1 1/2 cups paper-thin onion slices
1 pound Yukon Gold potatoes, peeled, coarsely grated on large holes of box grater or in processor (about 2 1/2 cups)
1 teaspoon salt, divided
2 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 425°F. Butter large rimmed nonstick baking sheet. Place onion in large bowl. Toss potatoes with 1/2 teaspoon salt in medium bowl. Let stand 5 minutes. Using hands, squeeze out excess liquid from potatoes. Add potatoes, 1/2 teaspoon salt, and melted butter to onion. Toss to coat.
  • Divide mixture into 4 mounds on prepared baking sheet, spacing apart. Roast 15 minutes, then turn mounds over with spatula, pressing down to flatten to 4-inch-diameter rounds (cakes will still be soft). Reduce oven temperature to 350°F; bake until cakes are golden and crisp around edges, about 45 minutes longer.

6 large red-skinned potatoes (about 2 1/2 pounds), peeled, cut into 1/2-inch pieces
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon Creole or Cajun seasoning or 1 additional teaspoon chili powder
1/4 cup olive oil

Steps:

  • Preheat oven to 400°F. Cook potatoes in medium pot of boiling salted water until almost tender, about 5 minutes. Drain well. Spread potatoes on heavy large baking sheet. Sprinkle with paprika, chili powder and Creole seasoning. Season with salt. Drizzle olive oil over potatoes and stir to coat.
  • Bake potatoes until crisp, turning with metal spatula every 10 minutes, about 40 minutes.

6 large potatoes, peeled,cut int 1/2 " pieces and cooked until almost tender apprx 5 minutes,drain well
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon cajun seasoning (Tony Chachere's or other cajun spice and if not available use additional tsp chili powder)
1/4 cup lite olive oil

Steps:

  • Heat oven to 400F degrees.
  • Spread the potatoes single layer on a baking sheet.
  • Sprinkle with the paprika, chili, cajun spice and then drizzle with the olive oil.
  • Mix the potatoes with a spatula to coat all sides evenly.
  • Season with salt.
  • Bake potatoes until crisp, turning with a spatula every 10 minutes, Apprx 40 minutes.
