4 bone-in skinless chicken breasts
salt
pepper
lemon pepper
paprika
1 cup sour cream
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can sliced mushrooms, drained or 16 ounces fresh mushrooms, sliced
1/4 cup white wine or 1/4 cup chicken broth

Steps:

  • After removing the skin, sprinkle the chicken breasts with salt, pepper, lemon pepper, and paprika, then place in the crock pot.
  • Mix together the remaining ingredients and pour over the chicken pieces.
  • Cook on low 6-8 hours. Serve over rice or egg noodles.

4 -6 large boneless chicken breasts
seasoning salt, to taste
16 ounces low-fat alfredo sauce
3 garlic cloves, cut in half
1/2 lb fresh mushrooms, cut in half
garlic powder
pepper
fresh parsley, chopped
4 1/2 ounces fresh spinach, about 1/2 bag

Steps:

  • Put chicken in slow cooker and sprinkle with seasoning salt.
  • Add the sauce and garlic; mix to coat the chicken with the sauce.
  • Place the mushrooms on top of the chicken; sprinkle with a little garlic powder, pepper and parsley.
  • Cook on LOW about 4 hours or until the chicken is done. Add the spinach and cook just until the spinach starts to wilt.

5 -7 slices bacon
6 boneless skinless chicken breasts
seasoning salt or white salt
pepper
1 (10 ounce) can cream of chicken soup (can use two cans if desired, or use cream of mushroom soup)
1/3 cup grated parmesan cheese
1 (10 ounce) can mushrooms, drained
1 small onion, finely chopped
2 teaspoons minced garlic (optional)
1 -2 cup swiss cheese, cubed into small pieces (can use Velveeta and Swiss together!)

Steps:

  • In a large skillet, cook the bacon until crisp; drain on paper towels then crumble (leave the bacon drippings in the pan).
  • Season the chicken breasts with salt and pepper the, brown in the bacon drippings for about 5 minutes on each side.
  • Place the breasts in a 4-6-quart slow cooker.
  • Sprinkle with mushrooms.
  • In the same skillet heat the soup and Parmesan cheese with onions and garlic for 5 minutes until bubbly, then pour over the chicken and mushrooms.
  • Cover and cook on LOW setting for about 4 hours.
  • After about 4 hours sprinkle with the cheese cubes and bacon.
  • Cover and cook on HIGH for about 20 minutes, or until the cheese is melted.

Normandy inspired chicken with easy, homemade crème fraîche. Simply amazing. Goes perfectly with a side of green beans; also wonderful with sugar snap peas, asparagus or spinach. Notes on crème fraîche: If you're concerned about the thickness of the finished sauce, mix up the crème fraîche a couple of hours ahead of starting the rest of the meal. Crème fraîche thickens as it stands and the thicker it is, the thicker the finished sauce will be; many recipe call for leaving it out around 12 hours, or even up to 24, to set up. It is the bacterial cultures in the sour cream acting on the heavy cream that cause it to thicken and sour slightly, but from what I've read, it's a beneficial bacteria and perfectly safe to eat even when left out for that long (at any rate, I've left it out for that long and my family ate it and was perfectly fine). If you're concerned about the fact that it's a bacteria at all, heating it after it's thickened will kill the bacteria; the taste will be the same, but it will break down slightly and make the texture a little grainy.

1/3 cup sour cream
1/3 cup heavy cream
1 tablespoon butter
10 ounces mushrooms, sliced
2 leeks, cut in half lengthwise and sliced crosswise
2 tablespoons white wine or 2 tablespoons sherry wine
1 1/2 tablespoons Dijon mustard
1 teaspoon thyme
1/2-1 teaspoon celery salt (to taste)
1 teaspoon pepper
1 -3 garlic clove, crushed
2 lbs boneless skinless chicken breasts or 2 lbs boneless skinless chicken thighs

Steps:

  • In a glass jar, mix together the sour cream and heavy cream until well blended, then put lid on jar and let sit at room temperature until ready to serve chicken.
  • Grease the crock pot with the butter and leave any extra in the bottom.
  • Put all ingredients in the crock pot, except for the chicken and the crème fraîche, and mix well.
  • Add the chicken and mix again.
  • Cover and cook on LOW for 6 hours.
  • Remove chicken to a plate and cover to keep warm.
  • Remove 1/4 cup cooking juices and discard.
  • Mix the crème fraîche into the vegetable mixture, then return the chicken to the crock pot and stir to coat the chicken.

1 9oz. pkg. frozen chopped spinach, thawed
1 8oz. carton sliced mushrooms
1 15oz. jar Newman's Own Alfredo Sauce
3-4 chicken breasts (depending on size), cubed
1 large red onion, coarsely chopped
1/2-1 clove garlic, minced
2 tsp. salt, or to taste
1/2 tsp. freshly ground black pepper

Steps:

  • Cube the the raw chicken breasts (bite size works well). Place in crock pot and pour alfredo sauce to cover. Stir. Place onion, and garlic in crock pot. Stir. Add mushrooms and spinach and stir to mix all ingredients well. Cook on low about 6 hours. Enjoy alone or with a green salad.

In a small household, you are always left with part of a package of something. This recipe was born from my desire to use up things in the fridge. I've done the same on the stove, but this really worked well in the crock pot.

2 lbs chicken thighs (bone-in)
8 ounces fresh mushrooms, sliced
1 large onion, chopped
3 garlic cloves, minced
16 ounces spaghetti sauce (1/2 of standard jar)
1 teaspoon dried herbs or 1 tablespoon fresh herb, minced
1/2 cup wine
olive oil
salt
pepper

Steps:

  • Pour the spaghetti sauce into a bowl. Add the herbs and mix.
  • Season chicken with salt and pepper. Heat a little olive oil in skillet and brown the chicken well; transfer to crock pot.
  • Pour all but about 2 tablespoons of accumulated fats from skillet, return to medium low heat. Add the onion and garlic, and cook until soft and just starting to turn color.
  • Put the onions, garlic and mushrooms over the chicken.
  • Return skillet to burner. Pour the wine into the skillet and scrape up all the fond (browned bits) from the skillet. Pour the wine into the spaghetti sauce and mix. Pour over the chicken.
  • Set to LOW and cook for 4 to 5 hours.
  • Serve with hot pasta.
  • Note1: Use whatever herbs you like - oregano, basil, thyme are all good, or use an Italian seasoning mix. I also sometimes add 1/4 teaspoons crushed red pepper for some heat.
  • Note2: Obviously, you can add different vegetables and herbs or spices, to suit your tastes and needs. Sweet bell peppers are a natural, I will also add fresh tomatoes or whatever needs using.
  • Note3: I try not to use added salt, but you may want an additional 1/2 teaspoons or so in the sauce. I find commercial sauces salty enough.
  • Note4: I like red wine, but any wine or dry vermouth will work. Or use chicken broth.
