CROCK POT HAM AND BEANS
This is cheap eating at it's best. Really good for scraping by at the end of the month if your cash gets low. Goes best with freshly baked corn muffins drizzled with honey.

Steps:
- Sort beans and soak in enough water to cover overnight.
- Or you may sort them and place in a saucepan with 2-inches of water to cover.
- Bring them to a boil, boil for 3 minutes, then cover and remove from heat.
- Allow to sit for one hour after boiling (don't lift the lid).
- Whichever method you use, rinse and drain the beans before placing them in the crock pot.
- Put the rinsed beans, garlic, onion, salt, pepper, parsley, cloves, ham (chopped into large chunks) or ham hocks into the crock pot along with 6 cups water or broth.
- Cover crock, and cook on low for about 8 hours, or until beans are tender and creamy.
- Skim any excess fat, if necessary, before serving.
CROCK POT CHEESY SCALLOPED POTATOES AND HAM
We made the Kicked Up creamy version of this recipe and that is just exactly what it was. We like that this is cooked in the Crock Pot... makes for a very easy meal. Great if you have leftover holiday ham. The cheese sauce is just enough... it's so good!

Steps:
- 1. Regular version: In a large bowl mix the two soups and feel free to add a tiny splash of milk, then add the onion, hams and seasonings. Slice the potatoes in half and then into slices; add to soup and mix well. Put into the crock pot, and add a sprinkle of paprika. Cook on high 4 hours or low 7-8 hours. Sprinkle the cheddar on top during last 10 min.
- 2. Kicked Up version: Place peeled potatoes in a bowl of water. Melt the butter over med-high heat, cook and stir a few mins. Then whisk in the flour and stir. Add 1 cup of the evaporated milk and stir over med-high heat until bubbly and thickened; you may need the whole can.
- 3. Stir in the cheddar soup, Swiss and cheddar cheese and seasonings, stir till melted and creamy. (You will not use the mushroom soup in this version :)
- 4. Slice potatoes in half and then into slices. Place in a large bowl, along with onions and ham; mix well. Place in crock pot and cook the same as regular version. Let stand 10 min prior to serving.
- 5. Some people like to layer the ingredients, instead of mixing in a bowl. I like it all mixed so the flavors marry. Use your preference!

Steps:
- Remove ham from packaging.
- Lightly score ham in diagonal lines first one way, then crosswise, to form a diamond pattern, being careful not to cut any deeper than about a eighth of an inch. (You can score both sides if you like).
- Make a paste of brown sugar and mustard (I used Boar's Head Honey Mustard).
- Rub paste into ham on sides that have been lightly scored.
- Transfer to crock pot.
- Pour in two cans of coca cola into bottom of pot, not pouring directly over ham to wash away brown sugar paste.
- Cook on low 7-8 hours.

CROCK POT SCALLOPED POTATOES (WITH OPTIONAL HAM)
This is a great, easy recipe. I got it from a Relief Society Enrichment Night lesson, and have not found its equal anywhere. I have no idea where the sister who contributed the recipe got it, but it sure is great! If you add the ham, it can even be a main dish for lunch or brunch. And while no one can say it's diet food, it's comforting, filling, and a great time saver for big holiday meals.

CROCK POT HAM BONE AND BEANS
Many variations to Ham Bone (or Hocks) and beans but this is pretty much how I remember it from my childhood. I find by not soaking the beans they have better texture and flavor.I use Great Northern Beans as my favorite choice of bean for this recipe. I have used 15 bean mix with good results just omit the ham flavor packet.

HAM AND GREAT NORTHERN BEAN SOUP FOR THE CROCK POT
Title says it all. Put this it together using a little bit from this recipe and a little bit from that recipe but mostly suggestions from my Mom. Tip I learned from someone else on Zaar was to add the salt at the very end of the cooking time, otherwise the beans get tough. You could also add 3/4 cup celery if you like celery in your soup, or saute the carrots and onion before putting them in the Crock Pot if you like the flavor from that, too.

Steps:
- Place the soaked and rinsed beans in a 5- or 6-quart crock pot. Look them over one more time for any bad beans or foreign matter.
- Add chopped carrots and onion.
- Pour chicken broth (pan drippings/chicken broth combination if you're using it) over beans, carrots, and onion. Mix gently.
- Add ham and stir again.
- Throw in ground thyme, basil, and ground black pepper. (Measurements in ingredients section are a guesstimate, I hardly ever use measuring spoons when cooking, I just make a cup in my hand and eyeball it.) To my tastebuds, a little thyme goes a long way so you may wish to add more than 1/2 teaspoon. Stir again.
- Add bay leaf and push it gently under the surface of the broth so it doesn't float.
- Cook on high for 1 hour, then low for 8 hours, stirring once in a while if you can. You could probably just cook on low for 8-9 hours if there's nobody home to change the setting. I just like to get things heated up and moving so I do high for an hour on just about everything I put in a Crock Pot.
- Remove the bay leaf.
- Add salt just before serving to the whole pot or individual bowls.
- This may taste good with a drop of Dijon mustard in individual bowls or even a tablespoon or two of cream.
- If it's too thin, just take the lid off for a while.

HAM AND BEANS (CROCK-POT)
This is how I have been making my ham and beans for years. . .I think you either love these or hate these!!! Total comfort food for me, as I make them very similar to my dad's recipe which I had growing up. Perfect served with corn bread on a cool fall or winter day. I add 3 T of Andrea's Sauce (a savory steak marinade with flavors of worchester, garlic, and onion), but Recipezaar does not recognize it. This freezes well, so don't be afraid to serve it once and freeze the leftovers for later!

Steps:
- Rinse and sort thru beans (has anyone ever really found a rock in these?). Cover with water and let sit overnight.
- In the morning, drain water, rinse again and place beans in the crockpot. Dump in all of the other ingredients (except ham bone) and give it a few good stirs.
- Put the ham bone in the crockpot, cover and cook on high for 6-8 hours.
- Remove the bay leaf, ham bone and fish out any bones that may have fallen off during cooking. Stir the beans a few times. Remove 1 cup of the beans and place in a bowl, mash them with a potato masher or back of a spoon, then return to the beans and stir; this helps thicken it up a bit.
- Take off any meat left on the ham bone, chop and return it to the crockpot.
- Stir again and serve!
COOKING A PRE-COOKED HAM IN THE CROCK POT
I met a lady sorting through a bin of hams at the grocery store. I had missed those and she commented they were the best. They were smoked, mostly boneless, butt portions. Well, they were half the price of the sliced one I had in my basket, so I asked her how she cooked it. She wraps the ham in foil and cooks in the crock pot until done. The foil keeps the juices in, she said. So I tried it for Christmas Dinner. Superb.

Steps:
- 1. Place your beans in a large bowl; cover with water and soak overnight. After soaking, pick through and discard any stones or shriveled beans. Rinse thoroughly and place in an 8 quart crock pot. Add all remaining ingredients except for the chopped ham, unless you aren't using a bone. I just use the bone and its meat for cooking, then add other cubed ham at the end.
- 2. Once all ingredients are added; stir as best as you can - mainly to mix in the bouillon. Place on the lid. Turn pot on low and cook for 6 - 8 hours or on high for 4 - 5 1/2 hours; or until the bean are creamy. All pots cook differently. I started mine on low for the first 4 hours, then turned to high for another 3 1/2 hours...was perfect..

- Place beans in a 6 quart crock pot with water and remaining ingredients except salt. Cook on low setting for 8-10 hours, or until beans are soft and done. Stir a couple of times during cooking, if possible. Add salt after beans are done. Cooking salt in the beans will make them tough.
- Note: The jalapenos will give your beans a bit of heat. You can control how hot you want them by the amount of pepper you add. If you want no heat, replace the jalapeno with 2 tablespoons of chopped green bell pepper.
