Steps:
- In a large pan heat oil over medium high heat. Add onions, and garlic stirring all the while cooking about 4 minutes.
- Deglaze the pan with vermouth.
- Add salt, pepper flakes, herbs, and nutmeg.
- Add milk and 1/2 pound blue cheese cook till melted.
- Add potatoes and mix together.
- Toss in crumbled blue cheese for texture.
- Season with additional salt and pepper to taste.

SLOW COOKER GARLIC MASHED POTATOES
This is a great way to cook mashed potatoes without taking up space on the stovetop. It's also an excellent way to keep mashed potatoes warm before serving.

- Combine the potatoes and garlic in the slow cooker. Pour the chicken broth over the potatoes, cover and cook on high 3 to 4 hours, or on low 6 to 8 hours.
- Remove the potatoes and drain, reserving the cooking liquid and removing the garlic. Return the potatoes to the slow cooker.
- Melt the butter in a small saucepan with the half-and-half over low heat. Remove from the heat and add to the potatoes along with the cream cheese and liberally season with salt and pepper. Use a potato masher to mash, adding the reserved cooking liquid to the potatoes if necessary for the desired consistency.
- Keep warm before transferring to a serving platter. Garnish with chopped chives.

- Place garlic in the Crock Pot, then add potatoes. Top with butter, sprinkle on the salt, and add the water or vegetable broth.
- Cook on high 3 - 4 hours or low 8 hours. Potatoes and garlic should be very tender.
- Using a potato masher, mash potatoes a bit and then pour in 1/4 cup half-and-half. Continue mashing, adding additional half-and-half until potatoes are desired consistency. Taste and add additional salt and pepper if desired.
- Serve topped with additional butter if desired.

- Toss the potatoes, butter, 1 tablespoon salt and 1/2 teaspoon pepper together in a 6-quart slow cooker. Add 1 cup of water, then cover and cook on high until the potatoes are tender, about 4 hours. (The potatoes might have browned lightly in spots but that is okay.)
- Remove the lid and add the sour cream and 1 1/2 cups warm milk to the potatoes. Use a potato masher to smash the potatoes until they are mostly smooth. If the potatoes need to be thinned out, stir in the remaining 1/2 cup warm milk. Season to taste with additional salt and pepper. Garnish with chives.
