2 lbs boneless pork loin roast
1 medium onion, sliced
8 ounces mixed dried fruit, be sure to get the large pieces, the small diced ones overcook
1/2 cup apple juice
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon

Steps:

  • Place onion in a 4- to 5-quart slow cooker. Place pork on onion; top with fruit. Mix remaining ingredients together in a separate bowl and pour over fruit, pork, and onion.
  • Cover and cook on low heat setting for 7-9 hours or until pork is tender. Serve fruit mixture with pork.

I tried this cut of meat when it was on sale, and for lack of any other ideas I took suggestions from the back of the label, with a few tweaks (like making gravy). This is a very popular dish at our house, and it could not be easier! Instead of rubbing the roast with the onion soup mix and then adding the cranberry sauce, you can also just mix the onion soup mix with the cranberry sauce and pour the whole mixture over the roast.

1 (3 pound) pork sirloin roast
1 (1 ounce) package dry onion soup mix
1 (16 ounce) can whole berry cranberry sauce
2 tablespoons butter, or to taste
2 tablespoons all-purpose flour, or as needed
salt and ground black pepper to taste

Steps:

  • Rub pork roast all over with onion soup mix and place roast in the slow cooker. Pour cranberry sauce over roast.
  • Cook on Low for 8 to 10 hours. Remove roast to a platter, reserving juices in the slow cooker.
  • Melt butter in a saucepan over low heat. Whisk flour into melted butter to form a paste. Pour reserved juices from the slow cooker into the butter mixture, whisking constantly, until gravy lightens in color and thickens, about 5 minutes. Season with salt and black pepper to taste. Serve gravy alongside roast.

3 lbs pork loin
1 (15 1/2 ounce) can apricots
1 (15 1/2 ounce) can whole berry cranberry sauce
1/2 cup chopped dried apricot
1 teaspoon dry mustard
1/2 teaspoon cayenne pepper
4 potatoes, cubed
2 tablespoons water
2 tablespoons cornstarch

Steps:

  • Place potatoes in bottom of crock pot.
  • Place seasoned roast on top of potatoes. (Seasoned with salt and pepper).
  • Blend the rest of the ingredients and add to crock pot.
  • Cook on low 5 1/2 to 6 1/2 hours.
  • Pour 2 cups of liquid in sauce pan. Mix together 2 tbsp water and 2 tbsp corn starch. Add to liquid. Heat until thickened.
  • Serve with roast and potatoes!

2 tablespoons olive oil
1 (3 pound) pork loin roast
salt and ground black pepper to taste
20 cloves garlic, peeled
1 cup diced onion
2 tablespoons all-purpose flour
1 cup chicken broth
¼ cup fresh lemon juice
2 tablespoons Italian seasoning
¼ cup honey

Steps:

  • Heat oil in a large skillet over medium-high heat. Season pork with salt and pepper. Place pork in the hot skillet and sear until brown on all sides, about 3 to 4 minutes per side. Transfer pork to a 6-quart slow cooker.
  • Add garlic cloves to the skillet. Cook, stirring often, over medium-high heat until brown, about 5 minutes. Add onion and cook until softened, about 3 minutes. Sprinkle flour over garlic and onion and cook, stirring, for 2 minutes.
  • Pour chicken broth into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Stir in lemon juice, Italian seasoning, salt, and pepper, and bring to a boil. Pour broth mixture and honey over the pork in the slow cooker.
  • Close the lid and cook on High for 3 hours or on Low for 6 hours, until pork is fork-tender. Transfer pork to a platter and let rest for 5 minutes. Pour cooking liquid into a saucepan and bring to a boil. Reduce heat to medium-low and simmer until thick, 2 to 3 minutes. Lightly mash the garlic cloves. Slice the pork, and serve with the mashed garlic cloves and sauce.
