Croatian bean soup, known as grah i varivah, is more like a hearty stew because it's so thick and full of smoked meats and sausage.

1 pound dried beans (rinsed, picked over, and soaked overnight)
12 to 15 cups cold water
3 cloves garlic (peeled and minced)
1 large onion ( chopped )
1 pound smoked sausage (Croatian, like kranjska, kobasice, or smoked Polish sausage like kiełbasa krajana , cut into 1/4 to 1/2 inch pieces)
1 pound smoked ribs or meaty smoked ham hocks
1 large bay leaf
Salt, pepper, and Vegeta to taste

Steps:

  • Gather the ingredients.
  • Drain the soaked beans, rinse them, and drain again.
  • Place in a large pot and add 12 cups fresh cold water. Bring to a boil, reduce heat to a simmer, and skim off any foam that rises to the surface.
  • Add garlic, onion, smoked sausage of choice, smoked ribs or meaty smoked ham hocks, bay leaf, salt, pepper and Vegeta seasoning powder to taste.
  • Return to a boil, reduce heat, and simmer, partially covered, for 2 to 3 hours or until beans and meat are tender. Add water as needed, while cooking, stirring occasionally.
  • Remove bay leaf and discard. Remove bones from rib meat or hocks and return meat to the pot. If soup isn't thick enough, continue to simmer until desired consistency is achieved.

This meal has Turkish origin. All Balkan States has similar meals, this is one we prepare in Croatia. There are lot of variations of this meal, some put sausages, some bacon, some nothing but beans. It is better if you use clay pot for this meal. This is how I do it.

500 g beans (white, preferably)
500 g leeks
30 g lard or 30 g oil
100 g tomatoes or 1 fresh tomato
60 g green peppers or 1 fresh green pepper
1 tablespoon red paprika (dry, grounded)
1 tablespoon salt
1 teaspoon hot paprika (red, dry, grounded)
1 tablespoon all-purpose flour
1 teaspoon pepper
100 g bacon (pancetta)
2 cups water
5 chili peppers (optional)

Steps:

  • Soak beans day before cooking.
  • In the morning, cook beans until soft, do not overcook it.
  • Slice leek into thin slices across and sauté it on lard until softens. Add flour and some water to make creamy liquid. Add paprika (hot and sweet), stir and add beans. Add water and stir. Cook just until boils. Remove from fire.
  • Slice tomato into round slices. Slice Pepper into round slices. Slice pancetta thin.
  • Take clay pot and put some this pancetta slices on the bottom. Pour all beans over. On the top arrange tomato slices, pepper slices and over all pancetta slices. Usually, ingredients on the top depends on season: if there is no tomatoes, than no tomatoes. Bake in hot oven on 180°C about 30 minutes, or when you see crusty top.

2 -3 tablespoons extra virgin olive oil
3 (16 ounce) packages all- beef hot dogs (ballpark-style and sliced on a slight angle)
1 medium onion, chopped
2 tablespoons molasses
3 tablespoons Worcestershire sauce
2 cups tomato sauce
4 (16 ounce) cans baked beans (or 1 family-size can)
2 (8 1/2 ounce) boxes corn muffin mix, such as Jiffy brand
2 eggs
4 tablespoons butter, melted
1 1/2 cups whole milk
1 tablespoon chili powder
1/4 cup fresh chives, chopped
2 cups cheddar cheese, shredded

Steps:

  • Preheat oven to 400°F.
  • Place a large, oven-safe, nonstick skillet over medium-high heat, add olive oil.
  • Add the sliced hot dogs to the pan and brown, about 6-8 minutes.
  • Add the chopped onion and cook for about 3-4 minutes.
  • Combine molasses, Worcestershire and tomato sauce in a small bowl and add to the skillet.
  • Add the baked beans and bring up to a simmer.
  • While the hot dog mixture is coming up to a simmer, mix the two packages of muffin mix together with eggs, melted butter, milk, chili powder, chives and the cheese.
  • Pour the mix over the top of the hot dog mixture in the skillet.
  • Place skillet in the oven and bake until cornbread is light golden in color, 12-15 minutes.

1 quart water
1 cup dried navy beans
1 cup tomato sauce
1 tablespoon molasses
1 tablespoon honey
1 teaspoon salt
1/2 tablespoon dry mustard
1 onion, chopped
1 garlic clove, minced
1 green pepper, chopped
2 stalks celery, chopped
1/2 lb lean ground beef, cooked until brown
1/3 cup buttermilk
1 cup baking mix

Steps:

  • Cook beans in water in a covered pan until soft, about 2 hours on medium.
  • Preheat oven to 350°F.
  • Drain water and save about 1 cup of water.
  • Add remaining ingredients plus the reserved bean liquid.
  • Simmer, covered, for about 3 hours in the oven at 350°F.
  • For Biscuit Topping: Mix the ingredients together and drop by spoonfuls on top of casserole, 20 minutes before serving time.
  • Turn up the oven to 425°F and bake for 20 minutes or until biscuits are golden brown.
