I love sauerkraut but the rest of my family aren't fans, but even my family enjoyed sauerkraut cooked this way served with rye bread. Adapted from Slow Cooker Cooking.

4 lbs sauerkraut, drained and rinsed (2 32-ounce jars)
1 onion, chopped
1 carrot, peeled and cut lengthwise in half and then sliced cross wise into thin 1/4 inch half circles
2 garlic cloves, peeled and crushed
1 1/2 teaspoons caraway seeds
1 1/2 teaspoons dried thyme
2 bay leaves
12 juniper berries (optional) or 1/4 cup gin (optional)
pepper
16 ounces kielbasa, cut into 1/4 inch round slices
2 cups white wine or 2 cups white grape juice
4 cups chicken broth (or 4 cups water and 3 bouillon cubes)

Steps:

  • Place the drained sauerkraut in the slow cooker.
  • Add onion, carrot, garlic, caraway seeds, thyme, bay leaves, juniper berries or gin (if using) and pepper.
  • Stir to combine.
  • Place kielbasa on top of all.
  • Pour in the wine (or grape juice) and broth on top.
  • Cover and cook on low for 8-10 hours.
  • Discard bay leaves and serve.

Modified from a recipe I found on AllRecipes.com - removed the potatoes to make it more Atkins compliant, changed the sausage to turkey kielbasa for low-fat.

2 lbs turkey kielbasa, cut into 1 inch pieces
1 1/2 lbs sauerkraut, drained and rinsed
2 granny smith apples, peeled, cored and sliced into rings
1 medium onion, sliced into rings
1 cup low-sodium low-fat chicken broth
1/2 teaspoon caraway seed (optional)
1/2 cup shredded low-fat swiss cheese

Steps:

  • Place half the sauerkraut in a slow cooker, and top with the sausage. Cover with the remaining sauerkraut, apples, and onion. Pour chicken broth over all, and sprinkle with caraway seeds.
  • Cover, and cook on high 3-4 hours or low 6-8 hours.
  • Place each serving in a broiler-safe individual bowl or casserole, sprinkle with Swiss cheese and place under broiler for 1-2 minutes until cheese turns bubbly and brown.

1 can (14 ounces) sauerkraut, rinsed and well drained
1 pound smoked Polish sausage or kielbasa, cut up
3 medium tart apples, peeled and cut into eighths
1/2 cup packed brown sugar
1/2 teaspoon caraway seeds, optional
1/8 teaspoon pepper
3/4 cup apple juice

Steps:

1 lb fully cooked Polish sausage or 1 lb kielbasa, cut into 2 inch pieces

1/2 cup brown sugar, packed
1/2 teaspoon caraway seed
1/4 teaspoon black pepper
3/4 cup apple juice

Steps:

  • Place 1/2 of the sauerkraut in the bottom of your slow cooker.
  • Top with sausage & apples then remainder of sauerkraut.
  • Mix together the brown sugar, caraway seeds & pepper and sprinkle evenly on top.
