1 stick (1/2 cup) salted butter
1/2 cup all-purpose flour
4 1/2 cups whole milk
2 teaspoons salt
1 1/4 teaspoons paprika
3/4 teaspoon garlic powder
3/4 teaspoon onion powder
3/4 tablespoon dried oregano
1/2 teaspoon cayenne pepper
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/3 cup plus 2 teaspoons white vinegar

Steps:

  • Melt the butter on low heat, preferably in a double boiler, or, paying close attention, stirring regularly in a pot. Stir in the flour, incorporating it into the butter thoroughly until smooth. Slowly add the milk, stirring constantly. Cook on low-medium heat, stirring regularly, until it reaches a silky, creamy consistency. Whisk in the salt, paprika, garlic powder, onion powder, oregano, cayenne, nutmeg and cloves. Cook for 5 minutes. Whisk in the vinegar, adding slowly. Cook for another 5 minutes, whisking often.

1 1/2 lbs ground beef
3 tablespoons chili powder
2 tablespoons cumin
2 chicken bouillon cubes or 2 teaspoons chicken bouillon powder
1/4 cup grated bell pepper
grated sharp cheddar cheese
shredded iceberg lettuce
1 medium tomatoes, diced
12 large taco shells
taco sauce, piquante or salsa, recommend medium

Steps:

  • In a skillet over medium heat, brown the ground meat.
  • Sprinkle in the seasonings, use 6 oz.
  • water to dissolve the bouillon cubes in the microwave, add the cumin slowly and taste.
  • Meat should be slightly wet; keep it warm over very low heat.
  • Preheat taco shells in oven at 200 degrees F for about two minutes.
  • Fill each shell half full of meat, dribble about 1 to 2 tsp.
  • salsa over the meat, sprinkle lightly with the grated bell pepper, add the lettuce and cheese, and top with the tomato.
  • Get out the napkins cause it’s gonna get messy, and enjoy!

1 tablespoon olive oil
1 clove garlic, minced
1 onion, thinly sliced
1 stalk celery, sliced thin
1 green bell pepper, minced
2 (16 ounce) cans diced tomatoes
1 bay leaf
½ teaspoon salt
⅛ teaspoon cayenne pepper
4 skinless, boneless chicken breasts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet, heat the oil over medium heat. Add the garlic, onion, celery and bell pepper. Cook, stirring occasionally, until tender (about 4 minutes). Add the tomatoes, bay leaf, salt and cayenne pepper. Cook this Creole sauce 3 minutes longer, stirring often.
  • Arrange the chicken breasts in an 8 x 11 inch baking dish. Pour the Creole sauce over the chicken.
  • Bake 15 to 20 minutes, until the chicken is tender and white throughout.
