When you need to please the whole family, you can't go wrong with a simple fish bake like this one, deliciously nestled atop creamy rice and broccoli.

Number Of Ingredients 7

2 cups instant white rice, uncooked
2 cups boiling water
3 cups frozen broccoli florets
1 can (10-3/4 oz.) condensed cream of mushroom soup
1/2 cup water
1 cup KRAFT Shredded Cheddar Cheese
4 frozen breaded fish fillets, such as sole, haddock or cod (about 12 oz.)

Steps:

  • Preheat oven to 400°F. Spread rice in 8-inch square baking dish. Pour boiling water over rice. Cover with plastic wrap. Let stand 5 min. Uncover.
  • Arrange broccoli over rice. Mix soup and water; pour over broccoli. Sprinkle with half of the cheese. Top with fish; sprinkle with remaining cheese.
  • Bake 30 min. or until fish flakes easily with fork.

Air Fryer Shake N' Bake Fish Fillets CRISPY & EASY. Seasoned Coating Mix or breading mixes to make crispy air fried fish fillets recipe

Number Of Ingredients 4

1 lb. white fish fillets ((cod, halibut, tilapia, etc.))
Ice water, beaten egg, milk, or mayo (, to moisten the fish)
1 cup Shake 'n Bake Style Seasoned Coating Mix ((approximately))
Oil spray (, to coat the fish)

Steps:

  • Preheat Air Fryer at 380°F/195°C for 4 minutes.
  • Cut fish fillets in half if needed. Make sure they are even sized so they'll cook evenly. (The thicker they are, the longer they will take to cook). Moisten the fish based on seasoned coating instructions (or by using ice water, beaten egg, milk, or mayo). Coat with the seasoned coating mix.
  • Spray air fryer basket/tray with oil or place a perforated parchment sheet in the air fryer basket/tray & lightly coat with oil spray (this helps keep the seasoned coating from sticking to the surface & coming off).
  • Place the coated fish in a single layer (cook in batches if needed). Make sure the fish is not touching or the coating may flake off when you flip them. Lightly coat with oil spray.
  • Air Fry at 380°F/193°C for 8-14 minutes, depending on the size and thickness of your fillets. After 6 minutes, flip the filets. Lightly spray any dry spots than then continue cooking for the remaining time or until they are crispy brown and the fish is cooked through. Serve with your favorite dip: tartar sauce, mustard, aioli, etc.

Comfort food with fish. From Curtis Stone's special dishes for Coles Supermarkets, haven't made it yet but I suspect it would work well. You could use any fish really or even chicken.

Number Of Ingredients 11

600 g cauliflower, cut into small florets
2 1/2 cups milk
salt & pepper
2 tablespoons olive oil
1 small brown onion, finely chopped
2 small carrots, diced
1 celery rib, diced
1 garlic clove, finely chopped
400 g pink ling fillets, cut into 3cm chunks
1 tablespoon chopped dill
4 slices multigrain bread, torn into large chunks

Steps:

  • Preheat oven to 220°C conventional/200°C fan forced.
  • Place cauliflower and milk in a medium sized saucepan over medium heat. Bring to low simmer and cook for 5-7 minutes, until soft.
  • Strain cauliflower and reserve milk.
  • Puree cauliflower in blender until very smooth and thick. Add reserved milk if needed. Season with salt and pepper to taste and set aside.
  • Heat 1 tbsp oil in large frying pan over medium heat and add onion. Cook for 3 minutes until softened.
  • Add carrots, celery and garlic and cook for 5 minutes until tender. Season with salt and pepper to taste.
  • Add fish, cauliflower purée and dill into the pan with the onion mixture and combine well. Pour into small greased baking dish.
  • Toss bread with 1 tbsp oil. Scatter over fish mixture. Bake on top rack in oven for 20 minutes, or until bread is golden brown. Remove from oven and serve.
