Making your own 'fancy' crackers at home is a fairly basic operation, and not only will they be less expensive than store-bought, but you can customize them any way you want. Please pay attention to your baking time.

1 ½ cups all-purpose flour
1 ½ teaspoons kosher salt
1 teaspoon white sugar
½ cup freshly grated Parmigiano-Reggiano cheese
3 tablespoons extra-virgin olive oil
½ cup cold water
1 tablespoon minced fresh rosemary

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with a silicon mat or parchment paper.
  • Place flour, salt, sugar, and grated cheese in a mixing bowl. Stir together until well mixed. Add rosemary; drizzle with olive oil and add water. Mix with a fork until mixture comes together in a fairly sticky dough and pulls away from the sides of the bowl, 3 to 5 minutes.
  • Transfer dough onto floured surface and add flour as you knead the dough. Knead until it no longer sticks to work surface, 4 to 5 minutes. Divide dough in half.
  • Dust work surface with flour. Roll out dough to 1/8-inch thickness or less. Brush or mist surface of dough very lightly with water. Sprinkle with coarse sea salt. Prick the entire surface of dough with the tines of a fork to prevent crackers from puffing too much when baking.
  • Cut each rolled out half into about 30 pieces with a pizza wheel. You can cut them out in squares, rectangles, or triangles--your choice. Transfer onto prepared baking sheet with a bench scraper or your floured fingers (dough will be very sticky).
  • Bake in preheated oven until perfectly browned and crunchy, 10 to 15 minutes, depending on the thickness.

My homemade grahams are buttery and crisp, with an incredible depth of flavor thanks to earthy whole wheat flour and the mellow maltiness of golden syrup-a type of light molasses.

Yield 24 (2 1/4-by-4 3/4-inch) crackers, plus 8 ounces (2 cups) crumbs

3/4 cup (5 1/2 ounces) sugar
1 1/2 teaspoons baking soda
1/2 teaspoon Diamond Crystal kosher salt (half as much if iodized)
1/4 teaspoon ground cinnamon
1 tablespoon vanilla extract
1/4 cup (3 ounces) golden syrup, such as Lyle's, sorghum, unsulfured molasses (not blackstrap), or honey
1 1/2 sticks (6 ounces) unsalted butter, solid but creamy-about 70°F
2 1/2 cups (12 ounces) whole wheat flour (not stone-ground or white whole wheat), plus more for dusting

Steps:

  • Make the dough:
  • Combine sugar, baking soda, salt, cinnamon, vanilla, golden syrup, and butter in the bowl of a stand mixer fitted with a paddle attachment. Mix on low speed to moisten, then increase to medium and beat until somewhat light, about 3 minutes. Reduce speed to low, add whole wheat flour, and mix to form a soft dough.
  • Scrape dough onto a work surface and knead gently to form a ball. Divide in half. Use immediately or wrap in plastic and refrigerate for up to 1 week; soften for 30 minutes at room temperature, then knead on a bare work surface until pliable and smooth.
  • Roll and bake the dough:
  • Adjust oven rack to middle position and preheat to 350°F. Generously flour a large sheet of parchment and place one portion of dough in the center. Pat into a 5-by-6-inch rectangle, sprinkle with flour, flip, and dust again. Working from the center out and adding more flour as needed, roll the dough until roughly 15-by-11 inches and very thin. Slide onto an aluminum baking sheet and brush away excess flour. Repeat with remaining dough.
  • For grocery store look-alikes, score each sheet of dough into twelve 2 1/4-by-4 3/4-inch rectangles and dock with a bamboo skewer or the narrow end of a chopstick (a strictly cosmetic procedure). Otherwise, leave the dough uncut.
  • Bake until crackers are tawny brown and firm, though your fingertip may leave a faint indentation, about 20 minutes. Immediately cut along the pre-scored lines with a knife, or cut into free-form shapes using a pizza wheel. Cool to room temperature directly on the baking sheets. Enjoy scrap pieces as a snack, or pulverize into crumbs. The grahams can be stored in an airtight container for up to 3 weeks at room temperature or frozen for up to 3 months.
  • Mix it up!
  • Chocolate: My mom used to sandwich chocolate graham crackers with peanut butter for an after-school snack, a combo I re-create by reducing the whole wheat flour to 10 ounces (21/4 cups), sifted with 1 ounce (1/3 cup) natural or Dutch-process cocoa powder. To retain their deep cocoa color, roll the dough in sifted cocoa powder. Serve with generous smears of peanut butter and a tall glass of milk.
  • Cinnamon Sugar: We rarely had sugar-coated grahams in our pantry when I was a kid, but they were always at my best friend's house, and seemed all the more special for their rarity. For the dough, increase the cinnamon to ½ teaspoon. Before docking, dust each sheet of dough with a half batch of Cinnamon Sugar (page 44), or any Sugar Sprinkle (page 46). Otherwise, dock and bake as directed. After the crackers cool, gently tap each against the baking sheet to knock off any excess sugar.
  • Coconut (vegan): Replace the butter with 5 1/2 ounces (3/4 cup) virgin coconut oil (solid but creamy-about 70°F) and add 1 teaspoon pure coconut extract along with the vanilla.
  • Gingerbread: This variation has all the spicy complexity of a Christmas cookie, with the unique flavor and crunch of a classic graham. Make the dough with sorghum or unsulfured molasses (not blackstrap) and increase the cinnamon to 1 teaspoon. Along with the sugar, add 1 tablespoon orange zest, 2 teaspoons ground ginger, 1/8 teaspoon ground cloves, and a few cracks of black pepper.
  • Graham Cracker Crumb Crust: Combine 9 ounces (2 cups) finely ground graham cracker crumbs with 2 ounces (4 tablespoons) melted unsalted butter. Scatter into a 9-by-1 1/4-inch glass or ceramic pie plate and press into an even layer over the bottom and up the sides. Bake at 350°F until firm, about 18 minutes. Cool to room temperature for immediate use in your favorite recipe, or wrap tightly in plastic and refrigerate for up to 1 week.
  • Gluten-Free: Replace the whole wheat flour with 6 ounces (11/4 cups) white rice flour, 4 ounces (1 cup plus 2 tablespoons) oat flour, and 1/2 ounce (1 tablespoon) kinako.

1 cup white flour
1 cup whole wheat flour
3/4 teaspoon salt
1/4 cup cold butter or 1/4 cup cold margarine
2/3 cup cold water

Steps:

  • Put the white flour, wheat flour, salt, and cold butter in food processor.
  • Process well.
  • Blend in the cold water.
  • Mixture should be crumbly, yet hold its shape when pressed together.
  • If too dry, add a little more water.
  • Gather mixture into a ball.
  • Roll out on lightly floured surface, to 1/8- or 1/4-inch thickness (Note: seeds, such as sesame, flax, or poppy, can be rolled into the dough at this point).
  • Cut dough into desired shape.
  • Place unbaked crackers onto greased cookie sheet.
  • Prick tops with fork, then wet tops with a little water (The water makes them crispy. Too much water makes them tough).
  • Bake in 400 degree oven for 10-14 minutes.
  • Cool on wire rack.

These are crispy crackers that are not rock hard but crisp. Excellent recipe to create your own mix with your favorite seasonings. Make your regular saltine or combine Italian seasonings, garlic even Monterrey steak seasoning! We really LOVE these, hope you give them a try!

1 c masa flour
3 c all purpose flour
1 tsp baking powder
3/4 c shortening
1 1/3 c 2% milk
kosher salt
seasonings of choice
olive oil

Steps:

  • 1. Preheat oven to 375 Degrees Combine both flours, baking powder, sift then add shortening in a mixer. Using your dough hook blend (a lot like pie dough)
  • 2. Once mixed, add milk and blend well forming a dough.
  • 3. Form a long tube and split it into four separate sections.
  • 4. Roll one section of the dough into a rectangle. square off the sides with a knife. Using a pizza cutter or pastry roller, roll over the dough not any thicker then 1/8 inch. (can be thinner)
  • 5. Cut into desired squares, I used a pastry roller to help mark the dough then cut into equal squares using a pizza roller at first but ended up just doing it by hand.
  • 6. After your squares are cut poke holes in them using a wooden skewer (the blunt end). Place on a cookie sheet with parchment paper.
  • 7. Coat each square using a pastry brush with olive oil. Sprinkle with kosher salt (desired amount to your liking. Bake for 15 to 20 minutes or until lightly browned. I use a gas oven so this time may be very different for you.
  • 8. I made several flavors and the ones we liked best were the Fresh Herb cracker. I chopped Parsley, sage, rosemary and oregano, mixed in one of the dough sections then rolled it out. Coated them with the olive oil and sprinkled with Kosher salt. After they were finished baking I took a Garlic clove and lightly rubbed the bottom side of added flavor!

CRISPY RICE CRACKERS

1 cup (100g) arborio rice
5 cups (1,200g) water
Canola oil for frying
Coarse salt

Steps:

  • Heat the oven to 150°F. Line a 9 x 12-inch rimmed baking sheet with a Silpat.
  • Put the rice and water in a saucepan and bring to a boil over high heat. Reduce the heat and simmer until the rice is very tender and starting to get mushy, about 20 minutes.
  • Drain the rice and put it in a food processor. Pulse a few times to make a very coarse puree, but make sure it retains some texture.
  • Scrape the rice out onto the Silpat and spread it out evenly, filling the baking sheet. Put it in the oven to dry completely, about 3 hours.
  • Pour about 3 inches of oil into a large saucepan and heat to 365°F. Break off pieces of the dried rice and fry, a few pieces at a time, until crisp and golden, about 2 minutes. Drain and sprinkle with salt.
  • These are best served right away, but you can store leftovers, once cool, in an airtight container, between layers of parchment, for up to 2 days.

Make this one simple dough for four deliciously unique, crispy butter crackers! The key to making these crackers perfectly crisp is rolling out the dough into a very thin sheet, then baking them until completely golden brown. Feel free to try other flavor combinations with some of your favorite herbs and spices to really make these crackers your own.

2 cups all-purpose flour (see Cook's Note), plus more for dusting
1/2 cup finely grated Parmesan
3/4 teaspoon kosher salt
1 stick (8 tablespoons) unsalted butter, at room temperature
3/4 cup heavy cream
1 large egg, lightly beaten
Flaky sea salt, for sprinkling
2 tablespoons everything bagel seasoning (see Cook's Note)
1/4 cup finely grated Parmesan
Coarsely ground black pepper
Flaky sea salt
1/3 cup roughly chopped dried figs
3 sprigs fresh rosemary, leaves stripped and stems discarded
Flaky sea salt

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 375 degrees F. Line 2 rimmed baking sheets with parchment paper; set aside.
  • Add the 2 cups flour, the Parmesan and kosher salt to a food processor, and pulse until the cheese is finely chopped and the mixture is evenly combined. Add the butter and pulse until it's evenly dispersed and the dough looks like coarse cornmeal. Add 1/2 cup of the heavy cream, then continue to pulse and add more cream, 1 tablespoon at a time, until the mixture forms a ball but is not sticky.
  • Transfer the dough to a clean work surface that's lightly dusted with more flour. Shape into a disk, then cut into 4 equal pieces. Use a rolling pin to roll out each piece of dough into a very thin sheet, about 1/8 inch thick. Transfer 2 sheets of dough to each of the prepared baking sheets.
  • Whisk the egg with 1 teaspoon water in a small bowl until combined, then brush on top of each sheet of dough.
  • For the plain butter flavor: Sprinkle a generous pinch of flaky sea salt over one sheet.
  • For the "everything" flavor: Sprinkle the everything seasoning over another sheet of dough.
  • For the Parmesan-black pepper flavor: Sprinkle the Parmesan, several grinds of coarse black pepper and a pinch of flaky sea salt over the third sheet of dough.
  • For the dried fig and rosemary flavor: Sprinkle the figs, rosemary leaves and a pinch of flaky sea salt over the fourth and final sheet of dough.
  • Use a pizza cutter, fluted pastry cutter or 2-inch cookie cutters to cut out the crackers into desired shapes. (If using a cookie cutter, you can discard the scraps or leave those on the baking sheet and bake as well). Spread the shapes out slightly on the baking sheets.
  • Bake until the crackers are golden brown all over and crisp, rotating the baking sheets from top to bottom halfway through, 14 to 18 minutes. Let cool completely, then serve. These crackers can be stored in an airtight container for up to 3 days.

2 Tbsp coconut sugar ((or sub organic cane sugar))
1/2 tsp baking soda
1/4 tsp sea salt
1/4 tsp ground cinnamon
1/4 cup maple syrup
1 Tbsp molasses ((we used blackstrap molasses))
2 ½ Tbsp melted coconut oil
1 ¼ cup oat flour ((ground from gluten-free oats // see notes for substitution ideas))
1/4 cup arrowroot starch ((we think cornstarch would also work, and maybe also tapioca starch))
1 ½ tsp ground flax seeds ((also called flaxseed meal))

Steps:

  • Preheat the oven to 350 F (176 C) and line a large baking sheet with parchment paper.
  • In a medium mixing bowl, whisk together the coconut sugar, baking soda, salt, cinnamon, maple syrup, molasses, and melted coconut oil until well combined and smooth.
  • Add in the oat flour, arrowroot starch, and ground flax seeds and mix with a wooden spoon until the flour is completely incorporated. Your dough should not feel too tacky (sticking to your hands) or too dry (crumbly), but should hold its form. If the dough appears too dry, it likely just needs more mixing. If it feels sticky, it needs more oat flour.
  • Place a sheet of parchment paper on a large cutting board or countertop. Place dough in the center and then place another sheet of parchment paper on top of the dough. Working from the center out, roll the dough into a large rectangle (~10 x 12 inches) about 1/16-inch thick. Rolling to this thickness makes these crackers crispy (our preferred texture) rather than soft. If you have any difficulty rolling the dough, place it in the fridge to chill for 10-20 minutes and then try again.
  • Use a pizza cutter or knife to cut the dough into 2-inch x 3-inch rectangles (keep in mind they will expand slightly during baking). Then use a metal spatula lightly floured with oat flour to transfer to a baking sheet. If you have a hard time transferring or handling, pop in the refrigerator to chill for 5-10 minutes. Space crackers ~1 inch apart to allow for spreading.
  • Continue rolling out and cutting remaining dough until you have used it all up. Prick each graham cracker twice with a fork. Recipe as written makes ~15 crackers (will vary based on how thinly they are rolled and whether modifying batch size).
  • Bake for 10-14 minutes or until slightly firm and darker in color. Watch closely near the end to avoid burning.
  • Let cool for 5-10 minutes on the baking sheet, then gently transfer to a cooling rack. Enjoy plain, make s'mores, or try our graham cracker crust!
  • Once completely cooled, crackers can be stored in an airtight container for up to 2-3 days at room temperature, 7-10 days in the fridge, or 1-2 months in the freezer. Dough can also be frozen for up to 1 month and rolled/baked after defrosting in the fridge overnight.
