SPICE COOKIES
Steps:
- In a mixing bowl, combine shortening, margarine, Splenda Sweetener, egg, and molasses. Beat until smooth.
- Sift dry ingredients together and add to shortening mixture. Mix thoroughly.
- Wrap dough in plastic wrap and refrigerate until firm, about 2 hours.
- Preheat oven to 350°F.
- Form dough into 30 balls, approximately 1 tablespoon each. Place cookies on ungreased baking sheet and press with a fork to make a crosshatch pattern.
- Bake for 10-12 minutes. Cool slightly, then transfer to a wire rack to cool completely. Cookies will be chewy when they come out but will become crisp as they cool.

DIABETIC OATMEAL-RAISIN COOKIES
This is my absolute favorite homemade cookie in the whole world! When I make a batch, I have to hide them, give part of them away, and basically lock them in the cabinet. They just don't last. I got so tired of not being able to eat the regular ones from the Elves in the magic tree, so I adapted a really good recipe. I hope you like them as much as I do.

Steps:
- Preheat the oven to 325 degrees.
- Mix the flour with the cinnamon.
- Cream the butter and both the sugars until fluffy. Add the egg, milk, and vanilla. Gradually add the flour mixture.
- Stir in oats and raisins.
- Drop by teaspoonfuls if small cookies are desired, tablespoons if larger cookies are desired onto parchment paper (this stuff is reusable - one sheet will do the whole batch).
- Bake until golden brown, 10-12 minutes. Cool on wire racks.

CHEWY MOLASSES-SPICE COOKIES

- Preheat oven to 350 degrees. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. In a shallow bowl, place 1/2 cup sugar; set aside.
- With an electric mixer, beat butter and remaining cup of sugar until combined. Beat in egg and then molasses until combined. Reduce speed to low; gradually mix in dry ingredients, just until a dough forms.
- Pinch off and roll dough into balls, each equal to 1 tablespoon. Roll balls in reserved sugar to coat.
- Arrange balls on baking sheets, about 3 inches apart. Bake, one sheet at a time, until edges of cookies are just firm, 10 to 15 minutes (cookies can be baked two sheets at a time, but they will not crackle uniformly). Cool 1 minute on baking sheets; transfer to racks to cool completely.
