McCormick's seasoning salt
chili powder
garlic powder
onion powder
black pepper
2 (10 1/2 ounce) cans condensed golden mushroom soup
1 (10 1/2 ounce) can cream of mushroom soup
1 (14 ounce) can beef consomme
1 -2 lb fresh mushrooms (sliced or halved)

Steps:

  • Season pork roast liberally on all sides with seasoning salt, chili powder, garlic powder, and onion powder.
  • Allow the roast to sit for 15-30 minutes so that seasonings and meat get to know each other better.
  • Stir together 1 can of Golden Mushroom soup and cream of mushroom soup and pour into crock pot.
  • Place seasoned pork roast into crock pot atop soup mixture.
  • Pour second can of golden mushroom soup over pork roast.
  • Cover the pork roast with the sliced/halved mushrooms.
  • Pour can of beef consommé over mushrooms.
  • Season mushrooms to taste with salt and black pepper.
  • Cook on low setting for about 8 hours.
  • Remove roast from crock pot (it will be very tender).
  • Use the juices in the crock pot as gravy for the pork roast and mashed potatoes.
  • You can use it just as it is, which is what we do, or adjust it to however you like gravy (e.g. add flour or cornstarch, remove fat, etc).

Steps:

  • Grease the inside of the slow cooker.

1 (10 ounce) can cream of chicken soup (can use two cans if desired, or use cream of mushroom soup)
1/3 cup grated parmesan cheese
1 (10 ounce) can mushrooms, drained
1 small onion, finely chopped
2 teaspoons minced garlic (optional)
1 -2 cup swiss cheese, cubed into small pieces (can use Velveeta and Swiss together!)

Steps:

  • In a large skillet, cook the bacon until crisp; drain on paper towels then crumble (leave the bacon drippings in the pan).
  • Season the chicken breasts with salt and pepper the, brown in the bacon drippings for about 5 minutes on each side.
  • Place the breasts in a 4-6-quart slow cooker.
  • Sprinkle with mushrooms.
  • In the same skillet heat the soup and Parmesan cheese with onions and garlic for 5 minutes until bubbly, then pour over the chicken and mushrooms.
  • Cover and cook on LOW setting for about 4 hours.
  • After about 4 hours sprinkle with the cheese cubes and bacon.
  • Cover and cook on HIGH for about 20 minutes, or until the cheese is melted.

1/2 cup butter, melted
1 lb. whole fresh mushrooms
1 (1 oz.) packet hidden valley ranch dips mix (*see note)

Steps:

  • 1. Place half of the mushrooms in the crock-pot.
  • 2. Pour half of the melted butter over the mushrooms.
  • 3. Sprinkle half of the (dry) ranch dip mix over the mushrooms.
  • 4. Add remaining mushrooms to the crock-pot.
  • 5. Pour the remaining melted butter over the mushrooms.
  • 6. Sprinkle the remaining dip mix over the mushrooms.
  • 7. Place lid on crock-pot, and cook on low for 3 - 4 hours. (I just cook mine for 3 hours, as after three hours of cooking time, my kitchen as well as the mushrooms smell so good, that we can't wait to dig into 'em.)

1 large onion, sliced
2 garlic cloves, minced

8 boneless skinless chicken thighs
1/2 cup chicken stock or 1/2 cup broth

Normandy inspired chicken with easy, homemade crème fraîche. Simply amazing. Goes perfectly with a side of green beans; also wonderful with sugar snap peas, asparagus or spinach. Notes on crème fraîche: If you're concerned about the thickness of the finished sauce, mix up the crème fraîche a couple of hours ahead of starting the rest of the meal. Crème fraîche thickens as it stands and the thicker it is, the thicker the finished sauce will be; many recipe call for leaving it out around 12 hours, or even up to 24, to set up. It is the bacterial cultures in the sour cream acting on the heavy cream that cause it to thicken and sour slightly, but from what I've read, it's a beneficial bacteria and perfectly safe to eat even when left out for that long (at any rate, I've left it out for that long and my family ate it and was perfectly fine). If you're concerned about the fact that it's a bacteria at all, heating it after it's thickened will kill the bacteria; the taste will be the same, but it will break down slightly and make the texture a little grainy.

Now I have a cookbook from Alaska that will tell you how to cook just about anything but this is a recipe that someone might actually use! I serve this with white or brown rice or buttered egg noodles. It comes from "Not Your Mother's Slow Cooker Cookbook"

2 lbs venison stew meat, trimmed of fat, tenderized by pounding and cut into 1 1/2 inch chunks
salt and pepper
2 slices smoky bacon
2 tablespoons olive oil
1 large yellow onion, cut in half and sliced into half moons
2 carrots, chopped
1 garlic clove, minced
2 tablespoons all-purpose flour
2/3 cup dry red wine or 2/3 cup dry sherry
1 bay leaf
1/2 teaspoon dried thyme or 1 tablespoon chopped fresh thyme
1 (10 1/2 ounce) can beef broth
12 ounces fresh mushrooms (sliced or quartered)
2 tablespoons balsamic vinegar

Steps:

  • Season the venison with salt and pepper.
  • In a large skillet over medium-high heat, cook the bacon until crisp; transfer to paper towels and crumble.
  • Add the oil to the bacon drippings and brown the meat in batches on all sides, about 10 minutes total.
  • Transfer to the slow cooker as you finish each batch.
  • Add the onion, carrots and garlic to the skillet and cook. stirring, for 3 to 5 minutes.
  • Sprinkle with the flour, stir and transfer to the cooker.
  • Add the wine to the skillet, bring to a boil and cook, scraping up any browned bits stuck to the pan, until the wine has thickened slightly, 1 to 2 minutes.
  • Pour into cooker.
  • Add the bay leaf, thyme and broth; stir to evenly distribute.
  • Cover and cook on LOW for 5 to 6 hours.
  • Add the mushrooms and crumbled bacon and stir to combine.
  • Cover and continue to cook on LOW until the venison is tender enough to cut with a fork, another 3 hours.
  • Remove the bay leaf and stir in the vinegar.
  • Serve.

In a small household, you are always left with part of a package of something. This recipe was born from my desire to use up things in the fridge. I've done the same on the stove, but this really worked well in the crock pot.

2 lbs chicken thighs (bone-in)
8 ounces fresh mushrooms, sliced
1 large onion, chopped
3 garlic cloves, minced
16 ounces spaghetti sauce (1/2 of standard jar)
1 teaspoon dried herbs or 1 tablespoon fresh herb, minced
1/2 cup wine
olive oil
salt
pepper

Steps:

  • Pour the spaghetti sauce into a bowl. Add the herbs and mix.
  • Season chicken with salt and pepper. Heat a little olive oil in skillet and brown the chicken well; transfer to crock pot.
  • Pour all but about 2 tablespoons of accumulated fats from skillet, return to medium low heat. Add the onion and garlic, and cook until soft and just starting to turn color.
  • Put the onions, garlic and mushrooms over the chicken.
  • Return skillet to burner. Pour the wine into the skillet and scrape up all the fond (browned bits) from the skillet. Pour the wine into the spaghetti sauce and mix. Pour over the chicken.
  • Set to LOW and cook for 4 to 5 hours.
  • Serve with hot pasta.
  • Note1: Use whatever herbs you like - oregano, basil, thyme are all good, or use an Italian seasoning mix. I also sometimes add 1/4 teaspoons crushed red pepper for some heat.
  • Note2: Obviously, you can add different vegetables and herbs or spices, to suit your tastes and needs. Sweet bell peppers are a natural, I will also add fresh tomatoes or whatever needs using.
  • Note3: I try not to use added salt, but you may want an additional 1/2 teaspoons or so in the sauce. I find commercial sauces salty enough.
  • Note4: I like red wine, but any wine or dry vermouth will work. Or use chicken broth.

1 pkg dry onion soup mix
1 stick butter
1 beef bouillon, cube (dissolved in 1 cup water)
2 Tbsp corn starch (dissolved in cold water)
1 pkg egg noodles

Steps:

  • 1. Prepare vegetables and garlic; melt butter.

1 lb boneless skinless chicken breast, frozen
2 cups chicken broth
1 (10 ounce) can cream of chicken soup (or cream of chicken with herbs, or cream of mushroom)
8 ounces sliced mushrooms
1 1/2 cups wild rice, uncooked
salt and pepper

Steps:

  • In crock pot, combine chicken, broth, soup and mushrooms. Stir well, cover and cook on high 6-8 hours. 30 minutes before serving, add wild rice. Recover and cook on high 30 minutes or until rice is done. Serve with crusty bread and a nice green salad.
  • To make this recipe low fat, use 99% fat free broth and 99% fat free cream of chicken with herbs.

This is a hearty soup. Serve with crusty bread and a tossed salad for the perfect meal! Variation: Instead of finishing the soup with sour cream and dill, ladle into ovenproof bowls. Place a slice or two of a baguette in each bowl. Sprinkle liberally with shredded swiss cheese and broil for 2 to 3 minutes.

1 (14 g) package dried wild mushrooms, such as porcini
1 cup boiling water
1 tablespoon vegetable oil
8 ounces stewing beef, cut into 1/4-inch pieces
2 onions, finely chopped
2 stalks celery, peeled and thinly sliced
2 carrots, peeled and diced
2 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon cracked black peppercorns
1/2 teaspoon dried thyme leaves
1 bay leaf
1/2 cup pearl barley, rinsed
2 tablespoons tomato paste
6 cups beef broth
sour cream
fresh dill, finely chopped

Steps:

  • In a heatproof bowl, soak dried mushrooms in boiling water for 30 minutes, then strain through a fine sieve, reserving liquid. Chop mushrooms finely and set aside.
  • In a skillet, heat oil over medium heat. Add beef and cook, stirring, until lightly browned. Using a slotted spoon, transfer to slow cooker.
  • Add onions, celery and carrots to pan and cook, stirring until softened. Add garlic, salt, peppercorns, thyme and bay leaf and cook, stirring for 1 minute. Add barley and stir until coated. Stir in tomato paste, beef broth and reserved mushroom liquid and bring to a boil. Transfer to slow cooker.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours. Discard bay leaf. Ladle into bowls and garnish with sour cream and dill.
