One of my favorite things to make is Crock pot bread pudding recipe. The crockpot makes this recipe easy and you can have bread pudding any day of the week.

1 loaf bread cubed into 8 cups
2 cups heavy cream
4 eggs
1/4 cup melted butter
1 tablespoon cinnamon
1 teaspoon nutmeg
1 teaspoon vanilla
1/4 cup granulated sugar

Steps:

  • Pre-heat slow cooker to high setting.
  • Place cubed bread in large mixing bowl, set aside.
  • Combine remaining ingredients in medium size mixing bowl, whisk thoroughly.
  • Pour liquid ingredients over bread cubes, stir until bread is completely coated.
  • Transfer bread mixture into slow cooker, reduce heat to low.
  • Cook for 3 hours or until knife inserted in center comes out clean.
  • Serve warm with whipped cream on top.

9 cups day-old cubed French bread
1 cup semisweet chocolate chips
1/2 cup dark or milk chocolate chips
1 cup granulated sugar
2/3 cup brown sugar
1/2 cup unsweetened cocoa powder¹
4 large eggs
12 oz can evaporated milk²
1/2 cup half-and-half³
1 tablespoon vanilla extract

Steps:

  • Lightly grease a medium (4-5 quart) crock pot.
  • Add bread to crock pot.
  • Top with chocolate chips.
  • In a large bowl, whisk together sugars, cocoa powder, eggs, milk, half-and-half, and vanilla. It's ok if it's a little lumpy, but you don't want big piecies of cocoa powder.
  • Pour milk mixture over bread, gently pressing bread down as needed.
  • Place a thin cotton towel over the top of the slow cooker.
  • Cover, and cook on low for about 3-3 1/2 hours.

1 package (6 oz) white chocolate baking bar, coarsely chopped
1 cup fat-free egg product
3/4 cup warm water
1 teaspoon vanilla
1 can (14 oz) sweetened condensed milk (not evaporated)

Steps:

  • Spray inside of 3- to 4-quart slow cooker with cooking spray. Place bread cubes in slow cooker. Sprinkle with baking bar.
  • In small bowl, mix remaining ingredients; pour over bread cubes and baking bar.

1/2 Cup Raisins ((See Note))
1/2 Cup Semi-Sweet Chocolate Chips
4 Large Eggs
1 3/4 Cups Milk
1/2 Cup Granulated Sugar
1/3 Cup Unsweetened Cocoa Powder
1 Teaspoon Pure Vanilla Extract

Steps:

  • Grease the bottom and sides of a 5 quart or larger slow cooker OR a 3.5 quart casserole slow cooker with butter or non-stick cooking spray to prevent sticking.
  • Add bread cubes, raisins and chocolate chips to the slow cooker.
  • In a medium mixing bowl, whisk together the eggs, milk, sugar, cocoa powder and vanilla extract until smooth and well combined.

1 cup raisins
2 cups milk
4 eggs
¼ cup butter, melted
¼ cup white sugar
½ teaspoon vanilla extract
¼ teaspoon ground nutmeg

10 slices white bread, cubed
1/2 cup blueberries or 1/2 cup craisins
1/2 cup miniature chocolate chip
1 3/4 cups milk
1/2 cup sugar or 1/2 cup Splenda sugar substitute
1/3 cup unsweetened cocoa
1/2 teaspoon almond extract or 1/2 teaspoon vanilla extract
4 eggs
whipped cream or ice cream, to serve

Steps:

  • Spray to inside of the slow cooker insert with cooking spray.
  • Place the bread, dried fruit & choc chips in the cooker.
  • Beat the milk, eggs, sugar, cocoa & extractuntil combined and then pour over bread mixture, pushing the bread cubes into the liquid to coat.

5 eggs, beaten
3 1/2 cups milk
2 teaspoons vanilla
2 tablespoons ground cinnamon
1/2 teaspoon salt
6 cups plain breadcrumbs (or more to make mixture as thick as cooked oatmeal when mixed with all ingredients)
3/4 cup packed brown sugar
1 tablespoon butter or 1 tablespoon margarine, melted
1/2 cup raisins (optional)
1 banana, mashed or sliced (optional)

Steps:

  • Mix all ingredients together until bread crumbs are thoroughly wet, and mixture is smooth like thick oatmeal.
  • Place mixture in a WELL greased crock pot.
  • Cook on high for 4-5 hours, or until a knife stuck in middle of the"pudding" comes out fairly clean.
  • NOTE: For the last 1/2 hour of cooking, lift the lid a"crack" by putting a spoon or fork between it and the pot, to let the excess moisture escape; otherwise you will have a clear liquid all around the bread pudding.
  • Bread pudding should rise slightly like a cake while cooking, and be smooth on top.
  • It should be fairly solid when done, like a very moist chewy brownie, or perhaps like a dense souffle.

½ cup dried cherries
3 tablespoons brandy
2 tablespoons butter
6 cups stale French bread cubes
½ (12 ounce) package white chocolate baking chips
4 eggs
⅓ cup white sugar
1 cup half-and-half
1 teaspoon vanilla extract

Steps:

  • Look over the cherries to make sure all the pits were removed. Combine cherries and brandy in a small bowl. Microwave on high power for 30 seconds. Let stand until cool, about 30 minutes. Drain.
  • Grease a 3 1/2-quart slow cooker with butter. Cover the bottom with 1/2 of the bread cubes. Scatter 1/2 of the cherries and white chocolate chips on top. Layer remaining bread cubes, cherries, and chocolate on top.
  • Whisk eggs and sugar in a medium bowl until smooth. Whisk in half-and-half and vanilla until blended. Carefully pour over the bread mixture, gently pressing down on the bread to immerse in liquid.
