2 lbs shrimp, shelled, except for tails
1 ounce butter
1 ounce olive oil
1/4 teaspoon ground black pepper
1/4 teaspoon salt
2 ounces dry vermouth
2 lemons, juice of
1 garlic clove, crushed

Steps:

  • Simmer olive oil in large skillet.
  • Add shrimp amd cook until just golden brown; remove from pan and set aside.
  • Reduce heat and add butter, garlic, salt and pepper.
  • When well blended, increase heat and add lemon juice and vermouth and cook for 1 minute stirring constantly.
  • Pour over shrimp to coat and enjoy.

A colourful French Creole inspired recipe, which is very easy to make. This tangy and flavourful recipe is wonderful served with a tropical fruit salsa and yellow rice. Ingredients are just for two - but they can be increased with ease!

12 large prawns, peeled with tails left on
salt and pepper, for seasoning
2 teaspoons green peppercorns, crushed
2 garlic cloves, peeled and crushed
100 g butter
1 lime, juice of
2 teaspoons Worcestershire sauce
chopped parsley
salt and pepper
olive oil
green peppers or yellow pepper, cut into thin strips
1 lime, quartered for garnish

Steps:

  • Heat olive oil in small frying pan and add the seasoned prawns. When the prawns are sealed, put in a hot oven for five minutes.
  • After removing the pan from the oven, add your butter, parsley, garlic, green peppercorns, Worcestershire sauce and lime juice.
  • Mix together until the sauce is creamy, then serve on a hot plate. Garnish with strips of peppers and lime.

Crevettes au Vermouth (Shrimp with vermouth) image

1 1/2 pounds raw shrimp in the shell
6 tablespoons butter
Salt to taste, if desired
Freshly ground pepper to taste
1/4 cup dry white vermouth
6 tablespoons finely chopped onion
3 tablespoons red wine vinegar
1/4 cup heavy cream
2 tablespoons finely chopped parsley

Steps:

  • Shell and devein the shrimp.
  • Heat 2 tablespoons of the butter in a skillet and add the shrimp. Add salt and pepper to taste. Let cook, stirring, one minute or less. Cook only until the shrimp lose their raw look. Add the vermouth, and when it comes to a boil, let cook over high heat for about 15 seconds.
  • Combine the onion and vinegar in a saucepan. Drain the juices from the shrimp into the saucepan, and bring to a boil. Cook down over relatively high heat to about 1/4 cup. Add the cream, and bring to a boil.
  • Cut the remaining butter into small pieces and add it to the sauce. Swirl the butter into the sauce. Combine the sauce with the shrimp. Add the parsley. Serve with cheese rice.
