Try these sizzlin' Sheet-Pan Shrimp Fajitas. These Sheet-Pan Shrimp Fajitas get their great flavor from peppers, onions, cilantro, lime and sour cream.

1-1/2 cups mixed red and yellow pepper strips
1/2 cup slivered onions
1 juice from 1 lime, divided
1 Tbsp. oil, divided
2 Tbsp. (1/2 of 1.4-oz. pkg.) TACO BELL® Fajita Seasoning Mix, divided
3/4 lb. uncooked medium shrimp, peeled, deveined
8 corn tortillas (6 inch), warmed
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/4 cup chopped fresh cilantro

Steps:

  • Heat oven to 450°F.
  • Cover rimmed baking sheet with foil; spray with cooking spray. Toss vegetables with half each of the lime juice, oil and fajita seasoning mix; spread onto prepared baking sheet.
  • Bake 12 min. Meanwhile, toss shrimp with remaining lime juice, oil and seasoning mix.
  • Use large spoon to push vegetables to one side of baking sheet. Spread shrimp onto other side of baking sheet. Bake 6-8 min. or until shrimp are tender.
  • Spoon shrimp mixture onto tortillas; top with vegetables, sour cream and cilantro.
