SLOW-COOKER CHICKEN WITH TOMATOES AND ARTICHOKES
Add richness to chicken breasts by topping with Italian dressing, tomatoes and artichokes.

Steps:
- Spray 3- to 4-quart slow cooker with cooking spray. Remove skin and any fat from chicken. Brush chicken with dressing; place in cooker. Sprinkle with Italian seasoning, salt and pepper. Top with remaining ingredients except parsley.
- Cover; cook on Low heat setting 4 hours 30 minutes to 5 hours 30 minutes.
- Skim off any fat from top of mixture in cooker. Serve chicken and tomato mixture in shallow bowls; sprinkle with parsley.

- Drain Artichokes; layer in bottom of crock pot.
- Place chicken breasts on top of artickokes in a single layer.
- Pour tomoatoes evenly on top of chicken breasts.
- Cook on low 8 hours.

CROCK POT TUSCAN CHICKEN
Crockpot Tuscan Chicken is the perfect busy night meal! It is big on flavor and light on prep. Serve it over pasta or rice, or with a big slice of garlic bread.

- Lay the chicken breast in the crock pot and season with salt, pepper and pressed garlic.
- On top of the chicken combine the sun dried tomatoes (with oil and herbs,) artichoke hearts, and onion.
- Cook on high for 2.5-3 hours, or low for 3.5-4 hours.
- Once the chicken is cooked through (165˚F internal temp) open the crock pot and add the spinach on top. Leave the lid closed for 5-10 minutes to let the spinach wilt. Then stir it into the toppings.
- Serve hot either as whole chicken breasts with the toppings, or shredded and mixed with the toppings. Enjoy!

Steps:
- Rinse chicken& set aside.
- In a 3 1/2 qt crock pot combine mushrooms, undrained tomatoes, frozen artichoke hearts, chicken broth, onion, olives,& wine/broth.
- Stir in tapioca, curry powder, thyme, salt,& pepper.
- Add chicken.
- Spoon some of the tomato mixture over chicken.
- Cover& cook on LOW for 7 to 8 hours or on HIGH for 3 1/2 to 4 hours.
- Serve with hot cooked couscous.
- Serves 6.
