Steps:
- Heat oven to 450°F.
- Cover rimmed baking sheet with foil; spray with cooking spray. Toss vegetables with half each of the lime juice, oil and fajita seasoning mix; spread onto prepared baking sheet.
- Bake 12 min. Meanwhile, toss shrimp with remaining lime juice, oil and seasoning mix.
- Use large spoon to push vegetables to one side of baking sheet. Spread shrimp onto other side of baking sheet. Bake 6-8 min. or until shrimp are tender.
- Spoon shrimp mixture onto tortillas; top with vegetables, sour cream and cilantro.
