SALMON CAKES WITH LEMON-CAPER YOGURT SAUCE



Salmon Cakes with Lemon-Caper Yogurt Sauce image

1 pound skinless salmon fillet (see Cook's Note)
Olive oil, for drizzling
Kosher salt and freshly ground black pepper

1 large egg, beaten
1/3 cup (1/2-ounce) chopped fresh chives
26 saltine crackers, crushed, divided
1/2 cup frozen corn, thawed
2 tablespoons Dijon mustard
3 tablespoons mayonnaise, plus more, as needed
1 tablespoon capers, rinsed and drained
1 tablespoon lemon juice
1 tablespoon lemon zest
3 tablespoons vegetable oil
3 tablespoons unsalted butter, at room temperature
1/2 cup full-fat plain Greek yogurt
1 1/2 tablespoons capers, rinsed, drained and chopped
1 tablespoon lemon juice
1 tablespoon lemon zest
Kosher salt and freshly ground black pepper

Steps:

  • Salmon: Put a grill pan over medium-high heat or preheat a gas or charcoal grill. Drizzle the salmon with olive oil and season with salt and pepper, to taste. Grill until the flesh is cooked through and flakes easily with a fork, about 6 to 8 minutes on each side. Set aside to cool for 20 minutes.
  • Patties: Using a fork, flake the salmon into 1/2-inch pieces and put into a medium bowl. Add the egg, chives, 1/2 of the crushed crackers, the corn, mustard, mayonnaise, capers, lemon juice, and lemon zest. Mix gently until just combined. Form the mixture into 2 1/2-inch diameter patties, about 3/4 inches thick. (If the mixture is too dry to form into patties, add extra mayonnaise, 1 tablespoon at a time,) Carefully coat the patties in the remaining crushed crackers and refrigerate for 1 hour. In a large nonstick skillet, heat the oil and butter over medium heat. Add the patties and cook until golden and crispy, about 7 to 8 minutes each side. Drain on paper towels.
  • Sauce: In a small bowl, mix together the yogurt, capers, lemon juice, and lemon zest. Season with salt and pepper, to taste.
  • Arrange the salmon cakes on a platter and serve alongside the sauce.

Turn leftover cooked salmon into elegant and crispy lemon caper salmon cakes! With lemon zest, capers, and light tartar sauce made with Greek yogurt, these salmon cakes are a delicious weeknight meal. Plus, they're ready in less than a half hour!

1 egg white
2/3 cup low-fat plain Greek yogurt, divided
Zest from 1 lemon plus 2 teaspoons lemon juice, divided
½ teaspoon salt, divided
Generous pinch celery seed
2 slices sourdough bread, crusts removed (3.5 ounces)
1 pound cooked* boneless, skinless salmon, preferably sustainably sourced
1 shallot, minced
2 tablespoons chopped capers
3 teaspoons organic canola oil or avocado oil, divided
3 tablespoons mayonnaise
2 teaspoons chopped dill
2 teaspoons relish
1 teaspoon whole grain or Dijon mustard
¼ teaspoon ground pepper

Steps:

  • Preheat oven to 425 degrees. Coat a baking sheet with cooking spray.
  • Whisk egg white, 1/3 cup Greek yogurt, zest, ¼ teaspoon salt and celery seed in a large bowl.
  • Process bread in food processor until it forms coarse crumbs.
  • Flake the salmon into small pieces.
  • Add the breadcrumbs, the salmon, shallot and capers to the Greek yogurt mixture and stir thoroughly to work the salmon into the binders and it becomes a consistent texture that can be formed into cakes.
  • Form the salmon mixture into 8 even cakes. Heat 2 teaspoons oil in a large non-stick skillet over medium-high heat. Cook four salmon cakes until browned on the bottom, 2 to 3 minutes. Flip over and brown on the second side, 1 to 2 minutes. Transfer the salmon patties to the prepared baking sheet.
  • Add the remaining teaspoon oil. Reduce heat to medium. Cook the remaining 4 patties until browned on both sides, 1 to 3 minutes per side. Transfer the patties to the baking sheet.
  • Bake the salmon cakes until cooked through, 5 to 7 minutes.
  • Meanwhile, whisk the remaining 1/3 cup Greek yogurt, lemon juice, the remaining ¼ teaspoon salt, mayonnaise, dill, relish, mustard and pepper in a small bowl.
  • Serve the salmon cakes with the light tartar.

This recipe was published in Cooking Light. I make it a bit different than it originally appeared, though (I don't use fat-free mayonnaise, saltines, etc. and also add some additional ingredients to suit my taste). If you would like to make the original version, just stick with the fat-free items and omit the last 4 items in the ingredient list (mayo through Tabasco) and you will have the original recipe. Prep time includes 20 minutes chilling time for the salmon cakes.

  • Combine onion mixture with 1/2 cup crackers, mustard, 1/4 teaspoon black pepper, salmon, egg, mayonnaise, lemon juice, Worcestershire sauce and Tabasco in a medium bowl; divide into 4 equal portions, shaping each into a 1/2-inch thick patty.
  • Coat each patty with 1 tablespoon crackers; cover and chill 20 minutes.

New York's Best Crispy Salmon Cakes image

This started out as a basic recipe many years ago and slowly evolved until it became the best salmon cakes I've ever had. Please use the celery and red bell pepper as it is essential to the taste. If you don't have the wasabi powder you can just substitute cayenne pepper which tastes different but is still good but please don't use 1/2 tsp! LOL!

1 (14 3/4 ounce) can salmon
2 tablespoons hellman's light mayonnaise
2 eggs
1/2 small red bell pepper, finely diced (about 4-5 tablespoons)
1 stalk celery, finely diced
1 tablespoon chopped fresh parsley
2 green onions, chopped (scallions)
1/2 teaspoon wasabi powder
1/4 teaspoon garlic powder
1/4 cup plain breadcrumbs, plus extra for coating
1/4 cup hellman's light mayonnaise
1 lemon, juice of
1/4 teaspoon dried dill
1/4 teaspoon red wine vinegar
1 dash garlic powder

Steps:

  • Remove skin and bones as desired.
  • Add rest of the ingredients to the salmon and combine well until the mixture holds together well (if it is too dry add a little mayo).
  • Forming a salmon cake with your hands, coat on both sides with the breadcrumbs.
  • Gently place in hot oil in your frying pan and cook over a medium heat until nicely browned.
  • Enjoy!
