Jacket Potatoes are a classic English potato that is so crispy and delicious. Serve them as a side or make it a meal with toppings.

4 medium Russet potatoes
Toppings of your choice (chili, tuna salad, bacon and cheddar cheese, etc.), for serving

Steps:

  • Heat your oven to 400°F.
  • Scrub the potatoes well then pat them dry.
  • Using a sharp knife, cut an X across the top of each potato by making a ¼-inch deep incision from one end of the potato to the other lengthwise, then making a second cut across the center of the potato.
  • Place the potatoes on the top rack of the oven and bake for 1 hour to 1 hour and 15 minutes (or as long as 2 hours, for extra crispy skin), until the potato skins are very crispy and the insides are soft.
  • Remove the potatoes and very carefully pop the potato open by cutting into the cross again to reopen it, then pushing the opposite ends of the potato toward each other (wear oven mitts to protect your hands when handling the hot potatoes).
  • Return the potatoes to the oven and cook an additional 15 minutes.
  • Fill with your favorite toppings.

6 medium russet potatoes
1 tablespoon vegetable oil, or as needed
¼ teaspoon sea salt, or to taste
1 pinch lemon-pepper seasoning, or to taste
12 large squares aluminum foil

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Drizzle potatoes with a thin layer of oil. Sprinkle on sea salt and about 1/2 as much lemon-pepper seasoning. Wrap each potato in a square of foil, then wrap with a second square. Place foil-wrapped potatoes in a glass or ceramic baking dish.
  • Bake in the preheated oven until the skins are crisp and the flesh is soft, 60 to 90 minutes.

I took a photo one day on Zaar of some chicken and included a jacket potato in my meal and was asked how I got it so crispy. Sadly my only wise answer was: Lazyness !This is an ultra simple recipe where the potatoes are baked in the oven WITHOUT any tin foil in sight. Cooking time can vary from 30 minutes to one hour depending on the type and size of potato. Voila! Add the toppings of your choice.

4 large potatoes (suitable for baking)
salt (optional)
butter (optional)
garlic butter (optional)
herb butter (optional)
sour cream (optional)

Steps:

  • Preheat your oven at 400 F (200 C).Scrub the potatoes well but keep them whole: don't peel or slice them. Place them onto a chopping board and stab each of them with a vegetable knife 4 or 5 times in various places.
  • Put them onto the middle rack of the oven and cook for about 40 minutes or until they are soft and cooked though when tested with a knife.
  • Place the cooked potato on the chopping board and cut an X shape in the top, but not all the way though, then using a clean towel or oven gloves (these babies are HOT) push the bits between the X to make it pop up nice and decratively and to have a place to put some butter or the topping of your choice. 4 large baking potatoes
200ml soured cream
50g cheddar, grated
4 crispy bacon rashers, chopped
4 spring onions, thinly sliced

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Rub the olive oil over the potatoes and put on the top shelf of the oven. Bake for 20 mins.
  • Turn down the oven to 190C/170C fan/gas 5 and bake for 45 mins-1 hr until the skin is crisp and the flesh soft.
  • Cut a cross on top of each potato, squeeze the sides, add the soured cream and your favourite toppings.

8 large baking potatoes
300ml pot soured cream

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Rub a little oil over each potato and put on the top shelf of the oven. Bake for 20 mins, then turn down the oven to 190C/170C fan/ gas 5 and bake for 45 mins-1 hr more until the skin is crisp and the inside soft. Make a cross in the centre of each potato, dollop over the soured cream and serve.
