GINGER ASIAN SLAW image

Number Of Ingredients 22

4 c finely shredded Napa cabbage
1 c finely shredded red cabbage
1 c coarsely grated carrot
1 red pepper, thinly sliced
1/2 c finely chopped green onions
1/4 c minced fresh mint
1/4 c minced cilantro
salt and pepper
3 T chopped roasted peanuts
2 t toasted sesame seeds
Ginger dressing
1 t finely grated lime zest
3 T fresh lime juice
2 T minced shallot
2 T sesame oil
2 T unseasoned rice wine vinegar
1 1/2 T minced or grated ginger
1 T minced jalapeno
1 T soy sauce
2 t honey
1 t minced garlic
1/3 c peanut or vegetable oil

Steps:

  • For dressing, whisk together ingredients.Drizzle in the oil. Refrigerate for at least 2 hours before serving. Add dressing to prepared vegetables. Drizzle the dressing over, toss well. Add salt and pepper to taste. Sprinkle with peanuts and sesame seeds.
