KIELBASA WITH SAUERKRAUT

This filling, flavorful dish is perfect for making on a lazy Sunday. It is simple, easy, and goes great with football.

Number Of Ingredients 8

2 lb bag of sauerkraut (or 2 14oz cans), drained
1 medium onion, chopped
2 lbs Yukon Gold potatoes (about 5), peeled and cut into large chunks
1 lb Polska Kielbasa, cut into chunks
1 12 oz. bottle of lager beer
1 tsp caraway seeds
1 bay leaf
1/4 tsp black pepper

Steps:

  • Place the sauerkraut, onion, and potatoes in the bottom of a slow cooker. Add the pieces of kielbasa and beer (or 1 cup of water). Top with spices.
  • Cook for 6 hours on LOW (or 4 hours on HIGH) or until the potatoes are tender but not mushy. Serve with mustard, if desired.

2-3 pounds kielbasa or sausage
1 sweet onion (chopped)
2 cloves garlic (minced)
32 ounces sauerkraut (cut into coin-sized pieces)
1 honey crisp apple or other sweet apple (peeled and chopped)
1 tablespoon caraway seeds
1 cup beer or water (use gluten free beer to keep gluten free)
2-4 tablespoons brown sugar

Steps:

  • Heat oil on stove and cook onions and garlic on stove until soft.
  • Add the sauerkraut, apple, onion and garlic mixture, and caraway seeds to the slow cooker crock. Stir.
  • Mix beer/water and brown sugar together in separate bowl. Pour over the sauerkraut mixture. Stir ingredients together.
  • Cook on high for 3-4 hours or low for 4-6 hours.

2 lbs kielbasa (2 kielbasa)
2 (32 ounce) packages sauerkraut
1/3 cup brown sugar
1 cup water
1 cup apple cider

Steps:

  • Slice 1 onion into thin strips and caramelize.
  • Drain and rinse sauerkraut.
  • Slice kielbasa into 1-inch lengths.
  • Combine water, cider and brown sugar.
  • Combine all ingredients well in crock pot.
  • Cook on high 6 hours.

I got this recipe from my sister-in-law. It is a family favorite. Very simple and easy to do yet has good flavor and tastes great.

1 -2 lb polska kielbasa (the smoked type, adds the flavor to potatoes and kraut while cooking)
1 (14 1/2 ounce) can sauerkraut
3 (15 ounce) cans of whole potatoes

Steps:

  • Pour the large can or jar of sauerkraut, with juice, on one side of crock pot.
  • Drain 2 cans of potatoes and put on other side of crockpot.
  • Pour the other can of potatoes with juice inches.
  • Cut up meat into small chunks and put on top.
  • This must go for 10 hours on low (at the least) for the flavor of the meat to get to potatoes.
  • I substitute large can of sauerkraut with my own homemade and substitute the potatoes with one quart jar of my canned potatoes with a little of juice.

Actually, we should say meats, since it contains both country-style pork ribs and kielbasa sausage, which taste mighty fine served alongside creamy Yukon Gold potatoes. Keeping all those richly-flavored ingredients in check, is the zesty Dijon marinade and tangy sauerkraut. So while this certainly is not a light meal, it is well-balanced. The only thing it might be missing is a slice of brown rye bread and a stein of your favorite Oktoberfest brew. Prost!

1 lb Yukon Gold potatoes, cut into 1 1/2-inch pieces
1 1/2 teaspoons dried thyme leaves
1 teaspoon salt
1/2 teaspoon pepper
1 3/4 lb boneless country-style pork ribs
1 tablespoon vegetable oil
1 medium onion, chopped
3/4 cup Progresso™ chicken broth (from 32-oz carton)
1 package (14 oz) kielbasa sausage, cut into 2-inch slices
2 tablespoons Dijon mustard
1 jar (16 oz) sauerkraut, drained

Steps:

  • Spray 5-quart slow cooker with cooking spray.
  • In slow cooker, place potatoes, 1/2 teaspoon of the thyme, 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper. Toss to coat.
  • Season ribs with remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. In 12-inch skillet, heat oil over medium-high heat; cook ribs in oil, turning occasionally, until browned. Transfer to large bowl.
  • Add onion to skillet with drippings, stirring 5 to 6 minutes, until lightly browned. Transfer to slow cooker. Add broth to skillet; heat to boiling, scraping up any brown bits on bottom of skillet. Add to slow cooker.
  • Add kielbasa and mustard to pork in bowl. Toss to coat.
  • Arrange pork and kielbasa on top of onions in slow cooker.
  • Spread sauerkraut over meat. Sprinkle remaining 1 teaspoon thyme over sauerkraut.
  • Cover; cook on Low heat setting 6 to 8 hours or until ribs and potatoes are tender.
