2 cups uncooked elbow macaroni
1 (12 ounce) can reduced-fat evaporated milk
1 1/2 cups nonfat milk
1/3 cup egg substitute
1 tablespoon butter, melted
8 ounces Velveeta reduced fat cheese product, cubed
2 cups shredded sharp cheddar cheese, divided

Steps:

  • Cook macaroni according to package directions; drain and rinse in cold water. In a large bowl, combine the evaporated milk, milk, egg substitute and butter. Stir in the process cheese, 1-1/2 cups sharp cheddar cheese and macaroni.
  • Transfer to a 3-qt. slow cooker coated with nonstick cooking spray. Cover and cook on low for 2-3/4 to 3 hours or until center is set, stirring once. Sprinkle with remaining sharp cheddar cheese.

This is my kids favorite homemade version of mac and cheese. It does contain canned soup. If you're not a fan - don't try it! This freezes and reheats really well. I usually double this on a cooking day and it fills my 6 quart crock pot to the brim.

1 lb macaroni noodles
10 ounces condensed cheddar cheese soup
8 ounces sharp cheddar cheese, shredded
8 ounces extra-sharp cheddar cheese, shredded
12 ounces evaporated milk
1 cup milk

Steps:

  • Cook macaroni noodles according to package directions. Drain. ( I usually slightly undercook them - until barely al dente).
  • While noodles are cooking, combine soup, cheeses and milks in a crockpot. Stir to combine.
  • Add cooked, drained noodles and stir well.
  • Cover and cook on low for 3 hours.
  • To Freeze:.
  • Cool completely. Place in freezer bags in desired serving sizes. I usually do about 3 cups per bag. Enough for lunches, etc.
  • Seal and freeze.
  • To Serve:.
  • Thaw in fridge. Reheat in microwave or place in baking dish that has been coated with cooking spray. Bake at 350 degrees for 20-25 minutes or until hot.

1/2 lb uncooked macaroni (I used a 1/2 bag of Trader Joe's Brown Rice fusilli) or 1/2 lb hearty pasta (I used a 1/2 bag of Trader Joe's Brown Rice fusilli)
4 cups milk (I used skim cow's)
1 egg (Alison's recipe calls for 2. I only had one in the house because we had company over the weekend and)
4 cups shredded cheese (I used all cheddar)
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon dried mustard
6 slices bacon (optional)

Steps:

  • Spray crock well with cooking spray. In a mixing bowl, whip egg and milk together. Stir in spices.
  • Add cheese and noodles, and stir well to combine. Pour the mixture into the crock pot.
  • It will be very liquidy.
  • Cover and cook on low for 2-5 hours, or on high for 1-3. The cooking time will vary depending on what size crockpot you are using, and how quickly it heats and cooks. I was quite surprised at how quickly our pasta got fork-tender.

Mac and cheese recipe, adapted from several recipes that I have tried. Love it because once you load the crockpot you dont have to touch it again until it is time to eat. EASY!!

12 -16 ounces elbow macaroni
12 ounces evaporated milk
1 1/2 cups milk
5 cups shredded cheddar cheese
1 teaspoon salt
pepper
1 dash cayenne (optional)

Steps:

  • Turn on crock pot to allow to heat.
  • Spray Crock pot with non stick cooking spray.
  • Cook elbow macaroni per box directions, drain and place in mixing bowl.
  • Add ALL remaining ingredients (with hold 1/2 cup cheese for top).
  • Mix well.(you may have to add a little more milk to completely cover the macaroni).
  • Place all into crockpot.
  • Top with remaining cheese and cover.
  • Cook on high for approximately 3 - 4 hours.
  • Reduce to low and continue cooking until ready to serve.

1 (16 ounce) package shell macaroni
1/2 cup of stick margarine, melted
2 eggs, beaten
2 cups fat-free half-and-half
1 (10 3/4 ounce) can condensed cheddar cheese soup, undiluted
4 cups shredded sharp cheddar cheese (16 ounces)
1 teaspoon dry mustard

Steps:

  • Cook shell macaroni according to package directions; drain.
  • Place cooked shells in a 5-quart greased crock pot; add margarine and stir to cover.
  • In a sauce pan over medium heat,combine soup and 1/2 and 1/2. Stir until smooth. Add eggs and dry mustard and stir until combined. Add cheese and stir until completely melted and smooth.
  • Pour cheese sauce over shells and stir well.

1 (10 1/2 ounce) can cream of mushroom soup (low fat preferred (fat free falls apart in this recipe)
1 (10 1/2 ounce) can cheese soup
1 (10 1/2 ounce) can cream of onion soup (low fat preferred, can be replaced with cream of celery or chicken if preferred)
1 lb chicken breast
8 ounces sour cream (low fat is preferred)
1 lb pasta, any shape
16 ounces frozen vegetables (we prefer cauliflower but any can be used, broccolli blends work well also)

Steps:

  • I n crockpot mix the soups together. place chicken in soup mixture, making sure they are well covered.
  • Cook in crock pot for 6-8 hours. Chicken will fall apart when done.
  • Once chicken is done cooking, mix sour cream into the sauce. Let thicken with heat off.
  • Cook pasta according to package directions. Add frozen veggies into the pasta water and cook at same time. Drain.
  • Place pasta/veggie mixture back into large pot. Add chicken and sauce on top of pasta. Mix together so pasta is covered and chicken is shredded.
  • May add shredded cheese on top to serve, or a dollop of sour cream if desired.
  • Makes approximately 8 servings, depending on the type of past used. Larger pasta shapes will yield larger serving sizes.

1 pound elbow pasta uncooked (regular, not gluten-free or quick-cook pasta)
2/3 cup low-fat milk plus 1/3 cup of heavy cream (or 1 cup of half and half)
12 ounces evaporated milk
3 cups extra-sharp cheddar cheese (12 ounces)
1 cup shredded Monterrey Jack or American cheese (4 ounces)
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp dry mustard
1/4 tsp garlic powder
1/4 cup butter, cubed

Steps:

  • Prepare the slow cooker with non-stick spray. This recipe is for a 6-quart.
  • Boil the pasta so it's still a bit firm.
  • Add the pasta to the crockpot along with the milk, cheese, salt, pepper, mustard, and garlic. Stir that all up and make sure the pasta is coated completely. Drop in the cubes of butter and spread them out over the top.
  • Cover and cook on low heat for 1.5 to 2 hours. Stir gently a few times after the first 45 mins to an hour. Each crockpot is a little different so cook to the consistency you like.
  • When done, the pasta will be tender and the liquid will be thick and creamy. Add any remaining cheese on top to melt while sitting if desired.
  • Note: the cheese gets thicker the longer it sits before serving.

8 oz elbow macaroni (uncooked)
1 (12 oz) can(s) evaporated milk
1 tsp salt
3 c grated sharp cheddar cheese
2 eggs, beaten
1 stick butter, melted
CRUMB TOPPING:
1/2 c dry bread crumbs
1 Tbsp butter, melted

Steps:

  • 1. Cook the macaroni according to package directions until almost tender.
  • 2. Mix the cooked macaroni with all the remaining ingredients (except 1/2 cup of the cheddar cheese) in a large bowl. Pour mixture into a well greased crock pot.
  • 3. Sprinkle remaining cheese on top.
  • 4. Cook with the crock pot set on low for 3 hours. DO NOT COOK ANY LONGER THAN 3 HOURS OR YOUR MACARONI WILL BECOME DRY AND STICKY.
  • 5. To make the topping, melt 1 Tablespoon butter and mix in with the dry bread crumbs. When ready to serve, sprinkle topping onto the macaroni and enjoy !!

1 or 2 can(s) (2.25 oz. each) olives sliced,black or green
1 Tbsp dried italian seasoning

Steps:

  • 1. In a large bowl combine all ingredients except the cheese; then stir in all but 2/3 cup of the cheese.

1 teaspoon salt
1/4 teaspoon fresh ground black pepper pepper
1/2 brown onion, chopped finely
1 small red chili (I used one from a jar)
1 garlic clove, finely chopped
4 cups milk
1 1/2 cups of grated cheddar cheese
2 1/2 cups uncooked small penne pasta
300 g of sliced chicken breasts
1 tablespoon butter

Steps:

  • Fry chicken in butter (I used a large pot, as everything starts here before the slowcooker!) until chicken is white, add onion and garlic continue to fry until chicken is golden.
  • Remove the chicken mix from the pot.
  • Add milk, salt, pepper, chilli and flour in to the pot.
  • Stir over medium heat until sauce thickens, turn heat down.
  • Add cheese, stir until mixed evenly and add chicken mixture back into pot.
  • Add pasta and stir until well combined.
  • Pour everything into a greased crock pot and cook on high for 45 minutes to an hour, stirring halfway through, to ensure nothing sticks to the bottom.
  • Stir it once more when done and serve.

I figured if I added enough milk and the dry pasta it might work, it did everyone loved it!

2 - eggs beaten

  • In a large bowl whisk all the milks and egg, add the seasoning continue whisking
  • Reserve about a 1/4 cup of the cheddar for the topping, add the cheeses to the bowl, add the can of tomatoes to the bowl

  • Spray the inside of the crock pot with cooking spray, pour the pasta cheese mix to the crockot. Sprinkle the remaining cheese on top,cover and cook on low for 3 hours.

4 tablespoons (1/2 stick) butter, cut into pieces
2 1/2 cups (about 10 ounces) grated sharp Cheddar cheese
3 eggs, beaten
1/2 cup sour cream
1 (10 3/4-ounce) can condensed Cheddar cheese soup
1/2 teaspoon salt
1 cup whole milk or half and half
1/2 teaspoon dry mustard
1/2 teaspoon black pepper

Steps:

  • Instructions 1.Boil the macaroni in a 2 quart saucepan in plenty of water until al dente, about 7 minutes. Drain. 2.In a medium saucepan, mix butter and cheese. Stir until the cheese melts. 3.In a slow cooker, combine cheese/butter mixture and add the eggs, sour cream, soup, salt, milk, mustard and pepper and stir well. 4.Add drained macaroni and stir again. 5.Set the slow cooker on LOW setting and cook for 2.5 to 3 hours, stirring occasionally. Note: be sure to stir the macaroni and cheese a few times so that the cheese mixture stays creamy and does not stick/harden.

1 lb macaroni noodles
1/2 cup butter
1 (5 ounce) can evaporated milk
1 (10 1/2 ounce) can condensed cheddar cheese soup
1 cup milk
4 cups cheddar cheese (seperated)

Steps:

  • Cook macaroni noodles (or other favorite style) in boiling, salted water until barely aldente; do not overcook as you still have many hours of cooking time; Note: salting your pasta water is the only time you can actually season the pasta itself; it really does make a difference in flavor.
  • Place 1/2 cup butter into bottom of crockpot.
  • After draining the pasta well, toss it into crockpot and mix with the butter; the heat of the fresh pasta will melt the butter.
  • In a seperate bowl, blend together the evaporated milk, cheddar soup, and cup of milk; blend into pasta.
  • Toss in 3 cups of shredded cheddar cheese, holding the last cup to side as topping ( I often mix cheddar and colby for a different flavor and sometimes parmesian if I have extra on hand).
  • Cook in crockpot on high for 4 hours or low for 6 hours.
  • Add last cup of cheese on top last 30 minutes or so to allow to melt.
