CRISPY OVEN-FRIED COD FISH
There is nothing fancy about this but if your looking for a crispy coating without any deep-frying this is about as good as it gets, If your skillet is not large enough to hold all of the fish, then transfer to a baking sheet that has been coated with oil, only dry breadcrumbs or the coating will not adhere to the fish --- cooking time is for oven only, if desired any large fish fillet can be replaced for the cod, all seasoning my be adjusted to taste

- Preheat oven to 475 degrees (set oven rack to second-lowest position).
- In a large heavy ziploc plasic bag combine bread crumbs, cornmeal, seasoning salt, lemon pepper, cayenne and garlic powder; shake the bag to mix (can use a shallow bowl).
- In a shallow bowl slightly beat the eggs.
- Adding one piece of fish at a time to the bag, coat well with the mixture, then remove and dip the fish in the eggs, then return to the bag to coat the fish again, repeat for all of the cod pieces; transfer to a plate.
- Heat about 3 tablespoons oil in a large 12-inch ovenproof skillet (preferably cast-iron) over high heat until hot but not smoking.
- Fry the fish until the undersides are golden brown (about 1 minute).
- Turn over and add in another 3-4 tablespoons oil; cook another 1 minute more.
- Place the skillet in the oven and bake for about 5-6 minutes or until JUST cooked through.

BONNIE'S CRISPY OVEN-FRIED COD FISH
I found this recipe on the web by Kittencalskitchen, tweaking it to suit our tastes. I love the simplicity of this cooking method, and it is a definite keeper in this house. This is very crispy fish without deep frying, no mushiness either. For oven-fried fish, this is as good as it gets. I make it in a cast iron skillet....

- 1. Pre-heat oven to 475 degrees and set the oven rack to second-lowest position.
- 2. Mix the cornmeal, bread crumbs, and seasonings in the first shallow bowl. Beat the eggs in the second shallow bowl. Add one piece of fish to the DRY bowl, coat well and remove and dip the fish in the WET bowl. Return to the DRY bowl and coat again. Do this with all the fish pieces. It is a 3-step process: dry, wet, finishing with dry. Transfer all breaded fish to a plate.
- 3. Heat the oil in a large cast iron skillet, or any oven-proof skillet. Cast iron just browns better. Fry the underside of the fish until it is brown 1 or 2 minutes, then turn and fry the other side. When all of the pieces are browned, put the skillet and the fish in the hot oven. Bake about 5 or 6 minutes until just cooked through.

- 6. Cook's tip: Pie plates make great shallow breading dishes. Next time I plan on using white cornmeal. I fry a lot of catfish using white cornmeal, and we prefer it over the yellow. It is not as coarse. I will let you know what happens when I do. Enjoy!

- Preheat oven to 400°F. On a rimmed baking sheet, toss panko with oil and 1/4 teaspoon salt. Toast in oven, stirring once, until golden, about 5 minutes. Transfer to a plate; let cool slightly.
- Pat fish dry; season with salt and pepper. In a medium bowl, whisk together 2 tablespoons mayonnaise and 2 teaspoons water; toss with fish to coat completely. - 1. PREHEAT OVEN TO 400 DEGREES F. Coat a baking sheet with non stick cooking spray & set aside till needed.

- Marinade fish fillets in lemon juice and 1 tsp of garlic powder as well as a little salt for around 10 minute.
- Combine mayonnaise, mustard, and the remaining 1 tsp of garlic powder.
- In a second container, combine the cornflake crumbs and coriander.
- Remove fillets from marinade, and spread on them the mayo/mustard, and then coat them completely with the cornflake mixture.
- Place them in an oven safe dish that's been sprayed with Pam or other cooking spray.

CRISPY OVEN FISH FRY WITH MUSHY PEAS

- Heat the oven to 400 degrees F. Arrange a baking rack over the top of a baking sheet.
- Melt 4 tablespoons butter over low heat in small pot. Put the bread crumbs in a shallow dish and douse with the melted butter and toss to combine. Season with seafood seasoning, granulated onion powder, granulated garlic, citrus zest, thyme and chives.
- Clean and pat the fish dry, then season with salt, to taste. Coat the fish in egg whites, then gently press them into the bread crumbs to coat evenly, then arrange them on the baking rack. Bake on center rack of the oven until the fish is white and flaky and the crumbs are golden, about 20 minutes.
- Meanwhile, add the parsley and mint to a food processor and pulse to finely chop, then scrape into a bowl and set aside. Return the base to the processor; do not rinse the base. Add the peas and pulse until very finely chopped.
- In a medium saucepan, heat 1 tablespoon of extra-virgin olive oil, a turn of the pan, and the remaining butter over medium heat. Add the shallots and saute for 5 minutes, then add the stock and peas and bring to a bubble over medium-high heat. Cook the fresh peas for about 10 minutes, and about 6 to 7 minutes, if using frozen defrosted peas. When most of the liquid has evaporated, season with salt and pepper, to taste, and stir in the herbs. Remove from the heat.
- Spoon pools of not-so-mushy peas onto each dinner plate and top with crispy fish batons. Douse the fish with lots of malt vinegar and enjoy!

- Fish should be cut into 4 pieces.

- Preheat oven to 425 degrees. Line a baking sheet with parchment paper and lay a wire rack on top, spraying it with non-stick spray. Add potato chips to a ziplock bag and crush them into fine pieces. Season the cod filets with just a touch of salt (not too much, the chips are salty) and black pepper. Dip each filet in the egg white (I use only egg white as I feel that whole eggs make the delicate fish taste too "eggy") then dredge through potato chips mixture, pressing so the chips stick. Lay on the wire rack and spray each filet with non-stick spray or olive oil. Bake for 15-18 minutes, until fish is golden brown.
