I just love coming home from a long day at work to a cooked dinner! Right when you walk in the door you can smell the wonderful soup, so we dig in as soon as we can!

1 lb boneless chicken, cooked and shredded
1 (15 ounce) can crushed tomatoes
1 (10 ounce) can red enchilada sauce
1 medium onion, chopped, 1/2 c dry minced onion can be substituted
1 (4 ounce) can chopped green chilies, UNdrained
2 garlic cloves, minced
2 cups water
1 (14 1/2 ounce) can chicken broth, can use water as well and add boullion
1 (15 ounce) can whole kernel corn, drained
1 (15 ounce) can beans, black, pinto, kidney, white, DRAINED AND RINSED
1 teaspoon cumin
1 teaspoon chili powder
1/4 teaspoon bay leaf, crushed
1 tablespoon dried cilantro
corn tortilla strips or chips
monterey jack cheese or monterey jack pepper cheese, shredded
sour cream & guacamole

Steps:

  • Combine all ingredients in greased 4 1/2 to 6 quart slow cooker
  • Cover and cook on low heat 6-8 hrs or on high 3-4 hrs (everyone's crockpot is different, adjust accordingly).
  • Top with shredded pepper or monterey jack cheese, guacamole or sour cream.
  • Serve with tortilla strips or chips, sometimes I even make cheese quesadillas.
  • VARIATION- Add 1 c shredded carrots or zucchini at beginning of cook time.

2 (15 ounce) cans black beans
2 (15 ounce) cans Rotel Tomatoes
1 cup salsa
1 (4 ounce) can diced green chilies
1 (14 1/2 ounce) can tomato sauce
tortilla chips (optional)

Steps:

  • Combine all ingredients into crockpot and cook on low for 8-10 hours.
  • Right before serving, top with crushed tortilla chips.
  • Other toppings can include things like sour cream, shredded cheese, etc.

8 ounces chicken breasts, cubed
2 cups frozen corn
1 large onion, chopped
2 garlic cloves, minced
4 cups chicken broth
10 3/4 ounces tomato puree
10 ounces Rotel tomatoes & chilies
1 teaspoon salt
2 teaspoons cumin
1 teaspoon chili powder
1/8 teaspoon cayenne
1/8 teaspoon black pepper
1 bay leaf
1/2 teaspoon oregano

Steps:

  • Place all ingredients in a crock pot.
  • Cook on high 6 hours.
  • Serve with shredded cheese, sour cream, and tortilla chips if desired (note that these will increase the number of points per serving).
  • I omit the cayenne as we don't like it too spicy.
  • Also I use leftover chicken, cubed, and homemade broth.
  • Leftovers of this soup freeze very well.

1 1/2 lbs shredded cooked chicken (I had leftover rotisserie chicken and then tossed in 2 breasts from the freezer to get in the ball p)
1 (15 ounce) can diced tomatoes
1 (14 ounce) can hatch green enchilada sauce
2 (4 ounce) cans hatch diced green chilies (it was a little too spicy for us, I will cut it back to one next time for us)
1 (15 ounce) can pinto beans, rinsed and drained
1 medium onion, chopped
2 tablespoons minced garlic
2 cups water
1 (15 ounce) can chicken broth
2 teaspoons cumin
2 teaspoons chili powder
2 teaspoons salt
2 teaspoons pepper
15 ounces corn, drained
2 tablespoons chopped cilantro
avocado, cubed
sour cream
shredded cheese, of your choice
tortillas or tortilla chips

Steps:

  • Combine all ingredients to the corn in the large crock pot.
  • Cook for 6 to 8 hours on low.
  • If using whole chicken breast remove before serving and shred with forks, then return to pot and stir.
  • The others items on list are for garnish after this bad boy is cooked.
  • Serve in your favorite soup bowls with chips and garnish of choice -- oh I added some more raw onions and would use green onions next time for some other green color.

A friend of mine made this soup for a baby shower that I recently attended and everyone loved it! Fritos or tortilla strips and cheddar cheese are optional topping's as well as the sour cream. I like it the best with only sour cream which makes it HEALTHY which is always a major plus! You do not need to pre cook the chicken, just put it in raw OR frozen, which makes it super easy. For spicer soup, get the spicy RoTel tomatoes and/or Medium or Hot Tostitos Salsa but you will find that it has a lot of flavor and is quite spicy for not having to add any extra spices -- SO easy!! I like it the best with one jar of medium and one jar of mild tostitos salsa.

1 (29 ounce) can tomato sauce

2 garlic cloves, minced

1 yellow squash, diced
1 zucchini, diced

This easy chicken tortilla soup is a crock pot recipe that the whole family will love. Even the pickiest eaters will devour this soup!

4 Chicken Breast (thawed is best, but you can put in frozen)
One 14oz box of chicken broth. I use low sodium because I add sea salt.
2 cans of petite diced tomatoes (if you like spice or flavor, get the ones with garlic, onion, peppers, etc.)
1 can of Rotel tomatoes
1 cup of Salsa of your choice (depending on your spice preference; I love Herdez Salsa Casera)
1 teaspoon ground Cumin
2 Garlic Cloves halved or chopped
1 or 2 teaspoons of olive oil
1 bunch of fresh cilantro

Steps:

  • Turn crock-pot on high and complete first to steps while gathering ingredients.
  • Pour olive oil in bottom of crock-pot
  • Add chopped or halved garlic
  • Once ingredients are gathered and you have completed prepping add chicken broth
  • Place chicken breasts inside
  • Then add cans of tomatoes and Rotel (DO NOT DRAIN ANY)
  • Pour in salsa and cumin
  • Add Sea Salt and Ground Pepper to taste or you can wait until end.
  • Top with chopped cilantro (I put enough in there to cover surface of liquid)

1 lb chicken (fresh, frozen, pre-packaged, canned, rotisserie, leftover whatever you have on hand.)
12 ounces corn (fresh, canned or frozen)
2 (10 1/2 ounce) cans cream of chicken soup
1 (10 1/2 ounce) can cream of celery soup
1 (10 1/2 ounce) can Fiesta nacho cheese soup or 1 (10 1/2 ounce) can cheddar cheese soup
1 (16 ounce) can chicken broth or 1 (16 ounce) can stock
1 (10 ounce) can Rotel tomatoes & chilies
1/2 tablespoon onion powder
2 minced garlic cloves
3 dashes cayenne pepper sauce (like Frank's Red Hot)
1 (1 1/4 ounce) package taco seasoning
salt and pepper
tortilla chips
cheddar cheese
sour cream, to top when serving

Steps:

  • Put all ingredients in the crockpot and stir to incorporate together.
  • Place on high 4-6 hours or low 6-8 hours.
  • Do not keep opening lid as this slows cooking time by 30 minutes every time.
  • If too thick add more broth or water to thin out.
  • If stovetop method is preferred just make sure the chicken is cooked thoroughly.

1 can black beans, drained
1 can corn, drained
1 can diced tomatoes (14.5 ounce size - southwest style, if possible I used petite diced tomatoes w/ sweet onion)
1 packet enchilada sauce mix (or if you can't find this, mild taco seasoning works well too, this is what I used)
1 1/2 cup water
1 can (8 ounce) tomato sauce
1 can ( 10 3/4 ounces) cream of chicken soup
2 cups milk
3-4 boneless chicken breasts (I only used 2 chicken breasts)

Steps:

  • In crock pot, mix the enchilada packet together with the water and tomato sauce. Add cream of chicken soup and milk and whisk together until smooth. Add chicken. Pour drained black beans, drained corn and diced tomatoes on top of that. Cook on low 6-8 hours. Before serving, take out chicken and shred or dice, then put back and stir it all together. slice corn tortillas and put in soup at end just before serving. Serve with sour cream, shredded cheddar cheese, lime, avocado, or tortilla chips.
