1 1/3 cups) of pre-packaged slow-cooker sauce of your choice over the meat. In this recipe I used a 2.5 pound boneless pork loin center cut.
  • - Place the lid on the crock pot and insert the attached meat thermometer through the access hole in the lid into the thickest part of the roast and turn the heat onto LOW.
  • - This particular crock pot took 2 hours and 45 minutes to raise the meat's internal temperature from 32 degrees to 140 degrees. Upon reaching 135 to 140 degrees immediately remove the roast and wrap it in aluminum foil and allow it to rest for 15 to 30 minutes. The meat will continue to cook and redistribute its nutrients and natural flavors. (If you use a hand-held meat thermometer when you first remove the roast from the slow cooker you will see the smaller end pieces are already past 145 degrees. Serve these sections to your guests who like their meat well done and dried out.).
  • - Now remove the metal cooking rack from the crock pot but leave it on LOW in order to keep the sauce at the bottom hot.
  • - Skim off any fat that may be floating on top of the sauce and then stir it up.
  • - Slice the roast to the thickness desired and spoon the sauce over the slices.
  • - Now ENJOY!

1 medium green pepper (sliced into thin strips)
1 medium onion (sliced thin)
1 (26 ounce) jar spaghetti sauce (I use Ragu extra chunky with mushrooms)
3 tablespoons red wine vinegar
1 tablespoon italian seasoning
2 teaspoons garlic powder
1 teaspoon thyme
1 teaspoon fennel seed
2 bay leaves

Steps:

  • Place peppers and onions in the bottom of crock pot.
  • Rub pork loin with salt, pepper, Italian Seasoning, garlic powder, Thyme and Fennel seed.
  • Place the pork loin on top of the peppers and onions in crock pot.

6 to 8 slice bacon, uncooked (more or less, depending on size of bacon slices)
salt and pepper to taste

Steps:

  • 1. Wash pork roast and pat dry. Add salt and pepper to taste. Wrap pork roast in uncooked bacon slices, securing underneath the roast. Cook in crockpot on low heat for about 5 to 6 hours or until bacon is cooked and roast is tender. Transfer to serving platter.
  • 2. Pour broth into a sauce pan and bring to a boil. Thicken using about 2 teaspoons of cornstarch mixed with enough milk to make a pourable paste. Add cornstarch mixture to broth a little at a time, whisking constantly. If mixture seems too thin, you may add a little more cornstarch. If too thick, pour in a little milk or water. Continue cooking and whisking until consistency is correct. You may also add salt and pepper to taste.

  • Peel potatoes and slice them into 1/4" rounds. Place them in the bottom of your crock pot.
  • Finely chop the remainder of the vegetables. In a large skillet, saute the vegetables in butter until tender.
  • Add the garlic; cook 1 minute longer. Stir in pepper sauce and all seasonings but the bay leaves.
  • Cut deep slits in roast and place in crock pot on top of the potatoes slit side up.
  • Spoon vegetable mixture into slits and over the top of the roast. Add bay leaves to the crock pot.
  • Cover and cook on low for 6-8 hours or until the pork is tender.
  • Transfer roast to a serving platter. Using a slotted spoon, remove potatoes and place them around the roast on the platter. Cover platter with foil to keep the roast and potatoes warm.
  • If bay leaves are still in the crock pot, remove them. Pour juices into a small saucepan. Combine cornstarch and water until smooth; stir into the pan.

1 medium onion, chopped
3/4 cup white wine

1/2 cup creme fraiche

  • Heat olive oil and margarine in a skillet over medium high heat.
  • Add the roast and brown on all sides. Remove roast from skillet.

2 teaspoons better than bouillon, Beef flavor
1 cup hot water
8 ounces fresh sliced mushrooms
1 rolled pork loin roast (about 4 - 5 lb)
1 ounce dry onion soup mix (1/2 pkg )

Steps:

  • Rub combined spices all over roast.
  • Place one can of the soup on bottom a crock pot, sprayed with Pam.
  • Set roast on top of soup.
  • If using dry onion soup, sprinkle over roast.
  • Cover roast with mushrooms.
  • Top with remaining can of soup.
  • Combine bullion concentrate with hot water.
  • Pour around sides of roast.
  • Cover & cook on low for 6 - 8 hours depending on your crockpot.
  • Remove roast and thicken liquid for gravy add additional pepper to taste.

1 (3 lb) whole boneless pork loin roast
1/2 cup all-purpose flour
1 teaspoon onion powder
1 teaspoon ground mustard
2 tablespoons canola oil
2 cups chicken broth
1/4 cup cornstarch
1/4 cup cold water

Steps:

  • Cut pork roast in half.
  • In a large resealable plastic bag, combine the flour, onion powder and mustard. Add pork, one piece at a time, and shake to coat.
  • In a large skillet, brown pork in oil over medium-high heat.
  • Transfer to crock pot.
  • Pour broth over pork.
  • Cover and cook on low for 5-6 hours or until tender.
  • Remove pork and keep warm.
  • For gravy, pour 2-1/2 cups cooking juices into a large saucepan. Combine cornstarch and water until smooth; stir into juices. Bring to a boil; cook and stir for 2 minutes or until thickened.

one boneless pork loin roast, trimmed and tied at 1 inch intervals, see note
salt and pepper
1 tablespoon vegetable oil
one can whole berry cranberry sauce, 14 ounces
1/2 cup dried cranberries
1/2 cup orange juice
three strips orange zest, trimmed of white pith, 3 inches long each
1/8 teaspoon ground cinnamon

Steps:

  • 1. dry pork with paper towels and season with salt and pepper. Heat oil in a large skillet over medium-high heat until just smoking. Brown pork well on all sides, 7 to 10 minutes.
  • 2. Stir cranberry sauce, cranberries, orange juice, orange zest, and cinnamon into slow cooker. Nestle browned pork into slow cooker. Cover and cook until pork is tender and registers 140 to 145° instant read thermometer, about four hours on low
  • 3. Transfer pork to cutting board, tent loosely with foil, and let rest for 10 minutes. Let liquid settle for five minutes, then remove fat from surface using large spoon. Discard orange zest. Transfer braising liquid to pan and simmer until reduced to 2 cups, about 12 minutes. Season with salt and pepper to taste. Remove twine from pork, slice into 1/2 inch thick slices and arrange on a serving platter. Spoon 1 cup sauce over meat and serve with remaining sauce.

1 c pineapple preserves
1 Tbsp fresh ginger, grated
1 tsp granulated garlic or 2 cloves fresh garlic, diced

  • 1. PLACE ALL INGREDIENTS EXCEPT PORK LOIN INTO A 1 GALLON HEAVY-DUTY PLASTIC BAG. CLOSE BAG AND MUSH AROUND TO MIX.
  • 2. ADD MEAT, COATING WELL WITH MARINADE. PLACE IN COLDEST AREA OF REFRIGERATOR FOR AT LEAST 24 HOURS.
  • 3. REMOVE MEAT FROM MARINADE. SEAL WELL IN A LARGE PIECE OF HEAVY-DUTY ALUMINUM FOIL. PLACE INTO LARGE CROCK POT. POUR 1/2 CUP WATER INTO BOTTOM OF CROCK POT. PLACE LID OVER TOP. SET CROCK POT TO HIGH AND ALLOW TO COOK FOR 4 HOURS. TURN DOWN CROCK POT TO LOW FOR AN ADDITIONAL HOUR.
  • 4. REMOVE FOIL PACKET FROM CROCK POT. ALLOW TO SIT FOR 20 TO 30 MINUTES BEFORE REMOVING FROM FOIL TO PLACE ONTO A CARVING BOARD. SLICE, ARRANGE ON SERVING PLATTER AND SERVE WARM.
